TURKEY SAUSAGE BEAN SOUP



Turkey Sausage Bean Soup image

This recipe is from my great-grandmother, though I've added a few ingredients to make it my own. Serve it with a side salad and some artisan bread for a wonderful, hearty family dinner. -Terrel Porter-Smith, Los Osos, California

Number Of Ingredients 12

4 Italian turkey sausage links, casings removed
1 large onion, chopped
1 cup chopped fennel bulb
1 cup chopped peeled celery root or turnip
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
3 cups water
4 bay leaves
1 tablespoon reduced-sodium beef base
2 teaspoons Italian seasoning
1/2 teaspoon pepper
2 cans (15 ounces each) cannellini beans, rinsed and drained
Shaved Parmesan cheese, optional

Steps:

  • In a Dutch oven, cook sausage, onion, fennel and celery root over medium heat 4-5 minutes or until sausage is no longer pink, breaking into crumbles; drain. Stir in tomatoes, water, bay leaves, beef base, Italian seasoning and pepper., Bring to a boil. Reduce heat; simmer, covered, 20 minutes or until vegetables are tender. Stir in beans; heat through. Remove bay leaves. If desired, top servings with cheese. Freeze option: Freeze soup without cheese in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally. If desired, top with cheese.

Delicious 15 Bean and Turkey Sausage Soup image

This 15 Bean recipe can be made with either Cajun spice pack, or the plain, with salt and pepper to taste. It can be made in a crockpot (soak beans overnight, or at least 6 hours, first), or cooked on top of the stove. Eat as a main course soup OR SERVE OVER RICE, like a true cajun would! My husband eats ALL beans over rice!

Number Of Ingredients 8

* 1 Bag of 15 Bean Soup Mix
* 1 14-oz pack of Oscar Mayer Smoked Turkey Sausage - cut each link length-wise, and then in slices to make half moon slices.
* 2 tsp of minced garlic
* 1 Bag of PictSweet Frozen Seasoning Blend (or 2 cups chopped onion, 1/2 cup chopped celery & 1/2 cup chopped bell pepper)
* 2 tsp of Hot Pepper Sauce (Tabasco or Crystal, or LouAnn)
* a good shake of pepper vinegar (optional)
* Salt and Pepper to taste.
* 3-5 quarts of water (depending on how "soupy" you like it)

Steps:

  • Rinse Beans.
  • OVERNIGHT SOAKING METHOD:
  • Soak overnight in about 3 quarts of water (in large pot that will be used to cook beans) or at least 6 hours.
  • Bring beans to a soft boil. Add garlic, frozen season blend (or fresh chopped onions,celery and bell pepper), sliced sausage, and hot pepper sauce. Shake a little pepper vinegar into pot (optional). Bring down to a low simmer and cook for about 45 minutes to 1 hour until soft. Taste and add salt and pepper to taste. Go easy! Remember it is easier to add salt, but almost impossible to take it back out! :)
  • CROCKPOT METHOD. Same as above, except just throw everything into crockpot, put on low, cover and come home that night to a tasty meal!
  • NOTE: If you forget to soak beans, you CAN boil them for about 30 - 45 minutes on top of stove before going to work. Then transfer to crockpot and carry on! Make sure there is enough water to cover beans by at least 2 inches.
  • STOVETOP METHOD:
  • In large pot with about 3 qts of water, bring beans to a rapid boil. Boil for about 45 to 60 minutes, stirring occasionally to prevent sticking. Bring down to a simmer, and add all ingredients. Cook for about another hour on low heat, until done.
  • SERVE as a soup (about 1 cup per serving).
  • CAJUN: Serve over 1/2 cup of rice in a bowl.
  • Delicous with cole slaw or potato salad and slice of french bread. And bread pudding for dessert!

A very simple crock-pot soup, utilizing turkey sausage and some cans of beans I had on hand. I serve this with Irish Soda Bread.

1 -2 tablespoon olive oil
3 links hot Italian turkey sausage, sliced
1 onion, chopped
4 -6 cups water
1 (2/3 ounce) envelope Italian salad dressing mix (I use Good Seasons)
1 (15 ounce) can red kidney beans, drained and rinsed
1 (15 ounce) can garbanzo beans, drained and rinsed
1 (15 ounce) can black-eyed peas, drained and rinsed

Steps:

  • Heat oil in a medium frying pan, saute sausage and onion until sausage has browned. Drain.
  • In crockpot, mix water and dressing mix. Add kidney and garbanzo beans, and black-eyed peas.
  • Add sausage and onion to crockpot.
  • Simmer on low 3-4 hours, or until heated through.

1 teaspoon olive oil
3/4 pound turkey sausage, casings removed, crumbled
8 large garlic cloves, chopped
1 cup canned diced peeled tomatoes with juices
2 tablespoons thinly sliced seeded jalapeño chili
1 teaspoon ground cumin
1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried
3 15- to 16-ounce cans garbanzo beans (chick-peas), undrained
2 cups canned chicken broth or beef broth
2 tablespoons fresh lemon juice
Chopped fresh cilantro
1 avocado, peeled, sliced

Steps:

  • Heat olive oil in heavy large Dutch oven over medium-high heat. Add turkey sausage and chopped garlic and sauté until sausage is golden brown and cooked through, breaking up sausage with back of fork, about 5 minutes. Reduce heat to medium. Add tomatoes with their juices, sliced jalapeño chili, ground cumin and chopped fresh rosemary and simmer 10 minutes, stirring frequently. Add garbanzo beans with their liquid and chicken broth and bring to boil. Reduce heat and simmer soup 15 minutes. Stir in fresh lemon juice. Season soup to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat before continuing.)
  • Ladle soup into bowls. Sprinkle soup with chopped fresh cilantro and top with sliced avocado. Serve immediately.
