2 2/3 cups sour cream
2 boxes Jiffy Cornbread Mix
2 (15-ounce each) cans creamed corn
1/2 (15-ounce) can whole kernel corn, drained
1 cup white granulated sugar
2 eggs
1/4 cup (1/2 stick) butter, melted and cooled
1/8 cup milk

Steps:

Preheat oven to 400°F. Coat a 4 quart dish with cooking spray or butter. Mix all the ingredients together until all the dry ingredients are moist. Pour mixture into prepared casserole dish. Bake until golden brown on top (approximately 1 hour). The middle should be moist, between a pudding and a bread pudding texture.

4 cups evaporated milk
2 eggs (beaten)

Steps:

Mix together the cornmeal, salt and sugar.
Heat milk in a double boiler.
Whisk in mix to blend.
Cook slowly, whisking very often, until thickened.
Heat oven 400.
Remove pot from heat. Whisk in eggs quickly.
Pour into a sprayed baking dish.
Bake 30 minutes.

3/4 tablespoon sugar

Steps:

Place the milk in a double boiler and scald.
Stir in the dry ingredients and continue to stir until thickened.
Let cool 1 hour.
Preheat oven to 400°F.
Beat eggs and stir into the cornmeal mixture with the butter.
Place in a baking dish and bake for 30 minutes, or until brown.
