DAD'S DEATH BY CHOCOLATE

- Death by Chocolate:
- In a large bowl, whip the heavy cream with the powdered sugar until aerated, just before soft peaks have started to form. Gently fold in the creme fraiche.
- In a large trifle bowl, place a thick layer of the Chocolate Pudding, top with a layer of the whipped cream mixture and then sprinkle on half of the cookies and half of the toffee candy. Repeat the process, finishing with the cookies and candy. Cover with plastic wrap. Chill for 2 hours and serve.
- Chocolate Pudding:
- Whisk the egg yolks and sugar together in a medium bowl. Add the cream and salt and whisk until combined. Mix the cocoa and flour together, and then whisk the wet ingredients into the dry.
- Place the mixture in a heavy saucepan over medium heat and stir continuously until the mixture comes to a simmer. Remove from the heat and stir in the butter and chocolate until melted. Let cool.
DEATH BY CHOCOLATE I
This cake recipe will overwhelm you with chocolate, chocolate, and more chocolate from chocolate cake mix, mousse mix, and candy bars.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 inch round cake pans.
- Prepare cake mix according to package directions. Pour batter into the prepared pans.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Let cake cool slightly then pierce cakes with a fork. Pour the coffee liqueur gradually over the three cake layers.
- Prepare the chocolate mousse according to the package directions. Let chill in the refrigerator.
- Once cake is cool break it into pieces. Layer cake pieces, chocolate mousse, crushed butter toffee candy bars, and whipped topping 1/3 at a time in a large glass bowl. Grate the chocolate candy bar over the top. Let chill in refrigerator for several hours before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
- Mix cake batter according to package directions, adding water, oil, and eggs as directed. Spread batter into prepared pan and bake in preheated oven until a tester comes out clean, about 30 minutes. Cool and crumble. Make pudding, according to package directions, with milk.
- In a large trifle or other glass serving bowl, place half of the crumbled cake. Pour half of the coffee over the cake, and spread half of the pudding over that. Top with half of the whipped topping, sprinkled with half the crumbled candy bars. Repeat layers in the same order. Refrigerate until serving.

- Heat oven to 350°F (325°F for dark or nonstick pan). Line 9-inch square pan with foil; spray cooking spray on bottom only of foil.
- Make and bake brownies as directed on box for 9-inch pan. Cool completely, about 1 hour. Frost brownies with frosting. Sprinkle with peanut butter candies; refrigerate while making cereal mixture.
- In medium bowl, measure 3 cups of the cereal; set aside. In 1-quart saucepan, melt peanut butter and chocolate chips over low heat, stirring constantly. Pour over cereal in bowl, stirring until evenly coated. Spread over frosted brownies.
- Sprinkle with remaining 1/2 cup cereal, slightly pressing on top. Refrigerate about 1 hour or until set before cutting. For bars, cut into 4 rows by 4 rows.

- Preheat the oven to 350°F (180°C). Lightly grease a 6½-inch skillet with butter.
- Fill a medium saucepan with 1 inch (2.54 cm) of water and bring to a boil over high heat.
- In a medium heat-safe bowl, combine the butter and chopped chocolate. Place on top of the pot of boiling water. Use a rubber spatula to stir until completely melted, about 5 minutes. Remove the bowl from the heat and let the melted chocolate cool slightly, about 5 minutes.
- Add the sugar to the cooled chocolate mixture and whisk to combine. Add the egg and vanilla and continue whisking until smooth and homogenous.
- Sift in the flour and salt, then add the mini chocolate chips. Use the rubber spatula to gently fold until the flour is just incorporated.
- Pour the batter into the prepared skillet and sprinkle the cocoa nibs evenly over the top.
- Bake until the brownie is mostly set in the center and with little resistance when you press lightly on the top, 12-15 minutes. Remove from the oven and let cool slightly, about 10 minutes.
- Just before serving, scoop your favorite ice cream on top and drizzle with hot fudge sauce.

I don't even know where to start with these...the melted butter brings out a wonderful flavor, then your mouth orbits into a frenzy of chocolate in several forms-chunks, regular sized chips, and mini chips-and epic proportions!!! I made these only once so far, because the temptation to hog them all is too overwhelming....depending on the chocolate you use, these can range from a moderately to considerably expensive cookie to bake...and worth every penny! - In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, using an electric mixer on low speed, gradually beat both sugars into the melted butter for 1-2 minutes, or until completely emulsified and creamy.
- Beat in the eggs and vanilla.
- Using a wooden spoon, stir in the flour mixture just until combined.
- Add the chocolate chips and chunks; stir until well combined.
- Cover bowl with plastic wrap and refrigerate at least 1 hour or overnight.
- Preheat oven to 350*F. Have ready at least 2 non-stick cookie sheets.
- Using about 2 tablespoons dough for each cookie, drop globs 2" apart on sheets.
- Bake 12-14 minutes, or until lightly browned around the edges.
- Cool on sheets 3-5 minutes; transfer to wire racks and cool completely.
