SALTED CARAMEL NO-BAKE COOKIES



Salted Caramel No-Bake Cookies image

Incorporated the best of a few no-bake recipes and used the new Jello caramel pudding flavor. Can omit the sea salt if you don't want salted caramel.

3/4 c margarine
2 c sugar
2/3 c pet evaporated milk
1 tsp vanilla
1-3.4 oz. box jello instant caramel pudding mix
3 1/2 c quick oats
1/2 c milk or dark chocolate chips
1/2 c heath bar toffee chips
dash(es) sea salt
1/2 c shredded coconut (optional)

Steps:

  • 1. Melt margarine and stir in sugar, evaporated milk, and vanilla.
  • 2. Bring to a rolling boil over medium heat, stirring constantly. Boil for 1 minute.
  • 3. Remove from heat and add oats and dry pudding mix (and coconut, if using). Let sit for 5 minutes to slightly cool.
  • 4. Sprinkle toffee chips, salt and chocolate chips over top. Stir gently to just blend, being careful to not fully melt all the chips and toffee bits by stirring.
  • 5. Drop by teaspoons onto 2 or 3 waxed paper-lined cookie sheets.
  • 6. Let sit for an hour or two until firm. Remove from sheets and store in an air-tight container.

  • In a large saucepan, combine the coconut sugar, coconut oil, and coconut milk. Bring the mixture to a boil, and boil for 2 minutes until the caramel thickens. Stirring occasionally to keep the mixture from sticking.
  • Remove the caramel from the heat and add the vanilla, sea salt, and coconut or oats. Stir to combine. If you’re using the almond or cashew butter, mix it in thoroughly.
  • Finally, add the chocolate chunks and combine, stirring as little as possible to keep the chunks intact.
