DIANA'S EASY CROCK POT PORK LOIN



Diana's Easy Crock Pot Pork Loin image

Recipe that I pieced together using what I had around. It's a nice recipe that when done, the leftovers can be used for frugal loin noodle soup.

3 lbs pork loin
3 tablespoons vegetable oil
1 tablespoon Worcestershire sauce
1 medium onion, sliced
1 bay leaf
2 tablespoons garlic, minced
3/4 cup beef broth
1 (1 1/4 ounce) envelope onion soup mix
salt and pepper
2 tablespoons all-purpose flour

Steps:

  • You will need the following items to complete this recipe. Frying pan, Tongs, and a crock pot.
  • Pat meat to make sure it is completely dry.
  • Add 2 T of oil to pan, making sure stove is set to high heat.
  • Coat meat with remaining tablespoon of oil and season to taste on all sides.
  • Add meat when 1-2 drops of water dance in the skillet.
  • Add meat, making sure to brown on all sides including the ends.
  • Do not move the meat too soon. I would say 3-5 minutes on each turn would result in excellent brownage. The time will depend on your stove and pan.
  • Remove meat to crock pot when this is complete making sure to leave the pan on the stove and reducing the heat to med-high.
  • Cover the meat with the sliced onions, then top with onion soup mix.
  • Now take the broth, bay leaf, worcestershire sauce, and garlic and deglaze the skillet. Making sure to scrap the bottom of your pan to remove any bits left by the meat.
  • Turn off heat and pour this sauce atop the meat.
  • Cover with the crock pot lid and set on low for 6-8 or 4-6 on high.
  • When the meat is done and easily pulled apart.
  • Remove meat to a platter.
  • Take 2 T of cold water and the 2 T of the flour and mix well.
  • Pour remaining juices into a skillet and add the flour mix.
  • Heat to boil while stirring with a whisk and let it thicken to your taste.
  • The general rule for flour to liquid ratio is 2 T of flour per 1 cup of liquid.
  • So if you have more than 1 cup of liquid make sure to adjust your flour, still making sure to use the cold water mixing to stop lumping.
  • You can serve this with roasted vegetables or just plain old mashed potatoes and carrots to make a complete meal. Don't forget your homemade garlic toast or french bread.

This is an adapted recipe prepared for the ZWT 8 France Crock Pot Challenge. The original recipe was IngridH's recipe #437150 #437150. I adapted this recipe to be used in a crock pot by adding some additional liquid, and using creme fraiche instead of sour cream. I used creme fraiche because it is more heat stable and doesn't curdle when added to hot liquids.

2 tablespoons olive oil
1 tablespoon margarine
2 1/2 lbs boneless pork loin roast
1 medium onion, chopped
3/4 cup white wine
1/2 cup water
2 tablespoons Dijon mustard
1/2 cup creme fraiche
1 tablespoon flour
salt and pepper

Steps:

  • Heat olive oil and margarine in a skillet over medium high heat.
  • Add the roast and brown on all sides. Remove roast from skillet.
  • In a 4-quart crock pot, add the chopped onions.
  • Place browned roast in crock pot on top of the onions.
  • In a small bowl, whisk together the wine, water, and Dijon mustard; pour mixture over roast in crock pot.
  • Put lid on crock pot and cook on "low" for 6 to 8 hours, or until internal temperature of roast reaches 165º when using an instant read thermometer.
  • Remove roast from crock pot and cover with foil.
  • Remove excess fat from liquid in crock pot and turn crock pot to "high".
  • In a small bowl, whisk together creme fraiche and flour. When liquid in crock pot comes to a boil, whisk in creme fraiche mixture; stir occasionally until sauce thickens. Add salt and pepper, to taste.
  • Serve sauce over the roast.

1 (1 ounce) envelope dry onion soup mix
1 cup water
¾ cup red wine
3 tablespoons minced garlic
3 tablespoons soy sauce
freshly ground black pepper to taste

Steps:

  • Place pork tenderloin in a slow cooker with the contents of the soup packet. Pour water, wine, and soy sauce over the top, turning the pork to coat. Carefully spread garlic over the pork, leaving as much on top of the roast during cooking as possible. Sprinkle with pepper, cover, and cook on low setting for 4 hours. Serve with cooking liquid on the side as au jus.

I found the original recipe in a Taste of Home cookbook submitted by Vickie Lowe from Pennsylvania. I found I didn't have the exact ingredients, so I made a couple of substitutions and omitted a few things, and I came up with this. Posted on March 24th, 2006 (original recipe called for bone-in chops and fresh mushrooms).

4 boneless pork chops, 1 inch (if desired you can pound to 1/2 inch thick)
8 ounces fresh mushrooms, sliced (I used 2 4 ounce cans of mushroom stems and pieces)
1/2 medium onion, sliced thin
garlic powder
2 (8 ounce) cans tomato sauce
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon parsley flakes

Steps:

  • Lightly sprinkle each side of pork chop with garlic powder.
  • In a non-stick skillet, brown chops on each side.
  • Combine mushrooms and onions in crock pot.
  • Add browned chops in a single layer over mushroom and onions.
  • In a small bowl, mix together sauce ingredients.
  • Pour over pork.
  • Cover and cook on low for 6 hours (7 hours for bone-in chops) or until meat is tender.

1 pork tenderloin (about 1 pound)
1 tablespoon lemon-pepper seasoning
2 tablespoons butter
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 tablespoon minced fresh parsley

Steps:

  • Cut tenderloin into 8 pieces; place each piece between 2 pieces of plastic wrap or waxed paper and flatten to 1/2-in. thickness. Sprinkle with lemon pepper. , Melt butter in a large skillet over medium heat; cook pork until a thermometer reads 145°, 3-4 minutes on each side. Remove to a serving platter and keep warm. , To the pan juices, add lemon juice, Worcestershire sauce and mustard; heat through, stirring occasionally. Pour over the pork and sprinkle with parsley.
