1 (3/4 pound) teriyaki pork tenderloin, cut into 1/2-inch slices
3 cups sugar snap peas

Steps:

  • Whisk 3 tablespoons reserved mandarin orange liquid, stir fry sauce, and orange juice concentrate together in a small bowl until sauce is smooth.
  • Heat 2 teaspoons vegetable oil in a large nonstick skillet over high heat until oil shimmers. Cook and stir 1/2 of the pork in hot oil until no longer pink in the center, about 3 minutes. Transfer cooked pork to a plate. Repeat with remaining vegetable oil and pork.
  • Place snap peas and sauce mixture in the same skillet, reduce heat to medium-high, cover the skillet with a lid, and cook until peas are tender yet still crisp to the bite, about 2 minutes. Stir pork and mandarin oranges into snap pea mixture; cook and stir until heated through, about 1 minute.

½ cup sugar
1 quart water
2 (1 pound) pork tenderloins
½ cup orange juice concentrate, thawed
3 large cloves garlic, minced
2 teaspoons Italian seasoning

Steps:

  • Dissolve salt and sugar in 1 quart of water in a bowl. Add meat and let stand 45 minutes. Rinse, then pat dry.
  • Meanwhile, in a small pan, reduce orange concentrate by half over low heat. Stir in garlic and Italian seasoning. Brush pork with glaze and set aside.
  • Either build a charcoal fire in half the grill or turn gas grill burners on high for 10 minutes. Lubricate hot grill rack with an oil-soaked rag using tongs.

  • If using broiler, turn it on and cover broiler pan with aluminum foil.
  • Wash and dry pork, and cut into four equal pieces.

1 garlic clove, minced
2 to 3 fresh thyme sprigs or 1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 boneless pork loin roast (5 pounds)
GLAZE:
1 cup orange juice
1/4 cup packed brown sugar
1 tablespoon Dijon mustard
1/3 cup cold water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350°. Combine the first 5 ingredients; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, for 1 hour. , Meanwhile, in a saucepan over medium heat, combine orange juice, brown sugar and mustard. In a small bowl, mix water and cornstarch until smooth. Add to orange juice mixture. Bring to a boil; cook and stir 2 minutes. 2 navel oranges
1 teaspoon olive oil
1 (12 ounce) pork tenderloin (trimmed and thinly sliced on the diagonal)
3/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs thin asparagus, trimmed and cut in half
1 garlic clove, crushed
1/4 cup water

Steps:

  • Grate 1 tsp peel from one orange and squeeze 1/4 cup juice.
  • Cut peel and pith from other orange and cut it into 1/4 inch slices cutting each slice into quarters.
  • In non stick skillet, heat 1/2 tsp olive oil over med heat til hot but not smoking.
  • Add half the pork and sprinkle with 1/4 tsp salt and 1/8 tsp pepper.
  • Cook 2 minutes or until pork loses pink color, stirring frequently.
  • Transfer to plate.
  • Repeat.
  • To same skillet add asparagus, garlic, orange peel, remaining 1/4 tsp salt and water.
  • Cover and cook about 2 minutes until tender crisp.
  • Return pork to skillet.
  • Add orange juice and orange pieces.
  • Heat through stirring often.
  • Serve.

1 cup shredded carrots

  • Whisk 3 tablespoons flour and 2 tablespoons water for sauce together in a 3-quart saucepan until well combined.
