DEVILLED WHITEBAIT WITH ROASTED GARLIC MAYO

Steps:
- Heat the oven to 200C/fan 180C/gas 6. To make the mayo, put the garlic cloves onto a piece of foil, drizzle with the olive oil, sprinkle with sea salt and wrap up tightly. Cook in the oven for 25-30 minutes until soft. Cool, then squeeze the cloves out of their skins and put in a bowl with the mayonnaise, lemon juice and some seasoning, and mix well.
- Put the cornflour, rice flour, mustard powder, paprika and cayenne into a bowl and mix well. Add the whitebait and toss really well, until covered in the spiced flour.
- Fill a pan no more that 1 /3 full with oil and heat to 180C or until a cube of bread browns in 30 seconds. Fry the whitebait, in batches, for 4-5 minutes or until really crisp. Drain on kitchen paper and keep warm in a low oven while you fry the rest. Serve straightaway with the roasted garlic mayo for dipping, a sprinkle of sea salt and lemon wedges for squeezing over.

- Preheat oven to 350°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with oil. Wrap in foil. Bake until cloves are soft and light golden, 50-60 minutes. Unwrap; cool completely., Meanwhile, cut eggs lengthwise in half. Remove yolks to a bowl; reserve whites. Squeeze garlic from skins and add to yolks; mash yolks and garlic with a fork. Stir in mayonnaise, cheese and paprika., Spoon or pipe filling into egg whites. If desired, sprinkle with chives. Refrigerate, covered, until serving.

- Preheat oven to 350 degrees F (175 degrees C).
- Trim off the top of the head of garlic to expose cloves. Drizzle with olive oil. Sprinkle salt and black pepper on top. Wrap in aluminum foil.
- Bake in the preheated oven until garlic feels soft when lightly pressed, about 1 hour. Unwrap and cool, 5 to 10 minutes. Refrigerate until chilled, 30 minutes to 1 hour.

- Preheat the oven to 350 degrees F (175 degrees C).
- Cut just below the tip side of the head of garlic, exposing all of the cloves, but keeping the head intact. Place the head of garlic in the middle of a sheet of aluminum foil. Pour olive oil liberally over the garlic and season with salt and pepper. Cover completely and wrap with aluminum foil, making a cup of sorts.
- Bake in the preheated oven on the top rack, until golden brown and softened, about 45 minutes. Let cool for 10 minutes.
- Squeeze the pulp out of the garlic into a glass mixing bowl. Add egg yolks, minced garlic, water, lemon juice, salt, black pepper, and cayenne pepper. Whisk the mixture until as smooth as possible, about 5 minutes.
- Add olive oil in a continuous stream, whisking the entire time, until emulsified and mixture has a thickened consistency like mayonnaise.

- Put the egg yolks in a mixing bowl and lightly whisk, then add the oil, a short drizzle at a time while continuing to whisk. This technique is important because the oil and egg will otherwise not emulsify. Mix in the garlic, mustard and vinegar, if using, and ¼ tsp salt. Taste and adjust the seasoning if needed. Will keep chilled in a jar for up to three days.
