DEEP-FRIED CANDY BARS WITH PINEAPPLE



Deep-Fried Candy Bars with Pineapple image

2 quarts sunflower oil, for deep frying
1 ripe pineapple
1 cup self-rising flour
1 cup soda water
8 fun-size chocolate coconut bars (recommended: Mounds)

Steps:

  • Heat sunflower oil in a deep-fat fryer or a Dutch oven to 350 degrees F.
  • Cut the top and bottom off the pineapple, then quarter it vertically. Trim the woody core off each segment, and then lay it skin side down, and slice the flesh in half lengthwise, stopping when you feel the skin. Then cut it across into slices and run the knife between the flesh of the fruit and the outer husk. The pineapple pieces should come out easily. Squeeze the outer skin of the pineapple over the cut fruit to get every last bit of juice.
  • In a large bowl, add 1 cup of flour. Gently whisk in 3/4 cup of soda water, if the batter is too thick, add the 1/4 cup. It should be able to coat the candy bar easily. Submerge each chocolate coconut bar in the batter and place it right into the hot oil either with your fingers or tongs, allowing it to fry for about 3 minutes or until the batter is puffed up and golden brown. Using tongs, remove the battered chocolate coconut bars and place them on a paper towel lined plate. Transfer them to a plate aside the pineapple pieces, enjoy immediately.

150 grams Pastry flour
2 eggs
50 milliliters white wine
100 milliliters Coconut milk
1 pinch salt
lemons (zest)
8 slices Pineapple
750 grams Frying oil
1 packet Vanilla sugar
1 Tbsp sugar
Coconut flakes (to sprinkle)
Cape gooseberries (for garnish)

Steps:

  • Separate the eggs. Beat the egg yolks, flour, wine, lemon zest, milk and salt. Let stand for 30 minutes. Drain the pineapple. Heat the vegetable oil in a large pan or deep fryer. Whip the egg whites until very stiff. Carefully fold the egg whites, vanilla sugar and sugar into the batter.
  • Pat the pineapple slices dry and roll through the batter. Fry in the hot oil for about 5 minutes, until golden brown. Drain on paper towels. Sprinkle with the grated coconut. Serve garnished with gooseberries.

½ cup brown sugar
1 teaspoon cinnamon
2 tablespoons butter
2 tablespoons water
toasted coconut, ice cream, maraschino cherry (optional)

Steps:

  • Place pineapple wedges in gallon sized ziploc bag.
  • Add brown sugar and cinnamon into bag.
  • Gently shake until well coated.
  • Melt butter in large frying pan over medium high heat.
  • Add pineapple mixture and water.
  • Cook over for 8 to 10 minutes or until pineapple is tender, flipping pineapple over occasionally.
  • Cool slightly and serve warm as is or with toasted coconut ice cream and a cherry, if desired. Can also serve cold if preferred.
  • Refrigerate any leftovers.

200 grams Pastry flour
1 packet Baking powder
30 grams sugar
1 egg
1 Tbsp milk
1 Tbsp Rum
2 Tbsps Candied lemon (and orange peel)
sugar (to sprinkle)
cinnamon (to sprinkle)
Fat (for frying)

Steps:

  • Halve the pineapple, peel, slice, cut out the hard stalk and cut the flesh into pieces. Sprinkle the pineapple pieces with rum.
  • Mix the flour, baking powder, sugar, egg and milk into a smooth dough.
  • Heat the butter or oil in a large saucepan. Roll the pineapple pieces through the dough and fry until golden brown. Arrange the pineapple pieces on a plate and sprinkle with sugar and cinnamon.
  • Halve the baby pineapple. Place in the center of the plate. Sprinkle the plate with chopped candied lemon and orange peel. Serve immediately.

1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
1 cup self-rising flour
½ cup milk
1 egg
2 cups white sugar
2 tablespoons confectioners' sugar for dusting, or as needed

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Whisk pineapple, flour, milk, and egg together to form a light and fluffy batter.
  • Bring reserved pineapple juice to a boil in a small saucepan. Add white sugar and stir to dissolve; lower heat. Simmer until thickened glaze forms, about 10 minutes. Remove from heat and cool to room temperature, about 15 minutes.
  • Drop spoonfuls of batter in the hot oil, 2 to 3 pieces at a time, and fry until golden brown, 3 to 4 minutes. Drain on paper towels.

1 banana
1 kiwi
2 eggs
1/4 cup heavy cream
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup bread crumbs
3 cups fryer oil
1/4 cup chocolate syrup
1/3 cup mini marshmallows
1/4 cup granola

Steps:

  • Cut pineapple in 1/2 lengthwise. Carve 1 half out reserving for "bowl" that the fruit will go into after frying. Remove the skin and core from the other half and cut into long spears.
  • Prepare the banana by peeling and cutting in half long ways.
  • Prepare kiwi by skinning and cutting in 1/2.
  • Heat fryer or fryer oil to 350 degrees F.
  • To prepare batter, combine eggs, cream, vanilla, and cinnamon. Whisk until well blended. Coat fruit in batter, and then roll fruit in bread crumbs.
  • Add the coated fruit to the hot oil, in batches, and fry until golden brown, about 1 to 2 minutes. Drain on a paper towel lined plate.
  • Place hollowed pineapple on plate, put fried fruit back in the pineapple, drizzle syrup on plate to dip along with mini marshmallows and granola.
