This simple rhubarb custard pie recipe comes together in a cinch and creates a unique pie you will fall in love with. Step-by-step photos teach you how to make this dessert recipe.

1 Unbaked 9-Inch Pie Crust, homemade or store-bought
1lb Rhubarb, cut into 1/2 inch pieces (roughly 3 1/4- 3 1/2 cups)*
150 Grams (3/4 Cup) Granulated/ Caster Sugar
3 Large Eggs
6oz (3/4 Cup) Heavy Whipping Cream
1 Tablespoon Orange Zest, freshly grated
3 Tablespoons Orange Juice, freshly juiced
1 Teaspoon Pure Vanilla Extract
1/2 Teaspoon Salt
3 Tablespoons All-Purpose Flour

Steps:

  • Roll out pie dough and place in a 9-inch pie dish, flute edges, or use a fork to create an easy design. Place in the freezer to chill for 15 minutes.
  • While pie is chilling preheat the oven to 375F/ 191C.
  • In a large bowl whisk together the sugar, eggs, cream, orange zest and juice, vanilla, salt, and flour, mix until evenly combined. Add chopped rhubarb and mix to evenly coat all of the rhubarb.
  • When the pie shell has chilled place it on a baking sheet then pour in the custard rhubarb mixture. Use a spatula to press the rhubarb into an even layer. Dip the pastry brush in the leftover custard liquid in the bowl and gently brush along the crust.
  • Bake for 45-55 minutes, the custard should be set and barely wiggle in the middle two inches or so. Let cool on a wire rack for two hours then wrap in plastic wrap and if desired chill in the fridge for 2 hours, this helps get cleaner slices. Serve pie ever so slightly warmed or cold. Store leftovers in the fridge for up to 5 days, but pie is best eaten on day 1 and 2.

Pastry for nine inch double crust (or single, if preferred)
1 cup + 1 tablespoon granulated sugar (cane sugar preferred)
3 tablespoons flour, divided (may substitute gluten free flour blend)
2 eggs, beaten
3 cups diced fresh rhubarb

Steps:

  • Preheat the oven to 450° F. Roll out half of the pastry dough. (Keep the dough for the top crust chilled.) Line the pie plate with the bottom crust.
  • Combine 1 cup of sugar with 2 tablespoons of flour. Mix in eggs and rhubarb. Sprinkle the remaining tablespoon of flour into the bottom of the crust. Pour rhubarb filling into the bottom crust.
  • Roll out top crust (if desired). Cut vent holes or weave into lattice. Apply to top of pie. Crimp edges to seal.
  • Sprinkle 1 tablespoon of sugar over the crust. (Skip if using a single crust.)
  • Bake at 450 F for 10 minutes to set the crust. Reduce the oven temperature to 350 F and bake about 30 minutes more or until the custard is set. Cool before serving. Store any leftovers in the refrigerator.

3 eggs, separated
1 (9 inch) unbaked single pie crust
3 cups chopped rhubarb
1 cup white sugar
1 cup half-and-half
2 tablespoons all-purpose flour
1 pinch salt
¼ cup white sugar
¼ teaspoon cream of tartar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place egg yolks into a large bowl; place egg whites in a separate glass or metal bowl.
  • Fit pie crust into a 9-inch pie dish. Spread rhubarb into bottom of crust. Whisk 1 cup sugar, half-and-half, flour, and salt into egg yolks until smooth. Pour mixture over rhubarb.
  • Bake in the preheated oven until pie crust is browned and filling is set, 50 to 60 minutes.
  • Beat egg whites until stiff using an electric mixer; gradually beat 1/4 cup sugar and cream of tartar into egg whites to make a glossy meringue. Spoon meringue over pie filling, going right to the edge of the crust and covering all the filling. Use a spoon or spatula to make decorative swirls in the meringue.
  • Return pie to oven and bake until meringue is lightly browned, 10 more minutes. Best served slightly warm.

4 cups fresh rhubarb, washed and cut into 1-inch pieces
1 1/4 cups sugar
1/3 cup flour
2 tablespoons lemon juice
1/4 teaspoon cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon butter, melted
1 pie crust (either store bought or your own recipe)

Steps:

  • Preheat oven to 450°F.
  • Combine all ingredients except pastry and place in a 9 x 5 x 2" baking pan.
  • Place pie crust on top of mixture, fold overhanging crust under and press double edge against rim of dish.
  • Prick crust with the tines of a fork to allow steam to escape.
  • Bake in preheated oven for 10 minutes; reduce heat to 350F and bake until fruit is tender and crust is a delicate golden brown, about 25 to 30 minutes.

One of the most delicious and easiest pie recipes I know. I got this wonderful recipe from my mother Pauline, who I believe got it from my Aunt Angela. I love all their pies, but this might be my favorite.

1 (9 inch) unbaked pie crust (see footnote for recipe link)
3 cups rhubarb, sliced 1/4-inch thick
1 cup fresh strawberries, quartered
3 large eggs
1 ½ cups white sugar
3 tablespoons milk
3 tablespoons all-purpose flour
¼ teaspoon freshly grated nutmeg
1 tablespoon butter, diced
2 tablespoons strawberry jam
¼ teaspoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place rolled-out pie crust in a 9-inch pie plate and set on a baking sheet lined with parchment paper or a silicone baking mat.
  • Combine rhubarb and strawberries in a bowl; transfer to the pie crust, distributing evenly.
  • Whisk eggs, sugar, milk, flour, and nutmeg together in a medium bowl. Slowly pour filling over rhubarb mixture until it just reaches the top edge of the crust. Scatter diced butter evenly over the top of the filling. Lightly tap and shake the baking sheet to remove any air bubbles.
  • Transfer pie to the preheated oven and bake, turning halfway through, until rhubarb is tender and custard is set, about 1 hour.
  • Mix strawberry jam and water in a small bowl; heat in the microwave until warm, about 15 seconds. Glaze the top of the pie with the jam mixture and let cool. Refrigerate until ready to serve.

1 double crust ready-to-use pie crust
3 cups diced rhubarb
2 eggs
1 ½ cups white sugar
⅓ cup light cream
½ teaspoon vanilla extract
1 tablespoon all-purpose flour

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the rhubarb into one of the prepared pie crusts. Beat together the eggs, sugar, cream, vanilla extract, and flour until evenly blended; pour over the rhubarb. Use the remaining pie crust to create a lattice, and place on top of the pie.
  • Bake in the preheated oven for 15 minutes, then reduce temperature to 350 degrees F (175 degrees C), and continue baking 45 minutes. Cool completely before serving.
