DOUBLE-CHOCOLATE S'MORES BANANA BREAD
To coarsely crush the graham crackers for this quick bread recipe, pulse them in a food processor or crush them in a resealable plastic bag using a rolling pin.

- Preheat oven to 350°F. Grease a 9x5-inch loaf pan. In a large bowl combine the first five ingredients (through salt). Make a well in the center of the flour mixture.
- In a medium bowl combine the next six ingredients (through vanilla). Add egg mixture all at once to the flour mixture. Stir just until moistened. Fold in 3/4 cup of the chocolate chips, 3/4 cup of the graham crackers, and 3/4 cup of the marshmallow bits. Transfer batter to prepared pan. In a small bowl combine the remaining 1/4 each chocolate chips, graham crackers, and marshmallow bits; sprinkle over batter.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9-inch cake pan with cooking spray.
- Combine brown sugar, half of the pudding mix, and cinnamon in a large resealable plastic bag. Seal and shake well until thoroughly combined and no lumps remain.
- Pour the remaining half of the pudding mix and 1/2 cup melted butter into a small bowl. Stir until combined.
- Dip each biscuit piece in the butter mixture and shake in the sugar mixture. Arrange half of the pieces into a layer on the bottom the prepared pan. Drop banana over the layer; sprinkle chocolate chips on top. Cover with a layer of of the remaining biscuit pieces.
- Bake in the preheated oven until golden brown and no longer doughy in the center, 18 to 22 minutes. Cool monkey bread in the pan for 10 minutes. Invert onto a serving plate.
- Beat confectioners' sugar, 2 tablespoons butter, and cream in a bowl until smooth. Drizzle over monkey bread.

- Spray bottom of loaf pan with non stick spray.
- Preheat oven to 350 degrees.
- In a large bowl, beat sugar, eggs and oil at medium speed until mixed. Beat in vanilla.
- In another bowl, stir flour, cocoa and baking soda together.
- Add flour mixture into the sugar mixture and beat just until combined. Stir in bananas and chocolate chips.
- Spoon batter into pan and bake 60-70 minutes or until toothpick comes out clean. Cool 10 minutes before removing from pan. After removing from the pan cool completely on wire rack.
