A succulent chicken dish that has a thick rich tangy sauce perfect for dipping crusty bread! I like to serve this over plain noodles, sometimes topping it with Cheddar cheese. Yum, yum, yum. It is super simple and uses ingredients most households always have on hand. Although dill pickles are added, the dish it doesn't taste a bit like pickles; however, they definitely make the dish by adding a special something. Warning--this a lick-your-fingers recipe, enjoy!

4 chicken leg quarters with skin, split into drumsticks and thighs
1 pinch seasoned salt, or to taste
ground black pepper to taste
2 tablespoons olive oil
½ cup balsamic vinegar
1 (14.5 ounce) can stewed tomatoes
½ cup finely chopped dill pickles

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Season chicken pieces with seasoned salt and pepper. Heat oil in an oven-proof skillet over medium-high heat; add chicken and cook until golden brown, about 5 minutes per side. Transfer to a plate, discarding any accumulated grease from the skillet.
  • Reduce heat to medium and deglaze the skillet by adding balsamic vinegar. Stir gently to loosen any browned bits, until the vinegar has reduced by half and looks syrupy, 3 to 5 minutes. Add stewed tomatoes and pickles, breaking the tomatoes into smaller pieces with a spoon. Bring to a simmer, about 5 minutes. Return the browned chicken to the skillet, skin-side down, and cover tightly with a lid or foil.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Uncover and continue to cook until the sauce is thick, 10 to 15 minutes. Skim off any accumulated grease before serving.

Dill Pickle Chicken: chicken breasts are brined overnight in pickle juice, breaded in seasoned bread crumbs and baked until perfectly juicy and golden brown!

1.5 lbs thinly sliced chicken breasts
1 1/2 cup dill pickle juice
2 large eggs, beaten
1 tablespoon milk
3/4 cup seasoned breadcrumbs
3/4 cup seasoned panko bread crumbs
1/2 teaspoon kosher salt and black pepper, to taste
olive oil cooking spray, optional

Steps:

  • Place chicken and dill pickle juice in a ziplock bag. Remove as much air as possible and move chicken around to coat in pickle juice. Marinate in the refrigerator for 8 to 12 hours.
  • After marinating, remove chicken from pickle juice and dry the chicken on paper towels. Discard any leftover pickle juice.
  • Preheat oven to 425°F. Line a large baking sheet with parchment paper or place a wire cooling rack on a rimmed baking pan for crispier all around chicken.
  • Whisk together eggs and milk in a medium sized bowl. In a large shallow bowl, combine breadcrumbs, panko bread crumbs, salt and pepper.
  • Dip chicken breasts in the egg mixture, then into the breadcrumb mixture and shake off any excess.
  • Place the chicken onto the prepared baking sheet and spray both sides with olive oil cooking spray.
  • Bake for 10 minutes and then flip and continue to bake for approximately 8 minutes more. You want your chicken to be golden brown and cooked through with an internal temperature of 165°F.

1 (48 ounce) jar dill pickles (homemade preferred) or 1 (48 ounce) jar kosher dill pickles
1 (8 ounce) package cream cheese, regular
1 medium onion, very finely chopped
2 large garlic cloves, very finely chopped
3/4 teaspoon Tabasco sauce or 3/4 teaspoon a hot sauce

Steps:

  • Cut off both ends of the dill pickles to create a flat surface.
  • Using a thin potato peeler or a sharp knife or Uncle Bill's Dill Pickle Corer, and core out each dill pickle. (You can save the core for another use).
  • Stand the pickles on end on paper towelling and let drain until all liquid is drained, about 30 minutes. In addition, run some rolled paper towelling through the core to remove any liquid that did not drain.
  • Meanwhile, in a mixing bowl, cream the cheese, add onion and garlic and mix until well blended. Add Tabasco sauce and mix well to blend.
  • Using a cake decorator or a small spoon, stuff each pickle. Wrap the stuffed pickles in plastic wrap and refrigerate until cheese is firm, about 2 hours.
  • Before serving, slice pickles into 3/4 inch slices and place slices on a serving plate. (Cover and refrigerate any unused pickles). These pickles are also good for lunches.
  • You may also add some finely chopped Smoked Salmon to the filling, or some finely chopped black olives, or finely chopped cooked ham. Try mixing equal amounts of Cheese-Whiz and cream cheese, or use the different cream cheese that are available.

This simple stuffed chicken breast recipe takes minimal ingredients and is fast to make. My brother, future sister-in-law, and niece were the first to try it out and gave rave reviews. I can say it's police officer-, nurse-, and child-approved! Serve with rice pilaf and vegetables, if desired.

5 slices bacon
1 shallot, chopped
nonstick cooking spray
5 boneless, skinless chicken breasts
¾ cup ricotta cheese
¾ teaspoon garlic powder
2 tablespoons butter
1 tablespoon all-purpose flour
1 cup chicken broth
¼ cup heavy cream
3 tablespoons lemon juice
2 tablespoons dry white wine
1 tablespoon chopped fresh dill

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper-towel lined plate to drain, leaving bacon grease in the skillet. Chop bacon when cool enough to handle. Add shallot to bacon grease in the skillet and cook over medium-low heat until caramelized, 5 to 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Coat a glass casserole dish with cooking spray.
  • Place the tip of a sharp knife 1 inch from the top of a chicken breast. Cut a shallow slice lengthwise down the center, stopping 1 inch from the bottom. Cut shallow slices horizontally across the top and bottom of the slice. Repeat with remaining chicken breasts.
  • Combine chopped bacon, caramelized shallot, ricotta cheese, and garlic powder in a small bowl. Stuff each chicken breast with 2 to 3 tablespoons of the ricotta mixture and place in the prepared casserole dish.
  • Cook in the preheated oven for 25 minutes.
  • Meanwhile, melt butter in a saucepan over medium-high heat. Add flour and whisk to create a roux. Slowly pour in chicken broth, stirring constantly until smooth. Add in cream, lemon juice, white wine, and dill. Cook, stirring continuously, until slightly thickened, about 5 minutes.
  • Remove chicken from the oven. Pour sauce over chicken breasts, return to the oven, and cook until chicken is no longer pink in the center and the juices run clear, about 10 more minutes.
  • Set an oven rack about 6 inches from the heat source and turn on the oven's broiler. Broil chicken until slightly golden, about 3 minutes.

1 1/2 cups brine of bick's baby dill pickles, 50% less salt
1/4 cup olive oil
1/2 teaspoon pepper
2 tablespoons Dijon mustard
3 bick's baby dill pickles, 50% less salt, quartered lenghtwise
12 slices Spanish onions
monterey jack cheese (cut into sticks 3x1/2-inches)
toothpick
1/4 cup mayonnaise
1 tablespoon chipotle hot sauce

Steps:

  • Place chicken breast, brine, olive oil and pepper in resealable bag. Marinate in refrigerator overnight.
  • Preheat oiled BBQ grill to medium. Meanwhile remove the chicken from brine and pat dry. Discard brine. Place chicken on surface and brush with mustard.
  • Lay 2 pickle quarters, 2 sticks cheese, and 2 strips of onion along the shorter edge of chicken breast and roll jelly roll style. Secure bundles with toothpicks.
  • Place on preheated grill. Sear on all sides and reduce heat to low. Cook until chicken is no longer pink inside, about 15 minutes.
  • Remove and let sit 5 minutes. To serve, slice on diagonal and arrange on serving dish.
  • CHIPOTLE MAYO DIPPING SAUCE: Combine dipping sauce ingredients and serve.

2 boneless skinless chicken breasts
1 tablespoon all-purpose flour
1 pinch salt
1 pinch pepper
1 teaspoon butter
1 teaspoon vegetable oil
1/4 cup white wine or 1/4 cup chicken stock
1/3 cup whipping cream
1 tablespoon fresh dill
2 teaspoons chopped fresh chives or 2 teaspoons green onions
1/2 teaspoon lemon juice
lemon slice (to garnish)
dill sprigs (to garnish)

Steps:

  • Dredge the chicken breasts lightly in flour; season with a pinch each of salt and pepper.
  • In a skillet, heat butter and oil over medium-high heat; cook chicken, turning once, for about 6 minutes or until golden brown and no longer pink inside.
  • Remove from the pan and keep warm.
  • Pour off all the fat from the pan.
  • Pour in the wine and bring to a boil over high heat; cook, stirring to scrape up any brown bits in the pan, for about 1 minute or until reduced and syrupy.
  • Add the cream; boil for about 1 minute or until thick enough to coat a spoon.
  • Stir in the dill, chives, lemon juice, and salt and pepper to taste.
  • Stir any accumulated juices from the chicken back into the pan; pour the sauce over the chicken.
  • Garnish with lemon slices and dill sprigs.
