Here's a great do-ahead recipe to pull out for a "let's do brunch" day.

1 tablespoon butter or margarine
1 cup sliced leek
8 slices French bread, each 1/2 inch thick
1 cup chopped cooked chicken or turkey
1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill weed
2 cups shredded mozzarella cheese (8 ounces)
4 eggs, beaten
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in 1-quart saucepan over medium heat. Cook leeks in butter about 3 minutes, stirring frequently, until softened; remove from heat.
  • Cut enough bread into 1-inch cubes to measure 5 cups. Mix bread cubes, leeks, chicken and dill weed. Spread bread mixture in ungreased square baking dish, 8x8x2 inches. Sprinkle with cheese. Mix remaining ingredients; pour over cheese. Cover tightly and refrigerate at least 4 hours but no longer than 24 hours.
  • Heat oven to 325°F. Uncover and bake 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.

2 cups sliced leeks (about 2 lb)
24 slices French bread, each 1/2 inch thick (from 1 lb. loaf)
2 cups chopped cooked chicken or turkey
2 tablespoons chopped fresh or 2 teaspoons dried dill weed
3 cups shredded mozzarella cheese (12 oz)
8 eggs, beaten
4 cups milk
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In 2-quart saucepan, melt butter over medium heat. Add leeks; cook about 3 minutes, stirring frequently, until softened. Remove from heat.
  • Line bottom of ungreased 13x9-inch (3-quart) glass baking dish with half of the bread slices. Sprinkle with chicken and dill weed; layer with leeks. Sprinkle 2 cups of the cheese over leeks. Top with remaining bread slices; sprinkle with remaining 1 cup cheese.
  • In medium bowl, mix remaining ingredients; pour over bread mixture. Cover tightly; refrigerate at least 4 hours but no longer than 24 hours.
  • About 1 hour 15 minutes before serving, heat oven to 325°F. Uncover dish; bake 1 hour to 1 hour 5 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

My great-grandparents made this traditional Amish recipe on Sundays when they had company, and it's still one of my family's favorite dishes.

10 cups bread cubes (1/2-inch cubes)
2 cups cubed cooked chicken
1 cup diced potatoes
1 cup finely chopped celery
1/2 cup finely chopped carrot
1/4 cup minced fresh parsley
4 cups milk
2 cups chicken broth
5 eggs, lightly beaten
1/4 cup butter, melted and cooled
1 teaspoon salt
1/2 teaspoon pepper
1 to 2 jars (12 ounces each) chicken gravy, warmed, optional

Steps:

  • Arrange bread cubes in a single layer on several ungreased large baking sheets. Bake at 350° for 20-30 minutes until golden brown and crisp. , Transfer to a large bowl. Stir in the chicken, potatoes, celery, carrots and parsley. In another large bowl, combine the milk, broth, eggs, butter, salt and pepper. Pour over bread mixture; toss to coat. , Pour into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 45 minutes; stir. Bake 45 minutes longer or until a knife inserted in the center comes out clean. Serve with gravy if desired.

3 -4 tablespoons butter
2 cups sliced leeks (about 2 pounds)
1 lb French bread, sliced into 1/2 inch sliced
2 cups cooked chicken or 2 cups cooked turkey, diced or chopped
2 teaspoons dry dill weed or 2 tablespoons fresh dill weed
3 cups shredded mozzarella cheese (or more if desired)
4 -6 slices cooked bacon, chopped (optional)
3 -4 tablespoons grated parmesan cheese (optional)
8 eggs, beaten
4 cups whole milk or 4 cups half-and-half cream
1 teaspoon salt
pepper

Steps:

  • Prepare a greased 13 x 9-inch baking dish.
  • Melt the butter in a saucepan, over medium heat.
  • Cook the leeks in butter about 3 minutes, stirring frequently, until softened; remove from heat.
  • Line the bottom of the baking dish with half of the bread slices.
  • Sprinkle with cooked chicken and the dillweed; top with the cooked leeks.
  • Sprinkle 2 cups of cheese over the leeks.
  • Sprinkle the cooked bacon over the cheese.
  • Sprinkle with grated Parmeasn cheese over the bacon.
  • Top with the remaining bread slices; sprinkle with the remaining 1 cup cheese.
  • In a bowl, mix together the 8 beaten eggs, 4 cups milk, salt and pepper.
  • Pour the mixture evenly over the bread and cheese in the baking dish.
  • Cover tighty with plastic wrap, and refrigerate at least 4 hours, but no longer than 24 hours.
  • When ready to bake, remove from the fridge and uncover, let sit out at room temperature 1-1/4 hours before baking.
  • Set the oven to 325 degrees.
  • Bake for 1 hour, or until a knife inserted in the middle, comes out clean.
  • Let sit for 10 minutes before serving-- delicious!

This recipe is from Art Smith of Chicago's Table Fifty-Two. It was in the December 2008 issue of Good Housekeeping in their "Dinner for Four Under $10" column. Refrigerate overnight for a great breakfast casserole. Prep time doesn't include refrigeration time of 4 to 10 hours.

1 tablespoon unsalted butter
1 medium onion, finely chopped
3 celery ribs, finely chopped
6 ounces asparagus, woody stems discarded, cut into 1 inch pieces
1/4 cup water
4 cups cubed cooked chicken (1 inch cubes)
1 cup mayonnaise
1 1/2 cups milk
1 1/2 cups chicken broth
6 large eggs
1 tablespoon chopped parsley
1 tablespoon chopped chives
1 teaspoon salt
1/2 teaspoon black pepper
6 cups cubed French bread (1 inch cubes)
1 cup shredded sharp cheddar cheese

Steps:

  • Heat butter in large skillet over medium heat. Add onion and celery and cook uncovered, stirring occasionally, about 5 minutes. Add asparagus, water and cover. Cook until asparagus is crisp-tender, about 3 minutes. Uncover and cook until all liquid is evaporated, about 2 minutes. Transfer vegetables to large bowl.
  • Add chicken and mayonnaise, mix well. Whisk milk, broth, eggs, parsley, chives, salt and pepper in another bowl.
  • Lightly butter a 13x9 inch glass baking dish. Spread half of bread cubes in dish; top with chicken mixture. Spread remaining cubes over chicken. Pour egg mixture over ingredients in dish. Cover and refrigerate for 4 to 10 hours.
  • Preheat oven to 350°F Bake strata for 45 minutes. Sprinkle with cheese; bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes; serve hot.

1-1/2 cups shredded Swiss cheese, divided
1-1/2 cups shredded cheddar cheese, divided
8 large eggs
2 cups whole milk
1/2 cup beer
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 13x9-in. baking dish coated with cooking spray, layer half of the bread cubes, half of the leeks and half of the red pepper, 3/4 cup Swiss cheese and 3/4 cup cheddar cheese. Repeat layers once., In a bowl, whisk the eggs, milk, beer, garlic, salt and pepper. Pour over cheese. Cover with plastic wrap. Weigh strata down with a slightly smaller baking dish. Refrigerate for at least 2 hours or overnight., Remove strata from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 5-10 minutes before cutting.

This make-ahead breakfast/brunch strata has cheese, eggs, and nutritious value from spinach.

3 tablespoons unsalted butter
1 ½ cups finely chopped yellow onion
3 pinches herbes de Provence, or to taste
salt and ground black pepper to taste
2 (10 ounce) packages frozen chopped spinach, thawed and drained
butter-flavored cooking spray
8 cups cubed Italian bread
1 cup shredded reduced-fat mozzarella cheese, or more to taste
9 large eggs
1 cup skim milk

Steps:

  • Melt butter in a medium skillet over medium heat. Add onion and saute until soft, about 5 minutes. Add herbes de Provence, salt, and pepper; continue to cook for 1 minute more. Stir in spinach, remove from heat, and set aside.
  • Spray the inside of a 3-quart (9x13-inch) baking dish with cooking spray. Layer the bottom of the dish with 1/3 of the bread cubes. Top with 1/3 of the spinach mixture and 1/3 mozzarella cheese. Repeat these layers twice more with remaining bread, spinach mixture, and cheese.
  • Combine eggs, milk, salt, and pepper in a medium bowl. Whisk together until blended. Pour evenly over the bread and spinach layered in the baking dish. Cover with plastic wrap and chill for at least 8 hours, up to 1 day.
  • Remove from the refrigerator 30 minutes before baking to allow pan to get to room temperature.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake, uncovered, in the preheated oven until puffed, golden brown, and cooked through, 45 to 55 minutes. Let stand at least 5 minutes before serving.

Add cooled chicken mixture, cheese, and bread cubes to milk mixture. Gently toss to combine. Pour into greased 3 quart casserole dish, cover, and let sit at least 2 hours or overnight. When ready to bake, adjust oven rack to middle position and preheat to 350°F. Unwrap dish and bake until golden and center is just set, 40 to 50 minutes. Serve warm.
