Tropical Chicken Salad is full of red grapes, pineapple, macadamia nuts, and shredded coconut for a tropical twist on chicken salad.

3 boneless chicken breasts
1/4 cup pineapple juice, (from the 8-ounce can listed below)
2 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon vegetable oil
1/2 teaspoon ground ginger
1/2 cup mayonnaise
1/4 cup sour cream
1 teaspoon lemon juice
3/4 teaspoon curry powder
1/4 teaspoon ground ginger
1/2 cup red grape halves
1 (8-ounce) can pineapple chunks, (juice reserved for marinade)
2 green onions, (sliced)
salt and pepper to taste
1/2 cup toasted macadamia nuts
1/4 cup toasted shredded unsweetened coconut, (optional)

Steps:

  • Place chicken in a large ziptop bag. Add pineapple juice, soy sauce, brown sugar, and ginger. Shake to mix and coat the chicken. Let marinate 30 minutes.
  • Coat grill grates with oil and heat grill to medium-high heat.
  • Grill chicken on both sides until cooked through, about 5 minutes per side.
  • Let chicken cool 10 minutes and then cut into bite-sized pieces.
  • In a large bowl, stir together mayonnaise, sour cream, lemon juice, curry powder, and ginger.
  • Fold in chicken, grapes, pineapple, and green onion. (Note: you may want to cut the pineapple into smaller pieces).
  • Season to taste with salt and pepper.
  • Sprinkle macadamia nuts and coconut over the top.
  • For best flavor, refrigerate for at least an hour before serving.

3 tablespoons seasoned rice vinegar
3 tablespoons orange juice
2 tablespoons lime juice

SALAD:
4 boneless skinless chicken breast halves (8 ounces each )
3/4 teaspoon salt, divided
1/2 teaspoon pepper
5 cups torn romaine
1 medium sweet red pepper
2 cups chopped peeled mangoes
3 medium ripe avocados, peeled and chopped
1/2 cup finely chopped red onion
1/4 cup minced fresh cilantro
1/4 cup minced seeded jalapeno pepper
2 tablespoons lime juice
Crushed tortilla chips, optional

Steps:

  • Place the first five ingredients in blender. While processing, gradually add oil in a steady stream; set aside., Sprinkle chicken with 1/2 teaspoon salt and pepper; place on greased grill rack. Grill, covered, over medium heat or broil 4 in. from heat 8-10 minutes on each side or until a thermometer reads 165°. Cool slightly and chop into 1/2-in. pieces., Layer lettuce, chicken, pepper and mangoes in a 3-qt. dish. In a large bowl, gently combine avocado, onion, cilantro, jalapeno, lime juice and remaining salt. Spoon over mangoes. Refrigerate 30 minutes. Just before serving pour vinaigrette over salad. If desired, sprinkle with tortilla chips.

1 cup chopped celery
1 cup mayonnaise
1/2 to 1 teaspoon curry powder
1 can (20 ounces) chunk pineapple, drained

2 Tbsps butter
salt
freshly ground peppers
1 Tbsp Curry powder
1 ripe Pineapple
50 milliliters Orange juice
1 Tbsp soy sauce
2 Tbsps sesame oil

2 Tbsps Coconut flakes

Steps:

  • Rinse the chicken breast fillets, pat dry and cut into strips. Season with curry powder, salt and pepper. Heat some butter in a pan and fry the portions while stirring. Allow to cool.
  • Peel the pineapple and cut lengthwise into quarters. Cut the flesh into small pieces and combine them with the meat in a bowl.
  • For the dressing, mix the orange juice with soy sauce and sesame oil. Season with salt, pepper and cayenne pepper and mix in the mint. Drizzle the dressing over the chicken and pineapple pieces and shower the salad with coconut flakes. Suggestion: serve on the halved pineapple and garnished with mint leaves.

The Waldorf Salad has it's origins at The Waldorf-Astoria Hotel, in NYC, NY. In 1896 Oscar Tschirky, Maitre d'Hotel made this salad which contained apples. chicken, celery & mayonnaise - later the walnuts were added. Well, I am taking poetic license and making some more changes to it. It has always been served on a bed of lettuce. Based loosely on a recipe provided by The National Chicken Council. You can make this with a store-bought rotisserie chicken(if you do skip the first four steps.) Did not include cooling times.

1 onion, quartered
2 celery ribs, chopped, leaves reserved
1 teaspoon kosher salt
2 medium granny smith apples or 2 medium fuji apples, cored and chopped
2 scallions, thinly sliced
3/4 cup red seedless grapes, halved
3/4 cup chopped macadamia nuts, slightly toasted
1 fresh pineapple
1 cup low-fat mayonnaise
1/4 cup sour cream
1 tablespoon fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • In large saucepan, place chicken breasts and cover with cold water by 1 inch.
  • Add onion, celery leaves and Kosher salt.
  • Bring to boil, reduce heat to low and simmer for 10 minutes, until chicken is no longer pink in the center.
  • Remove from liquid and set aside; discard liquid.
  • When cool enough to handle, cut chicken into bite-size pieces.
  • In large bowl, mix together chicken, celery, apples, scallions, grapes and toasted macadamia nuts.
  • Use sharp knife to split pineapple into sixths from top to bottom.
  • Slice core off each pineapple wedge and slice off fruit, leaving tufts of leaves in tact.
  • Use the extra half of pineapple for garnish.
  • Cut the remaining fruit into chunks and add to chicken mixture.
  • Set pineapple wedges on plates.
  • In small bowl, whisk together mayonnaise, sour cream and lemon juice; blend well.
  • Add dressing to chicken mixture and toss thoroughly.
  • Add salt and pepper.
  • Spoon mixture onto pineapple wedges and serve.

1 1/2 lbs boneless skinless chicken breasts, uncooked
1 cup pineapple chunk
3/4 cup canned artichoke heart, not marinated, sliced
3/4 cup cucumber, sliced thin and quartered
3/4 cup green grape, sliced
3/4 cup peach, diced
2 tablespoons shallots, minced
1 garlic clove, minced
1 teaspoon celery leaves, dried
2 teaspoons sea salt, ground
1/2 teaspoon black peppercorns, ground
1/2 teaspoon dill leaves, dried
3/4 cup mayonnaise
4 ounces Laughing Cow light swiss cheese, 4 wedges
2 teaspoons lemon juice

Steps:

  • Grill 1 1/2 inch thick chicken breasts in George Foreman Grill on medium, for 12 minutes or until juice runs clear. Cool and cut into 1/2 inch pieces and chill in refrigerator til time to use.
  • In a large bowl combine 2 Tbs. minced shallots, 1 minced clove of garlic, 1 teaspoon celery leaves, 2 teaspoons sea salt, 1/2 teaspoons ground pepper, 1/2 teaspoons dill leaves, 3/4 cup mayonaise (I use mayonaise with extra-virgin olive oil in it).
  • Then add 4 wedges of the cheese and 2 teaspoons of lemon juice. Mix well until the cheese is well incorporated with the mayo mixture and is creamy.
  • Next take chicken from the refrigerator and add pineapple chunks, sliced artichokes, sliced and quartered cucumbers, sliced grapes, and diced peaches.
  • Add mayonaise mixture and toss with chicken and fruits and veggies.
  • Chill for 2- 3 hours and serve on croissants, breads of your choice or on a bed of Romaine or Spinach leaves and sliced grape tomatoes for garnish. Add a bunch of red grapes too for color.
