12 slices bacon
2 tablespoons vegetable or olive oil
2 pounds ground turkey
93% or 85% lean
4 cloves garlic
pasted or minced
3 to 4 tablespoons grated onion
2 teaspoons cumin
2/3 palmful
2 teaspoons coriander
2/3 palmful
Salt and pepper
1 1/2 cups sour cream
About 2 tablespoons lemon juice
About 2 teaspoons hot sauce
About 1 tablespoon each finely chopped dill
parsley and chives about 1/4 cup total
Salt and pepper
12 slider rolls such as brioche dinner rolls
split or
6 hamburger rolls
Shredded or chopped lettuce
Romaine or iceberg
Sliced plum or vine tomatoes
Thinly sliced radishes

Steps:

  • Preheat oven to 375F
  • Place bacon on rack arranged over baking sheet or on slotted broiler pan and bake until crisp; reserve
  • Place oil, about 2 tablespoons, in a bowl with turkey, garlic, grated onion, cumin, coriander, salt and pepper
  • Form 6 large patties or 12 slider-size patties, making them a bit thinner at the center than the edges for even cooking and flat, even appearance once cooked
  • For the ranch dressing, combine sour cream with lemon juice, hot sauce, herbs, salt and pepper
  • Taste to adjust seasonings
  • Heat griddle, grill pan or cast-iron pan over medium-high heat
  • Cook large patties 5-6 minutes on each side, slider patties 3-4 minutes on each side
  • Serve burgers on buns topped with bacon, lettuce, tomatoes, radishes and some dressing
  • Serve Tots with Chipotle Ketchup on the side

2 teaspoons sesame seeds
6 slices bacon, cut into 1-inch pieces
1/4 cup mayonnaise
1/2 teaspoon grated lemon peel
1 cup shredded monterey jack cheese
1 teaspoon dried basil
1/4 lb cooked turkey slice, cut into 1-inch strips
1 -2 small tomatoes, thinly sliced
1/2 cup shredded swiss cheese

Steps:

  • Heat oven to 425º. Lightly spray 12" pizza pan or 9x13 pan. Unroll dough and place on pan. Press out to form crust. Sprinkle sesame seeds evenly over dough. Bake 10-12 min or light golden brown.
  • Meanwhile, cook bacon over medium heat until crisp. Drain. In small bowl mix mayo and lemon peel until blended,
  • Spread mayo over crust. Top with jack cheese, basil, turkey, bacon, and tomatoes. Sprinkle with the swiss.
  • Bake 7-9 min or cheese is melted and crust has browned.

2 cups salt
1 cup dark brown sugar
1 onion, sliced
2 cloves garlic, smashed
Pinch of crushed red pepper flakes
6 leaves sage
1 sprig rosemary
1 sprig thyme
6 pound turkey breast, rinsed
1/2 bag ice cubes
6 to 8 slices bacon
1 cup mayonnaise
2 tablespoons olive oil
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons paprika
1 tablespoon Italian seasoning
3 tablespoons salt
2 tablespoons black pepper
12 pieces wheat bread
Cilantro Mayonnaise Sauce, recipe follows
1 tomato, sliced
Lettuce leaves
1 avocado, pitted, peeled and sliced
1 cup mayonnaise
2 tablespoons freshly chopped cilantro leaves
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
Pinch coarse black pepper
1/4 teaspoon salt

Steps:

  • In a large saucepan filled with 1/2 gallon of water, bring water to a simmer. Add all Brine ingredients and stir. Allow to come to a boil, then cool broth. Add turkey and place in refrigerator for 2 to 4 hours.
  • Place bacon strips onto cookie sheet. Place in oven for 12 to 14 minutes. Remove from the oven and drain on paper towels.
  • Preheat the oven to 350 degrees F
  • Remove turkey from brine and place into a roasting pan. Pat dry turkey. Combine mayonnaise, olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt and black pepper. Rub this mixture all over the turkey breast and under the skin. Place in the oven and roast for about 1 1/2 hours or until the turkey reaches 165 degrees F on an instant-read thermometer. Make sure to let the turkey rest before slicing.
  • Slice the turkey and assemble the sandwiches by topping 1 piece of bread with the Cilantro Mayonnaise Sauce, turkey, bacon, another piece of bread, Cilantro Mayonnaise Sauce, turkey, tomato, lettuce, avocado, and a final piece of bread spread with the Cilantro Mayonnaise Sauce. Repeat with remaining bread and ingredients.
  • Combine all the ingredients and mix well.

1/3 cup mayonnaise
3 tablespoons ketchup
Coarse salt and ground pepper
8 slices rye bread, lightly toasted
12 ounces leftover roast turkey, sliced
8 romaine lettuce leaves
2 dill pickles, thinly sliced lengthwise

Steps:

  • In a skillet over medium, cook bacon until crisp, 6 to 8 minutes per side; drain on a paper-towel-lined plate. Set aside. In a small bowl, mix together mayonnaise and ketchup; season with salt and pepper.
  • Lay the bread on a work surface. Spread mayonnaise mixture on each slice; layer 4 slices with turkey, bacon, lettuce, pickles, and top with remaining bread slices. Cut each sandwich in half and serve.
