POACHED SALMON WITH A MUSTARD-DILL SAUCE



Poached Salmon With a Mustard-Dill Sauce image

Here is a light delicious salmon recipe, I made this dish last night as hot salmon and sauce. But it is a very versatile dish and in summer can be served chilled, both the salmon and the sauce. If chilling the salmon, I recommend leaving the fish in the poaching liquid, in the fridge for a few hours, to really allow the flavours to infuse the salmon. I served mine with wild rice and minted vegetables, but it goes well over linguine with a green salad on the side.

4 salmon fillets
3 cups water
1 1/2 tablespoons lemon juice
1/2 cup dry white wine
8 sprigs fresh dill
3 bay leaves
1 teaspoon mustard seeds
12 black peppercorns
3 tablespoons Dijon mustard
1 1/2 tablespoons white wine vinegar
1 1/2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
2 1/2-3 tablespoons chopped fresh dill
1/2 cup sour cream

Steps:

  • In a large pan, add water, wine, lemon juice, mustard seeds, peppercorns, bay leaves and dill, bring to a boil, reduce heat, cover and simmer for 10 minutes.
  • Add the fish and return to a simmer, cover and continue to simmer until fish is cooked and flakes easily, approximately 8 minutes.
  • For the Sauce: In a pan combine mustard, vinegar, sugar, Worcestershire, dill and sour cream, stir over medium heat until hot, when fish is cooked add the 3 tablespoons of liquid from poached fish. Heat through and serve over fish.
  • To serve: Place fish on plate and top with sauce, garnish with dill.

1/3 cup Italian dressing
2 (1/2 lb) swordfish steaks (about 1 lb) or 2 shark steaks, 1-inch thick (about 1 lb)
1/2 cup dry white wine
1/8 teaspoon pepper
1 tablespoon snipped fresh dill or 1 teaspoon dried dill weed
1 tablespoon dijon-style mustard
1/2 cup whipping cream or 1/2 cup heavy cream

Steps:

  • In large skillet, heat Italian dressing and cook fish over medium heat, turning once, 8 minutes or until fish flakes.
  • Remove to serving platter and keep warm.
  • Into skillet, add wine, then pepper, dill and mustard.
  • Bring to a boil, then simmer, stirring occasionally, 8 minutes.
  • Stir in cream and heat 1 minute or until thickened.
  • Serve over fish.
  • Garnish, if desired, with baby vegetables.

4 sole fillets (about 4 oz each)
1/2 cup flour
1 tablespoon fresh thyme, chopped or 1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
1 (370 ml) can Carnation Evaporated Milk
2 tablespoons coarse grain mustard
3 tablespoons capers, rinsed, patted dry
2 tablespoons fresh dill, chopped

Steps:

  • Combine flour, thyme, salt and pepper in a shallow plate. Pat fish dry. Dredge fish in flour mixture, shaking off excess flour.
  • Heat oil in lare skillet over medium heat. Cook sole 2-3 minutes on each side. Place fish on prepared pan and keep warm in preheated oven as you cook in batches.
  • SAÜCE:
  • Do not wipe out pan. Add Carnation Milk to hot pan and bring to a boil. Cook 1-2 minutes to allow milk to reduce. Add mustard, capers, and dill. Stir to combine. Serve immediately Drizzle over fish.
  • It can also be served with a bag of Europe's Nature's Best Balance Vegetables, 2 garlic cloves, slivered, and 2 teaspoons vegetable oil. Heat oil and garlic in large skillet. Add frozen veggies. Cook, stirring occasionally until veggies are cooked through, about 5 minutes. Serve with fish.

3/4 cup sour cream
1/2 cup Dijon mustard (use honey mustard if you like a touch of sweetness) or 1/2 cup honey mustard (use honey mustard if you like a touch of sweetness)
1/3 cup chopped fresh dill, plus
whole dill sprigs (to garnish)
2 tablespoons lemon juice (to taste)
1/2 teaspoon finely grated lemon zest
1/2 teaspoon coarse salt (to taste)
1/2 teaspoon black pepper (to taste)

Steps:

  • Place all the ingredients in a nonreactive mixing bowl and whisk to mix. Taste for seasoning, adding lemon juice, salt, and pepper as necessary. Serve the sauce in a bowl or in individual ramekins, garnished with dill sprigs.
