Number Of Ingredients 8

1 1/2 cups all-purpose flour
3/4 cup fine yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 tablespoons sugar
1/2 cup (1 stick) unsalted butter, cold, cut into small pieces
1 cup milk

Steps:

  • Preheat oven to 375 degrees. Line a baking sheet with parchment paper; set aside. In a large bowl, whisk together flour, cornmeal, baking powder, baking soda, salt, and sugar. Using a pastry blender, cut in butter until mixture resembles coarse crumbs with a few larger clumps remaining.
  • Pour in milk; using a rubber spatula, fold milk into dough, working in all directions and incorporating crumbs at the bottom of the bowl, until dough just comes together. The dough will be slightly sticky; do not overmix.
  • With two large spoons, drop mounds of dough (about 1/3 cup each) about 1 1/2 inches apart on the prepared baking sheet.
  • Bake, rotating sheet halfway through, until biscuits are golden, 15 to 20 minutes. Slide parchment and biscuits onto a wire rack to cool.

Steps:

  • In a large bowl, combine the first six ingredients. Cut in shortening until mixture resembles coarse crumbs. 3/4 cup (packed) chopped green onions
1 1/2 cups all purpose flour

1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes

1 tablespoon finely minced canned chipotle chiles in adobo*

Steps:

  • Position rack in center of oven; preheat to 425°F. Melt 1 tablespoon butter in nonstick skillet over medium heat. Add green onions and sauté 2 minutes to soften slightly. Remove from heat.
  • Blend flour, cornmeal, sugar, baking powder, salt, and baking soda in processor. Add 1/2 cup chilled butter; cut in using on/off turns until mixture resembles coarse meal. Add cheese; cut in using on/off turns. Transfer flour mixture to large bowl. Whisk 1 egg in glass measuring cup. Add enough buttermilk to egg to measure 1 cup; stir in green-onion mixture and chipotles. Make well in center of dry ingredients. Pour buttermilk mixture into well; mix just until evenly moistened.
  • Turn dough out onto generously floured surface. Knead gently just until dough holds together, about 10 turns. Pat out on generously floured surface to 3/4-inch-thick round. Using 3-inch round cutter, cut out biscuits. Transfer to ungreased baking sheet, spacing 1 inch apart. Gather dough scraps; pat out to 3/4-inch thickness and cut out additional biscuits. Brush biscuits with egg glaze.
  • Bake biscuits until golden, tester inserted into center comes out clean, and biscuits feel firm, about 18 minutes. Cool on rack 5 minutes. Serve warm.
  • *Available at some supermarkets, specialty foods stores, and Latin markets.

1/2 cup (113g) unsalted butter, cold and cut into small cubes
3/4 cup (177ml) buttermilk
1/2 cup shredded Cheddar cheese (sharp, mild, whatever your preference)
1 tablespoon unsalted butter, melted

Steps:

  • Preheat oven to 425°F. Line a baking sheet with parchment paper or a silicone liner.
  • Whisk together the flour, corn meal, sugar, chives, baking powder, and salt.
  • Add the butter, and mix with a pastry blender or a fork until the mixture forms coarse crumbs.
  • Stir in the buttermilk and cheese, mixing until thoroughly moistened.
  • Transfer the dough to a lightly floured surface. Knead 4 or 5 times, just until the dough comes together.
  • Roll out the dough to 3/4-inch thickness. Use a 2-inch biscuit cutter to cut into rounds. Gather and re-roll the dough once and continue cutting out biscuits.* Place the biscuits on the prepared pan, leaving about 2 inches between each.
  • Bake 12 to 15 minutes or until golden brown. Place the pan on a wire rack to cool.

I had some fresh chives left over that I wanted to use, and just threw this together. I was pleasantly surprised by the result, these little biscuits are very moist and flavorful. I made mine with fresh chives, but I'm fairly certain that the dried ones would be just as good. They would be good with a variety of main dishes, but I've been eating them as a snack. They're good with butter, but better with a dab of mayo.
