This is a recipe that Diamond Dallas Page featured on a video blog on YouTube https://www.youtube.com/watch?v=6OT6Uo9XZQs It isn't written down anywhere online and it is a great recipe. These are the measurements I used to make the salad, you can deviate however you'd like.

8 cups fresh greens
1/4 cup raw pumpkin seeds
1/4 cup almonds
1/4 cup fresh cranberries
1/4 cup goat cheese
1/4 red onion, diced
1/2 cucumber, diced
4 white mushrooms, diced
1 avocado, diced
1 tablespoon dry chia seeds
2/3 cup balsamic vinegar (cranberry pear)
1/3 cup olive oil
1 teaspoon sea salt
1 teaspoon black pepper

Steps:

  • Add all the salad items except for the chia seeds, vinegar, and olive oil in a bowl. Mix together.
  • Add the vinegar and olive oil to separate bowl, stir until mixed together, apply to salad.
  • Sprinkle on chia seeds.

Spinach salad with blue cheese, walnuts, and dried cranberries. If you can't find walnut oil, olive oil may be substituted.

½ cup chopped walnuts
1 bunch spinach, rinsed and torn into bite-size pieces
½ cup dried cranberries
½ cup crumbled blue cheese
2 tomatoes, chopped
1 avocado - peeled, pitted and diced
½ red onion, thinly sliced
2 tablespoons red raspberry jam (with seeds)
2 tablespoons red wine vinegar
⅓ cup walnut oil
freshly ground black pepper to taste
salt to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Arrange walnuts in a single layer on a baking sheet. Toast in oven for 5 minutes, or until nuts begin to brown.
  • In a large bowl, toss together the spinach, walnuts, cranberries, blue cheese, tomatoes, avocado, and red onion.
  • In a small bowl, whisk together jam, vinegar, walnut oil, pepper, and salt. Pour over the salad just before serving, and toss to coat.
