3 skinless, boneless chicken breasts
1 cup Italian seasoned bread crumbs
½ cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon dried thyme
1 tablespoon dried basil
½ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut chicken breasts into 1 1/2-inch sized pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter in a bowl or dish for dipping.
  • Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

2 boneless, skinless chicken breasts (about 1 pound total)
1 cup panko (Japanese breadcrumbs)
1/3 cup grated Parmesan
Coarse salt
1 tablespoon vegetable oil
1/2 cup all-purpose flour
3 large eggs, lightly beaten
Cooking spray
Honey Mustard or Spicy Ketchup, for serving (see Cook's Notes below)

Steps:

  • Preheat oven to 400 degrees. Cut chicken into 2-inch pieces. Spread panko on a rimmed baking sheet and bake until golden brown, 6 to 8 minutes. Transfer to a shallow dish, then add Parmesan and 1/2 teaspoon salt; drizzle with oil and stir to combine.
  • Place flour and eggs in separate shallow dishes. Increase temperature to 450 degrees.
  • Set a wire rack in a rimmed baking sheet; lightly coat rack with cooking spray. In batches, coat chicken in flour, shaking off excess, dip in egg, then coat with panko, pressing to adhere. Place on rack.
  • Bake until chicken is cooked through, 12 minutes, flipping halfway through. Serve nuggets with sauce.

2 cups of your favorite potato chips (try sour cream & onion or the new dill pickle chips)
1 egg
2 tablespoons milk
6 chicken breast fillets, cut into 1 1/2-inch cubes
1/3 cup butter, melted

Steps:

  • Preheat oven to 350°F.
  • Spread the crushed potato chips in shallow dish.
  • Beat together the egg & milk in a shallow bowl.
  • Dip the chicken cubes into egg mixture & then dredge them in the chips.
  • Place the chicken nuggets on a baking sheet & drizzle with melted butter.
  • Bake for 15-18 minutes or until golden brown.
  • The nuggets can be frozen after baking!

4 (5 ounce) boneless chicken breasts
4 tablespoons honey
5 lemons
4 teaspoons dried dill weed
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon garlic powder
salt and freshly ground black pepper to taste
4 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Set chicken breasts into a shallow casserole dish and brush 1 tablespoon honey onto each breast.
  • Zest 1 lemon, then cut in half. Slice remaining lemons. Squeeze juice from 1 lemon over the tops of the chicken breasts and sprinkle with lemon zest. Combine dill, oregano, basil, garlic powder, salt, and pepper in a small bowl and sprinkle spices on top of the chicken. Cover chicken breasts with lemon slices and set 1 tablespoon butter on each piece of chicken breast.
  • Bake until chicken is no longer pink in the center and the juices run clear, about 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
