CHICKEN DEVEL (SRI LANKAN DEVILLED CHICKEN)
Chicken Devel is one of the most popular dishes in Sri Lanka. This recipe was taught to me by the host of a homestay I stayed at in Kandy.

Steps:
- Season the chicken with salt and pepper and let sit for 10 minutes.
- In a pot add the chicken and fill with enough water just to cover the meat. Bring to a boil and let boil until the water is almost completely evaporated.
- Then add the butter, curry powder, sliced chili pieces and stir. Let fry for a minute or two.
- Add in the onion, ginger, garlic, Turmeric powder, curry leaves, tomato, and salt. Mix well.
- Next turn the heat down low, add the three sauces, and stir to coat. Plate and drizzle over some lime juice. Serve immediately.

BEST DEVILED CHICKEN RECIPE SRI LANKAN (SIMPLE & TASTY)
Steps:
- Clean, rinse, and cut the chicken into medium-sized pieces. Add ginger and garlic pastes, turmeric powder, and salt. Mix and let them marinate for 30 minutes.
- Cook the marinated chicken covered under the high flame until all the liquid evaporates or 15 minutes, whichever comes first. In halfway through open the lid and give a stir to avoid burning.
- Fry the cooked chicken pieces to golden.
- Cut the onions, tomatoes, and banana peppers into medium-sized pieces. Also, half the green chilies and mince the ginger and garlic. Besides, get ready with curry leaves, lime, tomato sauce, red chili flakes, and crushed black pepper.
- Heat the oil in a pan and add minced ginger, minced garlic, curry leaves, and green chilies. Sauté them for one minute under high flame.
- Then, add onion, tomato, and banana pepper. Sauté them for two minutes under high flame. Stir frequently.
- Now, add fried chicken pieces, red chili flakes, and crushed black pepper. Mix and stir them for one minute under a low flame.
- Add some salt and tomato sauce. Give a good mix until all combined under low flame.
- Finally, switch off the flame and add the lime juice. Give one last good mix.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter/margarine and mix in a small bowl with mayonnaise and mustard. Pour mixture into a shallow bowl or plate.
- Season chicken with salt and pepper to taste. Roll seasoned chicken breasts in mayonnaise mixture, then dip in mixed herbs and place in a lightly greased 9x13 inch baking dish. Bake in the preheated oven for 1 1/2 hours.

An Australian dish from the 1970's that has disappeared from the dinner table. This is a dish to impress the ladies.

Steps:
- Heat a large frying pan with oil, sauté chicken until golden, remove from pan, drain, place in long flat baking dish.
- Sauté chopped onion & crushed garlic in saucepan in extra oil until transparent, add lemon juice, lemon rind, tomato sauce, brown sugar, mustard, curry powder, vinegar, soy sauce, salt and pepper. Cover, bring to boil, remove from heat, and pour over chicken pieces.
- Cover and bake in the oven at 180°C for between 1 to 1 1/4 hours or until chicken is tender.
- Serve with steamed Rice.

- Cut the chicken into bite-sized pieces. Combine the vinegar, tamarind juice, 1/4 cup curry powder, salt, and pepper in a bowl. Add chicken and toss to coat.
- Heat the coconut oil in a wok or frying pan over medium heat. Cook the sliced onion, green chiles, cardamom pods, cloves, curry leaves, ginger, and cinnamon stick until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Stir in the garlic and cook for an additional minute.
- Add the chicken mixture, water, and tomato paste. Stir and simmer until the chicken is cooked through, about 10 minutes. Add the roasted curry powder and stir until evenly dispersed.
- Gradually stir in the coconut milk and simmer for 2-3 more minutes. (Do not overheat or the coconut milk may curdle.)

SRI LANKAN WHITE ZUCCHINI CURRY
Even though this is called a white curry, it is slightly yellowish in color from the small amount of turmeric in it. In Sri Lanka, it is made with ridge gourd, which looks like a ridged, long, slightly curving cucumber, pointy at the ends. It is sold in Indian, Southeast Asian, and Chinese markets. If you can find it, peel it with a peeler, concentrating mostly on the high ridges, and then cut it crosswise into 3/4-inch segments. It cooks in about 3 minutes. I have used zucchini instead because it is just as good and we can all get it easily. Serve with rice and perhaps Stir-Fried Chettinad Chicken.

- Have all the ingredients ready. Cut the chicken to the required size and place them in a bowl. Place chicken in a bowl, add turmeric, chilli powder, salt(1/2 teaspoon) and combine. set aside for 15 minutes. Place a shallow skillet or pan over medium heat, pour in 1/4 cup oil into the pan, let the oil heat slightly and shallow fry the chicken until they turn golden brown on the edges. This should take 10 minutes over low-medium heat. Make sure not to burn yourself while frying the chicken. use medium heat for this purpose, tossing the chicken constantly so they fry evenly. this should take 10-15 minutes. Transfer the fried chicken to a paper towel, place the same pan with the remaining oil over medium heat, add the minced garlic and ginger to the oil and sauté for two minutes. - Mix all the ingredients from the marinade list above with chicken. Leave it aside for 30 mins or up to 2 hours (or up to 12 hours in the fridge)
- Now air-fry them until chicken pieces are golden. It took me 14mins on 390F in my Ninja air fryer. You may need more or less time than this depending on your air fryer and the size of your chicken pieces. Make sure you do not overcrowd the air fryer pan and flip them once to get even browning.
