DEEP DISH SWEET POTATO PIES
These Pies were on our dessert menu for the July 04th Holiday. The flavors were really great, & this time I remembered to take pictures as I made the pies, but don't have one after it was cut, because they both went so fast. I prefer mine cold from the fridge. This recipe makes 2 Deep Dish Pie Plate size pies, or 3 store bought...

- 1. I discovered Vanilla Bean paste several months ago, and was so pleased with the results that I have been using it every since. It is the consistency of a thick syrup, and has the little black specks in it, like the actual vanilla bean, and to me it packs a lot more flavor, so I bought a 32 oz. size because it was more economical. But you can use vanilla extract if you don't have the paste. I NEVER USE IMITATION VANILLA BECAUSE IT DOES NOT HAVE ENOUGH FLAVOR for my taste.
- 2. Add the sweet potatoes to a large pot and cover with water, and cook until potatoes are tender, about 25 minutes or so.
- 3. Preheat oven to 350 degrees F. Allow potatoes to cool long enough so you can peel them then add to a large bowl. Add 1 stick of butter to potatoes while still hot. If not hot enough nuke them in the microwave till they are hot enough to melt the butter.
- 4. Beat potatoes with a hand mixer to melt butter, then remove any strings that wrap around the blades of the beater from the sweet potatoes. May need to repeat several times.
- 5. In a medium size bowl, add the sugar, Wondra flour, salt, nutmeg, cinnamon, and stir to blend.
- 6. Add the sugar alternately to the potatoes
- 7. with the evaporated milk, beating well after each addition
- 8. Add lemon Extract and Vanilla Bean paste. Beat until it is blended.
- 9. Add eggs and beat well to blend. Scrape down sides of bowl with spatula, and beat again until blended.
- 10. Pour filling into prepared Pie Crust. Then place in preheated 350 degrees F. oven and bake for 1 hour, center of pie will shake slightly but will settle upon cooling. Cool then refrigerate
- 11. Cut and serve when cooled. Top with cool whip and chopped nuts if desired or serve plain. Will add a picture real soon.

- 1. This recipe should make 2 Deep dish pies or 3 Store bought deep dish pie tins. I love using vanilla bean paste when baking, it has the consistency of a syrup and has the specks from the vanilla bean in it. I love the flavor it packs and order it from Amazon in a 32 ounce size since I do a lot of baking. I never bother using Imitation Vanilla, as I figure it is a waste of money, that is just my personal opinion. Cook potatoes in a large pot of water for about 1/2 hour or so till tender. Allow to cool then peel.
- 2. Preheat the oven to 350 degrees F. Add peeled potatoes to a large bowl. I prefer using a hand mixer to beat potatoes, and then I remove any strings from potatoes that wrap around the blade. You may need to repeat several times to remove all of the strings from the potatoes.
- 3. Now add the vanilla bean paste, melted butter and condensed milk . Beat till blended together.
- 4. Combine the wondra flour, salt, and brown sugar, cinnamon & nutmeg together in a small bowl then add mixture to potatoes and beat till blended together, stir in lemon juice and zest, and blend.
- 5. Add eggs & evaporated milk to a medium bowl, beat together then add to sweet potato mixture and beat till potato mixture is creamy and smooth.
- 6. Pour mixture into prepared pie shells, then place in preheated 350 degree F. oven and bake for one hour. Remove from oven, Filling will be puffy on top but will settle upon cooling.
- 7. TO MAKE THE HOMEMADE PIE CRUST:Cut lard or Crisco into flour salt mixture, then using a fork or pastry blender, blend until crumbs are coarse & granular. Add 3-6 tablespoons of cold water, a little at a time. Mix quickly and evenly through the flour until the dough just holds a ball. Divide dough in half, and roll dough to about 1/8th thickness. Lift edge of pan, and adjust crust to pan, prick with fork and crimp edge. Fill with your favorite pie filling . Repeat same technique for the second pie. Then bake as directed. Makes 2 Pie Crusts. In this day an age you can easily substitute Crisco for the lard, and even use a food processor to pulse and make the crust. This recipe is from my cookbook SHARING OUR FAVORITE RECIPES on page 238.
- 8. After pie has cooled, Cut and serve with whipped cream or as desired.
DEEP DISH POTATO AND PUMPKIN PIE
A uniquely different vegetarian pie. Can also be made with a 2 pound butternut squash. Fresh thyme can be replaced with 1 teaspoon of dried thyme.

- Preheat the oven to 400 degrees F (200 degrees C).
- Split the pumpkin in half, spoon out the seeds and place the pumpkin halves face down on a baking sheet. Split the potatoes lengthwise and place on the pan with the pumpkin. Bake the pumpkin and potatoes for 1 hour. Remove them from the oven and let them cool. When the pumpkin has cooled, spoon out the flesh and put it into a large bowl. Cut the potato into 1/2 inch cubes.
- To make the dough in a food processor fitted with a steel blade, put the flour and salt into the processor. Add the butter. Run the machine in spurts until the butter is in bits no bigger than pea-size. Add 4 tablespoons ice water, and run the machine in spurts again just enough to bring the dough together. Turn the dough onto a work surface and knead it with your hands until the dough is soft and smooth, handling the dough as little as possible. Form it into a flattened ball. Chill the dough for at least 30 minutes.
- Preheat the oven to 375 degrees F (190 degrees C). On a floured surface, roll out the dough, and use it to line the bottom and sides of either a 9 inch square baking pan or a large deep dish pie pan. Pierce the dough with a fork in three places. Line the sides of the pan with aluminum foil, and crimp the foil gently to hold the dough in place.
- Bake the crust for 15 minutes. Remove the pan from the oven. Reduce the heat to 350 degrees F (175 degrees C). While the crust bakes, make the filling.
- Heat the oil in a large skillet over medium heat. Add the onions, and cook them, stirring frequently, until they soften, about 5 minutes. Add the garlic, and cook for 3 to 4 minutes more, stirring frequently. Add the corn and cook for 2 more minutes. Remove the skillet from the heat.
- Stir in the pumpkin, potato, cheese, thyme, allspice, salt, and pepper. Mix well, then spoon into pre-baked pie shell.
- Bake the pie at 350 degrees F (175 degrees C) for 30 minutes or until veggies and cheese are piping hot. Serve immediately.

- Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, combine sugar, flour, nutmeg and salt. I've been making this pie for over 30 years and I still love it, preferring it to pumpkin any day. I make it every holiday and lots of times inbetween. I take it w/ me for lunch and my kids enjoyed it in their lunchboxes back in the day. I hope you all enjoy it as much as we have! UPDATE: Taking the advice of a friend (Thanks, Julie!) I skipped the crust and poured the filling into a well-buttered pie pan and baked as usual. Not only is it easier, there are less fat and carbs too! Besides... everyone likes the filling best anyway... :D

- Preheat the oven to 325°. Prepare the pie crust the rolling the crust on a baking mat to 11 inches using a rolling pin. Carefully roll the dough across the rolling pin and transfer it onto the pie plate. Press the dough into the plate, trimming the edges of overlap.
- Use the second crust if desired to cut out leaf-shaped pieces of dough. Reserve these shapes for topping the filling.
- In a stand mixing bowl or food processor, add the pie ingredients. Beat or pulse until smooth. Pour the filling into the prepared crust. Then decorate the edges with the dough cutouts. Beat the final egg with the tablespoon of water. Brush the dough with the egg wash.
