Steps:
- Heat olive oil in a skillet over medium heat. Cook and stir onion, bell pepper, and garlic in the hot oil until the onion is translucent, 5 to 7 minutes. Dust the onion mixture with cayenne pepper and transfer to a bowl; set aside to cool.
- Toss avocado, tomato sauce, lemon juice, olive oil, coriander, and cilantro together in a large bowl. Add onion mixture and gently mix to combine.
- Cover bowl with plastic wrap; refrigerate until cool, at least 1 hour.

D'S FAMOUS SALSA
This is a Texas recipe I've developed and refined over many years. It's very fast, easy, and I usually have everything on hand. I often give it as gifts to my family back East.

Steps:
- Place the tomatoes, onion, garlic, lime juice, salt, green chiles, and cilantro in a blender or food processor. Blend on low to desired consistency.

DOM'S SALSA AND GUACAMOLE

Steps:
- Combine the tomatoes, scallions, cilantro, red wine vinegar, garlic, lime zest and juice (to taste) and chile pepper (to taste) in a medium serving bowl. Add the salt and pepper. Stir to combine. Let sit at room temperature for 10 minutes, then stir again.
- Divide the salsa into 2 bowls. Serve one as traditional salsa. To the other bowl, add the avocado and mix to combine.

- Place tomatoes, onions, tomato paste, water, garlic powder, cilantro, cumin, salt and sugar in a blender or food processor.
- Puree until smooth.
- Add remaining measure of tomatoes and mix till blended. (Fresh, diced tomatoes may be substituded for diced canned tomatoes.)
- Add optional jalepeno peppers to taste.

DON EMILIO'S SALSA - MUY BIEN!
People used to travel miles and miles just to get salsa and chips to go from Don Emilio's Restaurant in Larchmont, NY. No matter how hard anyone tried, there was no getting the recipe. Then one day at a party in work, a Columbian girl brought in salsa that her husband had made...and it was identical to Don Emilio's. Aaaahhhhh....amazing salsa whenever you want it. And you'll want it often. And you thought chocolate was addictive???? (Check out my guacamole recipe, too)

- Combine onion, jalapeno pepper, salt and white vinegar in a glass or ceramic bowl.
- Let this marinate for 1/2 hour.

- Put garlic cloves into a food processor; process. Add remaining ingredients and blend until smooth. NOTE: This is great poured over a Chef Salad which consists of: Salad greens Roasted Turkey, julienned Baked Ham, julienned Swiss Cheese, julienned Cheddar Cheese, Julienned Tomato, cubed Hard boiled egg, cut into 4 or 6 wedges Two slices bacon per salad, cooked crisp and crumbled Croutons Put the salad greens into individual bowls. Arrange the remaining ingredients in groups on top of lettuce.
