Pancake Puppies are like sweet hush puppies made from pancake mix, then fried and dipped into a sweet icing. A super fun and easy dessert!

3 cups pancake mix ( (don't pack into measuring cup - just scoop and scrape off excess))
1/3 cup sugar
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 eggs, (beaten)
3/4 cup milk
2 tbsp oil, (plus more for frying)
cinnamon sugar
1 cup powdered sugar
1-2 tbsp milk
1 tsp vanilla or maple extract

Steps:

  • Pour several inches of oil into a deep saucepan. Begin heating it up to 375F degrees over medium-high heat. It's important to use a cooking thermometer to get it to the right temperature and not overheat the oil.
  • In a large bowl, combine pancake mix, sugar, cinnamon and nutmeg, milk, beaten eggs and 2 tbsp. oil.
  • Scoop batter up using a spoon or a small cookie scooper and drop into the hot oil. A generous teaspoon of the batter is enough.
  • Don't make them too big and don't let your oil get out of control hot and don't try to cook too many at one time.
  • Drop about 3-4 puppies at a time into the oil.
  • Flip them over once during cooking so the get evenly brown on all sides.
  • Small batches work best so you have a chance to flip them around as they cook. Continue with this process until they are all done.
  • When they are finished frying, place them onto a paper towel lined tray to drain excess grease. They will be golden brown when done.
  • Sprinkle with cinnamon sugar as soon as they come out of oil.
  • To make the icing, stir together powdered sugar, milk and extract in a small bowl. Stir until smooth. Then serve!

2 cups pancake mix (use the kind where you only need to add water)
1 cup water
oil for frying

Steps:

  • Heat vegetable oil to 350 degrees.
  • In a medium-sized bowl combine pancake mix and water. Stir until well blended.
  • Use a 1-ounce cookie scoop to drop the batter into the oil. Cook until browned on the bottom, and flip over and cook for another 30 seconds.
  • Remove from oil, and drain. Sprinkle with powdered sugar if desired. Serve with maple syrup.

1 box Duncan Hines Cake Batter (18 ounce size)
3 Eggs
1/2 to 1 cup of Water
1/2 cup White Chocolate Chips
4 cups of Oil to fry
1/2 cup Butter at room temperature
8 ounces Cream Cheese - at room temperature
1/2 teaspoon Lemon Extract
1/2 teaspoon Vanilla Extract
2 cups powdered Sugar
1 tablespoon Milk

Steps:

  • Preheat oil to 350°F.
  • In a medium sized bowl combine cake batter mix and 3 eggs. Add 1/2 cup water. Use a blender to mix until the batter has no lumps. Add more water to the batter, a little at a time, until you have a good consistency for making cake balls.
  • Add 1/2 cup of white chocolate chips and mix in with a spoon.
  • Use a 1 ounce cookie scoop to drop batter into hot oil.
  • Fry on one side for approximately 1 minute and then flip over and fry on other side for about a minute.
  • Remove pancake puppy onto a plate lined with paper towels. This grease will not be usable for anything but making these red velvet puppies, the oil will turn red. So be sure to make something else first and finish up with these.
  • Make cream cheese dipping sauce by combining cream cheese and butter in a medium sized bowl.
  • Beat together cream cheese and butter until they are light and fluffy.
  • Add approximately 1/2 cup powdered sugar, into butter and cream cheese. Once the first portion of cream cheese has been incorporated add the next portion, and then the remaining powdered sugar.
  • Add vanilla, lemon extract, and 1 tablespoon of milk.
  • Blend in flavorings and milk.
  • Place dipping sauce into a small bowl and serve with red velvet puppies.

These fluffy red pancakes are great on their own and even better decked out with sweetened cream cheese, a drizzle of maple syrup and toasted pecans.

4 ounces cream cheese, at room temperature
1/4 cup sour cream
3 tablespoons whole milk
2 tablespoons confectioners' sugar
2 cups all-purpose flour
1 tablespoon unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Fine salt
2 large eggs
3/4 cup granulated sugar
1 1/4 cups buttermilk
1/2 cup melted and cooled unsalted butter, plus more for griddle

2 teaspoons red food coloring
1 teaspoon pure vanilla extract
1 teaspoon apple cider vinegar
Maple syrup, for serving
Toasted, chopped pecans, for serving

Steps:

  • Whisk the cream cheese, sour cream, milk and confectioners' sugar until smooth in a medium bowl; set aside.
  • Sift the flour, cocoa powder, baking soda, baking powder and 1/2 teaspoon salt into a large bowl. Beat the eggs and granulated sugar in a medium bowl until pale yellow; beat in the buttermilk, melted butter, food coloring, vanilla and vinegar. Add the egg mixture to the flour mixture and fold just until incorporated.
  • Heat a griddle or large nonstick skillet over medium-low heat. Lightly coat the hot skillet with melted butter. Pour 1/4-cupfuls of batter on the hot skillet, spaced evenly apart; use a spatula to spread out slightly if needed. Cook until bubbles begin to pop on the surface, about 3 minutes. Carefully flip and cook until the bottoms are set and the pancakes are cooked through, 1 to 2 minutes longer. Repeat with the remaining batter.
  • To serve, drizzle the cream cheese and syrup on top of the pancakes and sprinkle with pecans.
