1 teaspoon salt
1/2 cup butter
4 very ripe bananas
2 teaspoons baking powder
1 teaspoon baking soda
2 eggs
1/2-1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Mix dry ingredients.
  • Mix butter, bananas & eggs.
  • Mix dry ingredients into banana mix and stir in nuts.
  • Bake 40-45 minutes.

2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
½ cup butter, softened
3 ripe bananas, mashed
1 cup white sugar
2 large eggs
¼ teaspoon vanilla extract
1 tablespoon milk
1 cup chopped walnuts
⅓ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Coat a 9x4-inch loaf pan with cooking spray.
  • Whisk flour, salt, baking powder, and baking soda together in a bowl.
  • Beat butter and sugar with an electric mixer in a large bowl until smooth. Add mashed bananas and beat until combined. Beat eggs into the butter mixture one at a time, fully blending each egg before adding the next. Stir vanilla extract and milk into the mixture.
  • Stir chopped walnuts, chocolate chips, and flour mixture into banana mixture until just incorporated.
  • Pour batter into the prepared loaf pan. Tap pan on the counter to release any air pockets.
  • Bake in preheated oven for about 1 hour 10 minutes, or until an inserted toothpick comes out clean.
  • Let the bread rest in the pan for 15-20 minutes; remove from pan, slice, and serve.

Pinch of nutmeg
Pinch of cinnamon
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups mashed banana (about 3 large or 4 medium very ripe bananas)
6 tablespoons salted butter, melted and slightly cooled
¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Prepare an 8 1/2 x 4 1/2-inch loaf pan by greasing it and setting it aside. Preheat the oven to 350°F.
  • Sift or whisk flour, cinnamon, nutmeg, baking soda, and salt in a medium bowl. Set aside.
  • Whisk together the mashed banana, melted butter, sugar, egg, and vanilla extract in a separate large bowl.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts.
  • Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until your Pioneer Woman Banana Nut Bread is golden brown and the toothpick inserted in the center comes out clean. Do not overbake.

This is my great-grandmother's recipe for banana bread. I remember her copying it for me out of a very old Puyallup community or church cookbook. It has always been my favorite!

1 1/2 cups flour
1 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder (this is my addition)
3 bananas, mashed
1 teaspoon vanilla
1 egg
1/2 cup butter, melted

Steps:

  • Place the dry ingredients in a mixing bowl and stir.
  • In a seperate bowl, combine the remainng ingredients (let the butter cool a little first).
  • Mix altogether and bake at 350 degrees for approximately one hour until a toothpick inserted comes out clean.
  • I usually add about 1/2 cups of chopped walnuts when available.
