How to Cook Quinoa image

We love this diminutive grain for its gentle nutty flavor, speedy preparation time, and exceptional nutritional profile. Whether you choose white, red, black, or a rainbow blend, our basic recipe turns out perfectly cooked quinoa every time.

Yield Makes about 3 cups

Number Of Ingredients 2

1 cup quinoa, rinsed and drained several times
Pinch of kosher salt

Steps:

  • Combine quinoa, 1 1/2 cups water, and salt in a saucepan. Bring to a simmer, then cover and cook over low heat until tender, about 15 minutes. Remove from heat; let stand, covered, 10 minutes. Fluff with a fork. Use immediately, or spread on a rimmed baking sheet to let cool.

I read this recipe in a cookbook, but when I decided to make it, I put my own twist on it. It turned out delicious! It is a simple elegant dish to make, and everyone will enjoy! You can add in any other vegetables you have on hand *Original recipe is in "Hip Kosher"*

1 cup quinoa
1 raw red bell pepper, chopped
1 cup corn kernel (any kind- from a can, frozen...)
3 -4 scallions, chopped
3 tablespoons minced fresh flat leaf parsley
6 tablespoons extra virgin olive oil
3 tablespoons lime juice
salt and pepper

Steps:

  • Prepare quinoa according to directions on package (Usually 2 cups of water with the 1 cup of quinoa, quinoa is ready when it has absorbed all the water.
  • In a separate bowl, combine the olive oil, lime juice, and salt and pepper (to taste) mix
  • Put the quinoa in a bowl and fluff, then add the dressing (olive oil and lime).
  • Add in the chopped vegetables and mix around.
  • Enjoy!
