The Best Sugar Free Chocolate Mousse image

This really delicious and easy to make recipe for The Best Sugar Free Chocolate Mousse is made without adding eggs and is also gluten free.

1 tsp Unflavored Gelatin
1 tbsp Cold Water
2 tbsp Boiling Water
⅓ cup Splenda
¼ cup Unsweetened Cocoa Powder
1 cup Sugar Free Whipped Cream (- can use Greek Yogurt instead!)
1 tsp Vanilla Extract

Steps:

  • Start by preparing the gelatin. In a medium mixing bowl mix together the unflavored gelatin and the cold water. This will need to sit for a minute or so before moving on to the next step. Add the boiling water to bowl and stir until the gelatin has dissolved.
  • Next, in another In a mixing bowl whisk together (you can use a fork) the sugar alternative and the unsweetened cocoa. Use a mixer to beat in the whipped cream (or Greek Yogurt) and the vanilla extract with the cocoa powder and the sugar alternative. Then beat in the gelatin from the first bowl. When the ingredients are well blended you can transfer it to individual bowls and refrigerate before serving.

150g 70% dark chocolate, plus extra to serve
6 egg whites
2 tbsp golden caster sugar
4 tbsp crème fraîche and grated chocolate, to serve

Steps:

  • Melt the chocolate in the microwave in a microwaveable bowl, stirring every 30 seconds until just melted. Whisk the egg whites to soft peaks, scatter in the sugar and whisk again until the mixture forms stiff peaks when you lift the whisk out (around 30 seconds).
  • Add a big tablespoon of the egg white to the melted chocolate and mix vigorously, working fast so the chocolate doesn't cool and harden. Then fold in the remaining egg whites carefully using a spatula or large metal spoon. Spoon into 4 glasses or ramekins and set in the fridge for 2-3 hours. Serve each with a dollop of crème fraiche and shavings of dark chocolate.

1/4 cup unsweetened cocoa powder
1 teaspoon vanilla
1 cup whipping cream
14 teaspoons artificial sweetener

Steps:

  • In small saucepan, soften gelatin in water.
  • Stir over low heat til gelatin dissolves completely.
  • In mixing bowl, beat cocoa, vanilla and cream til stiff peaks form.
  • Add artificial sweetener and liquid gelatin and beat til well blended.
  • chill thoroughly before serving.

1/2 cup hot coffee
2 tablespoons raw cacao powder (get the pure, fancy stuff)
1 dash agave nectar
stevia (to taste)

Steps:

  • Peel and pit the avocados. Dump avocados, coffee, cacao powder and agave nectar into a bowl and mix till smooth (use a hand mixer?). Add the stevia slowly to taste. Put in pretty serving bowls and chill. Really, it's that simple.
