Similar to a recipe already posted but I used the reduced sugar mix and added pudding, cinnamon and vanilla extract and then mixed in chocolate chips

1 can of Libby's 100% Pumpkin (NOT filling)
1 box of Pillsbury Moist Supreme Reduced Sugar Devil's Food
5 tbs of Hershey's Semi-Sweet chocolate chips
1 snack cup of fat free jello chocolate-vanilla swirl
1 tbsp of cinnamon
1 tbsp of vanilla extract

Steps:

  • - preheat oven to 350
  • - line muffin pans with cups and/or spray with non-stick spray
  • -mix the dry mix from the devil's food cake mix with the pumpkin. i recommend only adding a half at a time because the mix gets pretty dense.
  • -mix in cinnamon, vanilla extract and pudding.
  • -fold in chocolate chips
  • - fill muffin cups 2/3 the way with batter
  • - bake 18-22 minutes (what the box recommends) or until a toothpick comes out clean

1 (18 ounce) box devil's food cake mix
1 (15 ounce) can solid pack pumpkin

Steps:

  • Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water. The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS AS IT WILL RUIN EVERYTHING!
  • Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray.
  • Bake at 400 degrees for 20 minutes. Makes 12 regular or 36 mini muffins.

Only two ingredients in this recipe, devil's food cake mix and canned pumpkin. Sounds like it wouldn't be very good but it is! These cupcakes turn out moist and are surprisingly chocolatey tasting, you barely detect the pumpkin taste at all. And because there's no oil or eggs they are a healthy alternative to your typical cupcake. Make sure to use pure pumpkin and not pumpkin pie filling! You could also add chocolate chips, nuts, etc. to pep these up a little.

Steps:

  • Preheat oven to 400 degrees.
  • Stir the cake mix and pumpkin together until well blended (batter will be thick).
  • Put the mixture into 16 cupcake baking cups.
  • Bake for 20 minutes and then allow them to cool.

1 cup semisweet mini chocolate chips

Steps:

  • Coat 12 muffin cups with nonstick cooking spray.
  • In a mixing bowl, add the flour, cocoa powder,sugar, baking soda, and salt; stir to combine.
  • In another bowl, add the milk, oil, eggs, and vanilla; whisk until blended.
  • Add the liquid ingredients and 1/2 cup chocolate chips to the dry ingredients.
  • Stir just until dry ingredients are moistened; be careful not to overmix.
  • Pour batter evenly into muffin cups.
  • Sprinkle remaining chocolate chips evenly over muffin batter.
  • Bake at 400 degrees for 20-22 minutes or until pick comes out clean.
  • Place pan on a wire rack to cool for a few minutes before removing muffins from pan.

Delicious devils food muffin filled with chocolate chips. These are very easy to make and use cooking oil and yogurt instead of butter. These chocolate muffins are very moist and rich. There is no need to use an electric mixer. A whisk or wooden spoon is all you need to mix this recipe. If you like a less sweet muffin, decrease the granulated sugar to 1/2 or 1/3 cup.

2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/3 cup plain yogurt
1/3 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350-F.
  • Line a standard muffin tin with a dozen, 2-1/2 inch, cup-cake paper baking cups.
  • In a mixing bowl, add the flour, cocoa powder, sugar, baking powder and salt. Mix dry ingredients well with whisk or wooden spoon.
  • In another mixing bowl add the milk, yogurt, vegetable oil, eggs and vanilla extract. Mix well with whisk or wooden spoon until blended.
  • Add the liquid ingredients to the dry ingredients along with 1/2 of the chocolate chips.
  • Stir until dry ingredients are just moistened. Careful not to over mix.
  • Pour batter into 12 muffin cups. Fill each almost to the top.
  • Sprinkle the other half of the chocolate chips evenly into the filled muffin cups.
  • Bake at 350-F for 20 to 25-minutes or until a toothpick comes out clean when inserted into center of muffin.
  • Cool before serving.
  • Makes 12 (2-1/2inch) muffins.
