DEEP-FRIED ONION RINGS
What can I say but YUM! Crispy crunchy tasty onion rings. I like them as a side with steak or on their own dipped in garlic mayo!

Steps:
- Cut the peeled onions into 1/2in slices and separate into rings.
- Soak the rings in the buttermilk mixed with the cayenne pepper. Leave for up to 1/2 an hour - the longer they soak the better.
- In another bowl mix together the flour, celery salt, garlic powder, and paprika.
- Drain the onion rings and drop them in the seasoned flour.
- Remove and deep-fry a few rings at a time in hot oil until golden and crisp.
- Season and serve immediately.
FRIED ONION RINGS
Steps:
- Gather the ingredients.
- Heat the oven to 200 F. Line a baking sheet with paper towels and have a spare baking sheet or pan ready for keeping the fried onion rings warm.
- Wash and peel the onions and then cut them into 1/4-inch thick rounds. Separate rounds into rings.
- Heat 3 to 4 inches of vegetable oil in a deep, heavy pan or deep fryer to 365 F.
- In a bowl, combine flour, seasonings, and baking powder. In a small bowl, whisk together egg and milk. Add milk mixture to dry ingredients. Stir until well blended.
- Dip onion rings into batter, then drop into deep fat at about 365. Work with just a few at a time; don't crowd them.
- Fry the onion rings until they are golden brown, turning to brown both sides. Each batch will take about 2 to 3 minutes.
- Remove the onion rings to the pan with paper towels to drain thoroughly. Transfer them to another pan and move them to the preheated oven to keep warm while you make subsequent batches. They will stay crisp for about 20 to 30 minutes.
- Repeat with the remaining onion rings.
- Once all of the onion rings have been fried, serve immediately, sprinkled with salt.

Steps:
- Cut the top of an onion and place it cut-side down.
- Using a sharp knife make 4 ½-inch (11.5 cm) cuts then go back and make 3 cuts in between each quarter.
- Flip the onion over and coax apart its layers or "petals". In a medium bowl, combine the eggs and the milk.
- In large bowl combine flour, paprika, oregano, salt, garlic powder, and black pepper.
- Place the onion in it, coating every petal with egg wash.
- Place the onion in the dry mixture coating every petal.
- Coat the onion in the egg wash and dry mixture one more time.
- Heat canola oil to 375ºF (190ºC) in a deep-fryer or dutch oven.
- Place onion in the freezer for 10 minutes.
- With tongs add the onion to the oil for 2 minutes or until it is browned and crispy.
- Move onion to plate covered in paper towels and allow to drain for 5 minutes.
- Meanwhile, in a small bowl combine sour cream, salt, pepper, paprika, mayonnaise, Worcestershire sauce, and ketchup.

- Line a baking sheet with paper towels; set aside. Place onion rings in a large bowl of ice water for 10 minutes; drain and pat dry. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and seltzer.
- In a heavy 5-quart pot or Dutch oven, heat oil over high until a deep-fry thermometer registers 375 degrees. Working in 7 to 8 batches, place onions in batter; using your fingers, lift out, letting excess drip off. Carefully place in oil, making sure not to overcrowd pot; cook until golden brown, 2 to 3 minutes.
- Transfer rings to prepared baking sheet, and season with salt. Keep warm in a 250-degree oven. Return oil to 375 degrees before starting next batch.
- Once all the onion rings are done, place on a platter. Very carefully place parsley in pot (oil will spatter), and fry until crisp, 10 seconds; remove, using a spider or slotted spoon, and season with salt. Sprinkle onions with parsley.

- Cover onion slices with cold water and let stand 30 minutes.
- Remove to paper towels and press to dry.
- Separate into rings.
- Combine flour, sugar and salt.
- Combine milk and egg in a medium bowl and add dry ingredients and melted shortening; mix thoroughly.
- Dip onion rings in batter and fry in deep fryer or skillet filled with a couple of inches of oil until golden brown on both sides.
- Remove and drain on paper towels.

- Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
- Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
- Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.
- Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes. Remove with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter.

SOUTHERN-FRIED SWEET ONION RINGS
Thin enough to flash-fry but thick enough to let the sweet onion flavor shine through, these onion rings work well as a side dish but also are great as a stand-alone snack. Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. Keep them warm in a 200 degree oven until all the frying is done.

- Heat oil in a large heavy pot. It should be at least 3 inches deep, but more is better.

- In a large bowl combine buttermilk and baking soda; season well with salt and pepper. Peel onions and slice thinly, no thicker than 1/4-inch; a mandoline works well. Add to buttermilk mixture and stir well to submerge all onions. Set aside, unrefrigerated, for 2 hours.
