RASPBERRY LEMONADE



Raspberry Lemonade image

Puréed fresh raspberries give this fresh squeezed raspberry lemonade fruity flavor and a vibrant pink color.

Number Of Ingredients 6

1¾ cups fresh squeezed lemon juice, from 8-12 lemons, strained
½ pound (8 oz.) raspberries, plus more for serving
5 cups water
1 cup sugar
Lemon wedges, for serving
Fresh mint, for serving

Steps:

  • Combine the raspberries and ½ cup of the lemon juice in a blender; purée until smooth, then pass the mixture through a fine sieve into a large bowl to strain out the seeds (the fastest way to force it through is by pressing a ladle against the strainer in a circular motion). Add the remaining lemon juice, water, and sugar to the bowl and stir until the sugar is dissolved. Taste, then and add more sugar, lemon juice or water if necessary (keep in mind that ice cubes will water it down). Pour into glasses with ice cubes and garnish with lemon wedges, raspberries and fresh mint, if desired. The lemonade will keep in the fridge for a few days.

3.5 (12 ounce) bottles beer, chilled
1 (12 ounce) container frozen raspberry-lemonade concentrate (thawed)
1/2 cup vodka
lemon & lime slice

Steps:

  • stir together raspberries, beer, thawed concentrate, and vodka.
  • Serve over ice.
  • Garnish if desired.
  • Note: To make ahead, stir raspberry lemonade concentrate and vodka in large container. Chill up to 8 days. Stir in raspberries and beer just before serving.

I bake biscotti all of the time, and I'm always trying to come up with new flavors. This is one I came up with to try and use raspberries before they went bad. My husband loves these!

¾ cup fresh raspberries
2 tablespoons white sugar
1 cup butter, softened
1 ⅓ cups white sugar
3 eggs
2 teaspoons grated lemon zest
4 ¼ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Place the raspberries and 2 tablespoons of sugar into a small saucepan over medium heat. Bring to a boil. Cook, stirring occasionally, until reduced by about 1/3. Remove from heat, and strain through a sieve to remove the seeds. Set aside to cool.
  • In a large bowl, cream together the butter and 1 1/3 cups of sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each one. Stir in the raspberry sauce and lemon zest until well blended. Combine the flour, baking powder and salt; stir into the batter. Cover and refrigerate for about 10 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two cookie sheets.
  • Divide the dough into four equal parts. Form each piece of dough into a 12 inch long log shape on a lightly floured surface. Place two logs onto each cookie sheet, and pat down until they are about 3 inches wide. There should be at least 2 inches of space between each log.
  • Bake for 30 minutes in the preheated oven, until firm but not crisp. Remove from the oven, and allow to cool for at least 10 minutes.
  • Place the biscotti bars on a cutting board, and use a serrated knife to cut into 3/4 inch wide slices. Return the slices to the baking sheets cut side down.
  • Bake for 8 minutes, then turn the cookies over, and bake for an additional 8 minutes, or until lightly toasted on each side. Cool completely, then store in an airtight container.

Another yummy drink my hubby invented. Wonderful on the rocks, or strain into a martini glass. I buy very large IQF strawberries from a warehouse club - if your frozen strawberries aren't large, add more. Be sure to use Chambord for the liqueur. You can really taste it in this drink, and cheaper raspberry liqueurs taste like cough medicine.

Steps:

  • Zest 1 lemon into large pieces using a knife. Place lemon zest in a saucepan; top with 1 cup water and sugar. Bring lemon zest mixture to a boil, stirring occasionally, until sugar dissolves and liquid is syrupy, 5 to 10 minutes. Remove saucepan from heat and cool; remove and discard lemon zest.

6 cups sugar
4 cups lemon juice
Chilled tonic water or ginger ale
Ice cubes

Steps:

  • Place raspberries in a food processor; cover and process until blended. Strain raspberries, reserving juice. Discard seeds. Place juice in a Dutch oven; stir in sugar and lemon juice. Heat over medium-high heat to 190°. Do not boil. , Remove from heat; skim off foam. Carefully ladle hot mixture into five hot 1-pint jars, leaving 1/4-in. headspace. Wipe rims; screw on bands until fingertip tight. , Place jars into canner simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. 3/4 cup sugar
1/2 cup water
1 cup fresh lemon juice (about 4 lemons)
3 1/2 cups water
1 container (10 ounces) frozen raspberries in syrup, thawed
3/4 cup water

Steps:

  • Mix sugar and 1/2 cup water in 1-quart saucepan. Cook over medium heat, stirring once, until sugar is dissolved. Cool to room temperature.
  • Mix cooled sugar syrup, the lemon juice and 3 1/2 cups water in 2-quart nonmetal pitcher. Place raspberries in strainer over small bowl to drain (do not press berries through strainer). Reserve berries for making ice cubes. Stir raspberry liquid into lemon mixture; refrigerate.
  • Spoon raspberries evenly into 12 sections of ice-cube tray. Divide 3/4 cup water evenly among sections with raspberries. Freeze about 2 hours or until firm. Serve lemonade over ice cubes.
