Steps:
- In a sterilized 1/2 gallon-sized glass jar, combine peeled and sliced pears and lemon zest. Strain the simple syrup if you infused it with herbs, etc., then pour over the pears. Add the vodka. Cap tightly and shake to combine. Allow to "rest" in a cool, dark place for about 4 weeks, shaking every couple of days.
- Strain the pears out by pouring through a fine-mesh sieve (or use cheesecloth). Transfer strained liquid into new sterilized glass jar(s) and and allow to rest undisturbed for another 6 months.
- Strain out any additional sediment through cheesecloth before pouring into sterilized jars one last time.
DIY PEAR LIQUEUR RECIPE
A homemade pear liqueur made with brandy gives you the sweetness of a fruit liqueur and the dryness of brandy in one ingredient. This pear liqueur hits the "Do I DIY?" trifecta: easy, cheap, and better-tasting than the store-bought stuff.

Steps:
- Wash and chop one pear, discarding the seeds and core. Leave the skin on. Split and scrape the vanilla bean.
- Place one chopped pear and the vanilla bean in a sealable glass jar and cover with brandy. The jar should have enough room to add another cup of liquid later in the process. Seal and shake, then let steep for 2 days. Remove vanilla bean, and then let steep for another 3 days.
- Chop the second pear, discarding the seeds and core. Add it to a pot, along with the water and sugar, then stir and bring to a boil on medium heat, about 5 to 7 minutes. Reduce heat and simmer for an additional 5 minutes. Let the syrup mixture cool.
- Once cooled, pour the syrup (with the fruit) into the steeping jar. Shake and let steep for 2 days. Taste, and if desired flavor is achieved, strain through a fine mesh strainer and then a coffee filter into a bottle or jar.

LIQUEUR DE POIRE (PEAR LIQUEUR)
Liqueur de Poire is a French pear liqueur that is easy to make and makes a wonderful gift. The hardest part is waiting three months for the maceration process. Be sure to shake the jar periodically when you check on its progress.

CINNAMON PEAR LIQUEUR
This is an infused, sweetened vodka perfect for the fall or winter holidays. If you've never infused vodka, this is a good start because everything starts (and stops) infusing at once: just dump everything in a jar and (with daily stirring) forget about it for 4-7 days until it's magically delicious. Strain and gift in a pretty bottle for a simple, much-appreciated gift. Good for sipping after dinner, but we like a cocktail including this, a splash of real pear juice, club soda, and a squeeze of lime.

Steps:
- Place the pears, sugar, and spices in a large glass container with a lid such as a quart-sized mason jar.
- Add the vodka slowly, stirring to dissolve the sugar. Once it is mostly dissolved, add as much of the vodka as will fit.
- Close the lid and place your vodka infusion in a dark, cool place (like a kitchen cabinet away from the stove) for 4-7 days, stirring once a day. Taste test your infusion on day 4--if it tastes good to you, it's done! If you'd like a stronger flavor, keep infusing for several more days. Once infused to your liking, strain out the fruit and spices. It's ready for drinking!
