3 large eggs
¾ teaspoon vanilla extract
1 ½ cups all purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon salt
½ cup semi-sweet chocolate chips
3 cups soft caramel candy
1 ½ cups soft caramel candy
¼ cup heavy cream
flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 350°F (180°C). Grease an 8x8-inch (20x20-cm) baking pan and line with parchment paper.
  • Make the brownies: in a large bowl, whisk together the melted butter, granulated sugar, and brown sugar. Add eggs and vanilla extract. Whisk until thoroughly combined. Sift in the flour, cocoa powder, and salt, and fold to incorporate. Fold in the chocolate chips.
  • Pour half of the batter into the baking pan and spread to cover the bottom. Arrange the caramel candies in a single layer over the batter. Pour the rest of the batter over the caramel candies and spread to cover.
  • Bake for 35 minutes or until center is cooked through. Remove the brownies from the oven and let cool.
  • Make the topping: combine the caramel candies and heavy cream in a medium heat-proof bowl. Microwave for 1 minute in 30-second intervals, stirring between each until the mixture is thick and velvety.

200g unsalted butter, plus a little extra for greasing
100g chocolate, 70% cocoa solids
100g chocolate, 50% cocoa solids
397g can Carnation caramel
1 tsp flaky sea salt, plus a little extra for the top
200g golden caster sugar
4 medium eggs, at room temperature
130g plain flour
50g cocoa powder

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Grease then line a 23cm square traybake tin with baking parchment.
  • Melt 200g unsalted butter in a medium pan, break in 100g chocolate (70% cocoa solids) and 100g chocolate (50% cocoa solids), then remove the pan from the heat and wait for the cubes to melt.
  • In a small bowl, mix 175g Carnation caramel from a 397g can with 1 tsp sea salt - it will loosen up.
  • Put the rest of the caramel in a large bowl with 200g golden caster sugar and 4 medium eggs, and beat with an electric hand mixer or balloon whisk until even. Whisk in the chocolate and butter.
  • In another bowl, combine 130g plain flour, 50g cocoa powder and a good pinch of table salt, then sift this on top of the chocolate mix. Beat briefly until smooth.
  • Pour half the brownie batter into the tin and level it with a spatula.
  • Using a teaspoon, spoon half of the salted caramel on top of the batter layer in 5 thick, evenly spaced stripes.
  • Spoon the rest of the brownie batter on top and smooth it out, trying not to disturb the caramel beneath. Top with the rest of the caramel in the same stripy fashion. Drag a skewer or tip of a knife through the caramel to make a feathered pattern on the top.
  • Scatter with a little more sea salt, then bake for 25-30 mins or until risen all the way to the middle with a firm crust on top. When ready, the brownie will jiggle just a little when you shake the tin.
  • Let it cool completely in the tin, then cut into squares.

1 cup canola oil

1/4 cup 2% milk

14 ounces caramels (like Kraft caramels)
1 can (14 ounces sweetened condensed milk)
1 teaspoon coarse sea salt

Steps:

  • Preheat the oven to 350 degrees. Line a 9x13 inch pan with parchment paper or aluminum foil and spray with cooking spray. This makes cleaning up easier with the caramel.
  • In a large bowl combine the flour, salt, and baking powder. In another large bowl, beat together the sugar, cocoa, oil, eggs and milk. Add the dry ingredients until blended. Fold in chocolate chips.
  • Spoon two thirds of the batter into the greased 9x13 inch pan. Bake for 12 minutes.
  • Meanwhile prepare the caramel filling. In a microwave safe bowl, heat the caramels and sweetened condensed milk stirring 30 seconds at a time until melted and smooth. Can also melt over medium low heat in a saucepan.
  • Pour the melted caramel over the warm brownie layer. Sprinkle coarse sea salt on top. Drop remaining brownie batter over the top of the caramel and carefully swirl the top with a knife. Bake for an additional 35-40 minutes or until toothpick inserted in center comes out clean. Do not overbake. Allow the brownies to completely cool before serving. Can also garnish the brownies lightly with additional sea salt.

30 caramels (recommended: Kraft)
2 cups shredded coconut, toasted

Steps:

  • Preheat the oven to 350 degrees F. Generously spray a 9 by 13-inch baking dish with cooking spray.
  • In a large bowl, beat the brownie mix with the eggs, chocolate milk, and oil until just combined. Using a spatula, fold in 1/2 cup chocolate chips. Spread into the prepared baking dish and bake until center is barely set, 25 to 30 minutes. Remove from the oven and cool completely.

1/2 pound (2 sticks) unsalted butter
8 ounces plus 6 ounces Hershey's semisweet chocolate chips
3 ounces unsweetened chocolate
3 extra-large eggs
1 1/2 tablespoons instant coffee granules, such as Nescafe
1 tablespoon pure vanilla extract
1 cup plus 2 tablespoons sugar
1/2 cup plus 2 tablespoons all-purpose flour, divided
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
5 to 6 ounces good caramel sauce, such as Fran's
2 to 3 teaspoons flaked sea salt, such as Maldon

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 9 x 12 x 1 1/2-inch baking pan.
  • Melt the butter, 8 ounces of the chocolate chips, and the unsweetened chocolate together in a medium bowl set over simmering water. Allow to cool for 15 minutes. In a large bowl, stir (do not beat) together the eggs, coffee, vanilla, and sugar. Stir the chocolate mixture into the egg mixture and allow to cool to room temperature (see note below).
  • In a medium bowl, sift together 1/2 cup of the flour, the baking powder, and salt and add to the chocolate mixture. Toss the remaining 6 ounces of chocolate chips and the remaining 2 tablespoons of flour in a medium bowl and add them to the chocolate mixture. Spread evenly in the prepared pan.
  • Bake for 35 minutes, until a toothpick comes out clean. Don't overbake!
  • As soon as the brownies are out of the oven, place the jar of caramel sauce without the lid in a microwave and heat just until it's pourable. Stir until smooth. Drizzle the caramel evenly over the hot brownies and sprinkle with the sea salt. Cool completely and cut into 12 bars.

1 box german chocolate cake mix
1 package Kraft caramels (about 45, 14 oz. )
1 can evaporated milk (10 oz., divided)
3/4 cup butter melted
2 tablespoons flour
12 ounces semi sweet chocolate chips (I use jumbo)
1/2 cup chopped pecans (optional)

Steps:

  • Preheat the oven to 350. Grease a 9x13 pan and set aside.
  • Melt the caramel and 1/3 cup evaporated milk and stir in a small saucepan over low heat until melted and incorporated.
  • In a mixing bowl combine cake mix, 1/3 cup evaporated milk, melted butter and flour. Press half of the mix into the 9x13 inch dish and bake for 6 minutes.
  • Remove pan from oven and sprinkle chocolate chips.
  • Pour the caramel on top of the chocolate chips.
  • Top with the remaining brownie batter on the top of the caramel and bake for an additional 15-18 minutes.
  • Remove from oven and let cool completely so that the caramel can set. I also find that if you let it cool and place in the fridge it helps to set up right before cutting.

14 ounces caramels
½ cup evaporated milk
1 (18.25 ounce) package German chocolate cake mix
⅓ cup evaporated milk
¾ cup butter, melted
¼ cup chopped pecans
2 cups milk chocolate chips

Steps:

  • Peel caramels and place in a microwave-safe bowl. Stir in 1/2 cup evaporated milk. Heat and stir until all caramels are melted.
  • Preheat oven to 350 degrees F (175 degrees C) Grease a 9x13 inch pan.
  • In a large mixing bowl, mix together cake mix, 1/3 cup evaporated milk, melted butter, and chopped pecans. Place 1/2 of the batter in prepared baking pan.
  • Bake for 8 minutes.
  • Place the remaining batter into the fridge. Remove brownies from oven and sprinkle chocolate chips on top. Drizzle caramel sauce over chocolate chips. Remove brownie mix from refrigerator. Using a teaspoon, make small balls with the batter and smash flat. Very carefully, place on top of the caramel sauce until the top is completely covered.
  • Bake for an additional 20 minutes. Remove and let cool.

¾ cup melted butter
⅓ cup evaporated milk
1 cup chopped pecans
13 ounces individually wrapped caramels, unwrapped
⅓ cup evaporated milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x13 inch pan with non-stick coating .
  • Combine the cake mix, butter and 1/3 cup evaporated milk. Mix well and pour 2/3 of the batter into pan.
  • Press pecans into batter and bake for 8 to 10 minutes.
  • In a saucepan over medium heat, combine the caramel and 1/3 cup evaporated milk. Stir until melted and smooth; pour over cooled cake mix.
  • Sprinkle chocolate chips on top of caramel and top with spoonfuls of remaining cake mix. Bake for additional l5 to l8 minutes; cool and cut.

Donita was a friend I met while living in Kentucky. She used to bring these brownies to potlucks and kindly shared the recipe with me. I have made my own changes over the years, but it is still basically the same recipe she used. You can add 1 cup chopped nuts if you like, however I feel these are rich enough without them.

1 (18 1/2 ounce) box German chocolate cake mix, unprepared (or a box of brownie mix, see notes)
3/4 cup unsalted butter, melted (1 1/2 sticks)
2/3 cup evaporated milk, divided (I have used both regular and light)
1 (14 ounce) bag Kraft caramels (48 squares) or 1 (14 ounce) bag chocolate riesen candies, unwrapped
1 (12 ounce) bag semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 F and line a 9x13" baking pan with foil. Grease the foil lightly.
  • Mix together the dry cake mix, melted butter, and just 1/3 cup of the evaporated milk.
  • Spread half of this mixture into the prepared pan and bake for 6 minutes.
  • Meanwhile, melt the unwrapped candies with the remaining 1/3 cup evaporated milk in the microwave (time will adjust based on your wattage, about 3 minutes).
  • When the first layer is done pre-baking, remove from the oven and cover with chocolate chips (and nuts if you are adding any).
  • Pour the melted caramel mixture all over the top.
  • Spoon the remaining raw batter in blobs all over the top and bake another 15-18 minutes.
  • Allow too cool, then lift out of the pan and cut with a large knife, using a rocking motion - they are very gooey and if you try to cut them too soon it will be very messy.
  • NOTE: If using brownie mix instead of cake mix, then skip the melted butter and the first 1/3 cup of evaporated milk and simply prepare the batter according to the brownie package instructions. Pour half the mixture into the pan, and then continue with the rest of the recipe as directed. You may also need to adjust the time for the brownies, a little longer until it is bubbling up. Keep these brownies in the fridge to firm up.

2 teaspoons baking powder
½ cup all purpose flour
¼ cup vegetable oil
2 large eggs
12 chewy caramel candies
flaky sea salt, to taste

Steps:

  • Preheat the oven to 350°F (180°C). Line 2 baking sheets with a nonstick baking mat or parchment paper.
  • In a large bowl, whisk together the brownie mix, baking powder, and flour. Add the vegetable oil and eggs and beat with an electric hand mixer until well combined.
  • Scoop out 2 tablespoons of the dough and flatten into a disc. Add a caramel candy to the center and roll the dough around it to cover. Place on a prepared baking sheet and repeat with the remaining dough and candies, spacing the cookies evenly.

1/2 cup vegetable oil
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/2 teaspoon baking powder
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1/2 cup all-purpose flour
1/2 cup milk chocolate chips (optional)
33 caramel Hershey kisses (unwrapped)
1/2 cup caramel sauce

Steps:

  • Preheat the oven to 350 degrees. Line a 9x9-inch baking pan with foil and grease with nonstick baking spray. The foil will help remove the brookies after they have cooled.
  • Scoop spoonfuls of the cookie dough into the prepared pan and firmly press it into the bottom of the pan.
  • Place the Hershey kisses in rows in the pan. Gently press them down into the cookie dough. Set aside.
  • Add the oil and sugar in a medium bowl. Beat with a hand mixer on medium until combined.
  • Add the eggs and vanilla extract and beat until the eggs are completely incorporated.
