Honey-Lime Vinaigrette image

Perfect on any salad, this dressing is light and refreshing.

¼ cup fresh lime juice
2 tablespoons honey
1 teaspoon white sugar
1 teaspoon Dijon mustard
½ teaspoon garlic powder
½ teaspoon kosher salt
¼ teaspoon ground black pepper
¼ teaspoon ground cumin
¼ cup olive oil
¼ cup canola oil

Steps:

  • Blend lime juice, honey, sugar, mustard, garlic powder, salt, black pepper, and cumin in a blender; stream olive oil and canola oil into the juice mixture while blending to emulsify the oil into the juice.

Honey Mustard Lime Dressing image

My favorite salad dressing is Caribbean Garlic by Island Grove. It's a honey mustard dressing with lime and garlic. Due to an allergy to vegetable gums that I have, all commercially made salad dressings are a no no for me. I created this to fulfill that need. This recipe makes a small amount, but you could easily double it. I prefer to make small amounts since I eats a lot of salad and like to vary my choices. Hope you enjoy this dressing as much as I do.

Number Of Ingredients 8

2 tablespoons Dijon mustard, course ground variety
2 tablespoons honey
2 tablespoons rice wine vinegar
1 tablespoon lime juice
1 garlic clove, finely minced
1/4 teaspoon onion powder
1/4 teaspoon salt
2 tablespoons oil (use your favorite)

Steps:

  • Combine all ingredients except oil in a a blender or food processor.
  • Blend until well combined.
  • Add oil and blend until completely combined.
  • Chill, preferably overnight to blend flavors.
  • Serve on your favorite salad.

  • Zest the lime. Sprinkle it with the kosher salt, then mince it as fine as possible. Holding the blunt edge of the knife, scrape the sharp edge of the blade over the minced lime zest, holding the knife at an angle and mashing the zest into a paste. This should only take a minute or so: don’t spend too long on it!
  • Place the zest in a medium bowl and it whisk together with the Dijon mustard, lime juice, and maple syrup. Gradually whisk in the olive oil 1 tablespoon at a time (8 tablespoons total), until creamy and emulsified. If desired, season with additional salt.
