Cheesy Swiss Ham, Potato, Green Bean & Mushroom Pot Pie image

Number Of Ingredients 22

1 lb. thick-cut fully cooked ham steak diced large bite-sized (approx. 2 cups)
1/2 - 3/4 lb. red potatoes, unpeeled, diced large bite-sized,and boiled until tender (as many as you like)
1 (14.5 oz.) can green beans, drained well
1 (6 oz.) jar sliced mushrooms, can use fresh sliced
1 Tbl. butter
1/2 large onion, chopped large bite-sized
2 ribs celery, medium-thick sliced
1 large clove garlic
enough pie pastry for a double-crust pie, homemade or purchased
1 stick real butter, salted or unsalted
1/2 cup flour
2 1/3 cups milk
2/3 cup heavy cream
1 egg yolk, lightly beaten
1 tsp. Better Than Bouillon Chicken Base
1 tsp. kosher salt
1/2 tsp. white pepper
1/8 tsp. ground rosemary
1/4 tsp. dried marjoram
1/4 tsp. dried thyme
1/8 tsp. onion powder
1 1/2 cups grated swiss cheese, lightly packed

Steps:

  • Cut up ham, trimming away any fat, and place into a medium-sizer bowl. Cover and refrigerate.
  • In large frying pan, melt 1 Tbl. butter over medium-low to low heat. Add onion and celery, sauté until soft and tender, stirring occasionally. About 10 minutes. (Do not brown, adjust heat as needed.) Add garlic, sauté 1 minute longer. Remove from heat, let rest 1 minute, spoon into bowl with ham and fold to combine. Recover and refrigerate. Wipe out frying pan.
  • Make Béchamel Sauce: Add 1 stick butter to same (wiped out) frying pan. Melt butter, stir in flour, heat until bubbly, stirring. Cook over medium-low heat, stirring, for 2-3 minutes. Do not brown. Slowly whisk in milk and cream, adding gradually so no lumps. Cook and stir until low boiling. Stir and cook 3-5 minutes until thickened. Remove from heat. Add 1 Tbl. gradually to 1 beaten egg yolk. Whisk egg yolk mixture quickly into sauce mixture. Stir in chicken base, salt, white pepper, ground rosemary, marjoram, thyme and onion powder.
  • Fold in ham and onion/celery mixture, cooked potatoes, green beans, and mushrooms.
  • Fold in cheese. Cover. Set aside.
  • *(I just add my diced potatoes to hot water, bring to a boil, and boil until tender. Depending on size, about 5-7 minutes.)
  • Roll out bottom pastry, place into pie dish. (*See notes at bottom.) Fill with filling. Roll out second pastry and place on top. Seal edges and flute. Cut slits in top with knife to vent, or do a lattice top.
  • Pop into preheated 375º oven for approximately 50 minutes, or until top and bottom crusts are browned and filling is starting to bubble.
  • Let rest for a good 30 minutes before slicing. The longer the better for best slicing and serving, if you can wait that long!

6 large potatoes (3 pounds)
1 (10 ounce) package pie crust mix
6 ounces cheddar cheese (grated)
3 tablespoons all-purpose flour
1 large onion, slice
1 -2 cup leftover ham, pieces (cubed)
2 garlic cloves, minced
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 cup milk
1 tablespoon butter or 1 tablespoon margarine
1 egg yolk
1/2 cup half-and-half cream

Steps:

  • Scrub potatoes, pare and slice very thin.
  • Put potatoes in a large glass bowl and cover with cold water; set aside.
  • Prepare pie crust mix according to package directions; wrap in plastic and set aside.
  • Using a food processor or food grater, coarsely grate Cheddar cheese. Put in a small bowl; add flour and toss to mix well.
  • Preheat oven to 350°F.
  • Lightly grease a shallow two quart oval, round or rectangular baking dish.
  • Drain potatoes thoroughly; pat dry with paper towels. Alternately layer potatoes with sliced onion, ham and cheese-flour mixture, sprinkling with garlic, salt, pepper and nutmeg as you layer.
  • Pour on milk; dot with butter and set aside.
  • On a lightly floured surface, roll pastry out to a 15 x 11 inch rectangle, or a 13 inch circle, depending on the size and shape of your baking dish. Gently lift pastry and place on baking dish to cover potato mixture completely.
  • Turn edges of pastry under and flute decoratively with your fingers. Cut four gashes in pastry to allow steam to escape while baking.
  • Mix egg yolk with one tablespoon of the half and half cream; brush over the pastry to glaze.
  • Bake 60 minutes or until pstry is golden brown and potatoes are done.
  • Remove from oven; pour remaining half and half cream through the vents in the top of the pastry. Let stand 15 minutes before serving.

2 tablespoons all-purpose flour, or as needed
½ cup vegetable oil

Steps:

  • Place the potatoes and onion into a bowl, and stir in eggs, salt, and flour as needed to make the mixture hold together. With wet hands, scoop up about 1/3 cup of the mixture per patty, and form into flat round or oval shapes.
  • Heat the vegetable oil in a large skillet over medium heat until it shimmers, and gently place the patties into the hot oil. Fry until the bottoms are golden brown and crisp, 5 to 8 minutes, then flip with a spatula and fry the other side until golden.

5 large potatoes (about 4 pounds), peeled and cut into 3/4-inch pieces
1/4 cup butter, cubed
1 medium onion, chopped
1 garlic clove, minced
1/3 cup all-purpose flour
2 cups 2% milk
1-1/3 cups roasted red pepper Alfredo sauce
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon dill weed
1/4 teaspoon pepper
2 cups cubed fully cooked ham
2 cups shredded Swiss cheese
1/4 cup seasoned bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 375°. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 8-10 minutes or until crisp-tender. Meanwhile, in a large skillet, heat butter over medium-high heat. Add onion; cook and stir 6-8 minutes or until tender. Add garlic; cook and stir 1 minute. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. This is an easy soup recipe that I've been making since the early 70's. I love the flavors of the ham, swiss cheese and just a hint of nutmeg. This is a perfect soup for a chilly windy day. This was a favorite for my daughter and now she makes it for her family too. Hope you enjoy!
