Steps:
- Cook 1 1/2 cups ditalini as the label directs. Cook 1 minced garlic clove in 3 tablespoons butter over medium-low heat, 4 minutes. Add 1 cup thawed frozen peas, 1/3 cup water and 1/4 teaspoon kosher salt; bring to a simmer, cover and cook 5 minutes. Puree the liquid, half of the peas and 2 tablespoons grated parmesan. Toss with the pasta and the remaining peas; season with salt. Top with basil and more parmesan.

- Preheat oven to 350°. Cook tortellini according to package directions, adding broccoli during the last 2 minutes; drain., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan., Reduce heat to medium-low. Add garlic to drippings in pan; cook and stir 1 minute. Stir in flour, basil, salt and pepper until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 3-5 minutes or until slightly thickened. Remove from heat., Stir in 1/2 cup mozzarella cheese, 1/2 cup Parmesan cheese and lemon juice. Add tortellini mixture and bacon; toss to combine. Transfer to a greased 13x9-in. baking dish; sprinkle with remaining cheeses. Bake, uncovered, 15-20 minutes or until heated through and broccoli is tender. Freeze option: Sprinkle remaining cheeses over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.

- Heat broiler, with rack in top position. In a medium saucepan, cook bacon over medium until browned and crisp, about 10 minutes. With a slotted spoon, transfer to a paper towel to drain. DITALINI WITH POTATOES AND PROVOLA
The 200-year-old L'Europeo, one of the best restaurants in Naples, serves the most delicious rendition of a favorite Neapolitan dish-pasta, patate, e provola. You can probably translate this yourself: pasta, potatoes, and provola cheese-the kind of cheese we usually call "provolone." All varieties of provola (there are many) are pulled-curd cheeses, like mozzarella, but after they are formed into pear shapes they are hung to dry, and sometimes smoked. Neapolitans have strong opinions on what makes a good dish of pasta, patate, e provola. As prepared by my Neapolitan friend Bruno di Rosa's mother, Rita, it is considered a soup and eaten with a spoon. At L'Europeo it was definitely a pasta, dense and cheesy and full of flavor-with all the comforts of baked macaroni and cheese.

- Put 4 tablespoons of the olive oil and the chopped bacon in the big skillet and set over medium-high heat. Stir and cook for 3 or 4 minutes, to render bacon fat. Stir in the chopped onion, and cook until it is sizzling and wilting, about 3 minutes. Spill in the cubed potatoes, toss well in the fat, then spread them in the pan. Season with the salt, and cook, tossing and turning the potatoes frequently, for another 3 or 4 minutes, until the cubes are lightly crisped all over.
- Pour in 4 cups water, stir everything around, and scrape up any crust on the skillet bottom. Bring the water to a gently bubbling boil and cook, stirring frequently, for about 20 minutes, until the potatoes are cooked. The soup (or sauce, depending on your point of view) should reduce so it barely covers the potato cubes.
- Meanwhile, bring 6 quarts of salted water to the boil in a pasta pot. After the potatoes have cooked for about 10 minutes, drop the ditalini into the pot and cook al dente. Drain the ditalini, and stir into the thickened potato soup/sauce. Stir in the remaining 2 tablespoons olive oil, and simmer the pasta e patate together for another 3 minutes or so, to an even denser consistency.
- Stir in the diced tomatoes, cook for a minute, and adjust salt to taste. Turn off the heat, scatter the cubed provola all over, and stir into the pasta e patate continuously as it melts into threads. Finally, stir in the grated cheese. Serve immediately, in warm bowls.
DITALINI WITH ROASTED TOMATO SAUCE AND GOAT CHEESE
Make this because it tastes awesome. What the hot oven does to the deep red San Marzano tomatoes is a wonder to behold, and produces a pasta sauce with some serious depth of flavor. The always entertaining ditalini are a perfect medium for the rich sauce, smoky oregano, and creamy goat cheese.

- Preheat oven to 425 degrees F (220 degrees C).
- Drizzle olive oil over the bottom of a 9x13-inch casserole dish. Pour tomatoes and their juices into the dish; cut each tomato into 3 pieces. Sprinkle in onion, garlic, red pepper flakes, and 2 teaspoons oregano; stir to combine.
- Roast in the preheated oven for 1 hour. Remove dish from oven, stir briefly, return to oven and roast for an additional 15 minutes.
- Transfer roasted tomato mixture to a saucepan; pour in water. Process mixture with an immersion blender or potato masher until desired sauce consistency is reached. Stir in 1 teaspoon oregano. Season with salt and black pepper to taste. Set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the ditalini and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, 8 to 10 minutes. Drain well and return to pot.
- Pour tomato sauce over ditalini; stir to combine. Stir in goat cheese.

- Place in a dutch oven or a large deep frying pan:.
- Chopped onion and garlic and saute in the olive oil for approximately 10 minutes but do NOT brown. (just a slightly golden color will be good).
- Clean and trim broccoli and cut into 2" pieces.
- Add cut broccoli to garlic and onion.
- turn down flame and add 6 cups very hot water and bullion cubes, & salt & pepper.
- Simmer until broccoili is still slightly crunchy and add pasta.
- Add more water if needed while pasta is cooking with the broccoli as it can absorb alot of the water.
- cook until pasta and broccoli are both tender and most of the water is absorbed.
- turn off the heat and sprinkle a small amount of extra virgin olive oil and approximatly 1/2 cup parmegiano cheese. Toss and serve.
- You can garnish with lemon if you like.
DITALINI WITH BACON AND MILK

- Cut bacon into 1/4-inch batons. Put into a 10-inch or 12-inch sauté pan, with the oil, and a pinch of salt.
- Cook over medium heat. When the bacon begins to sizzle, put in a good amount of ground black pepper, and one or two pinches of chile flakes.
- Stir the bacon until it is rather done, then remove the pan from heat. Pour off most of the fat, save for another purpose, or discard. Add the chopped parsley and the flour to the pan, stir until no longer white.
- Cook the ditalini in boiling, salted water until very al dente. Add the drained pasta and the milk to the pan. Return to heat. Cook to a boil. Simmer briefly, until the pasta soaks up some of the sauce.
- Serve in a warm bowl, with, or without, grated cheese.
