DOUBLE DECKER TACOS

The best tacos! A soft shell taco is layered with refried beans, then wrapped around a hard shell taco, which is filled with seasoned ground beef and topped with cheese, lettuce, tomato, onion, sour cream and fresh guacamole. You can top it with whatever you like, but I recommend loading it up! Also, if you don't eat meat, put melted cheese on the soft shell, and the refried beans in the hard.

1 pound ground beef
1 (1 ounce) packet taco seasoning mix, divided
1 (16 ounce) can refried beans
⅔ cup water
12 prepared crisp taco shells
2 avocados
1 tablespoon sour cream
1 fresh lime, juiced
salt and black pepper to taste
12 (7 inch) flour tortillas
2 cups shredded Cheddar cheese
1 cup shredded lettuce
1 large tomato, chopped
¼ red onion, chopped
½ cup sour cream

Steps:

  • Place the ground beef in a skillet over medium heat, and sprinkle about 3/4 of the packet of taco seasoning over the meat. Cook and stir the ground beef, breaking it up as it cooks, until the beef is browned and crumbly, 10 to 15 minutes. Drain the excess grease.
  • Mash the refried beans with the water in a small saucepan, and sprinkle with the rest of the seasoning packet. Heat the refried beans over low heat until simmering.
  • Preheat oven to 300 degrees F (150 degrees C). Place the crisp taco shells on a baking sheet, and warm them in the preheated oven for 3 to 5 minutes.
  • To make the guacamole, peel, seed, and mash the avocados in a bowl with 1 tablespoon of sour cream, the lime juice, and salt and pepper to taste, and set aside.
  • To build the tacos, spread each flour tortilla with about 2 tablespoons of heated refried beans. Wrap the tortilla gently around a crisp tortilla shell. Spread about 2 tablespoons of ground beef along the bottom of the crisp shell, and sprinkle about 2 tablespoons of shredded Cheddar cheese on top of the meat. Top the cheese with shredded lettuce, a sprinkle of chopped tomato and onion, and a dollop of sour cream and guacamole.

4 flour tortillas (6 inch)
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 tsp. ground cumin
1/2 tsp. chili powder
2 tsp. oil
1/2 cup chopped tomato
1 cup shredded iceberg lettuce
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Heat oven to 425°F.
  • Crumble 4 sheets of foil to form 4 (2-inch) balls. Fold tortillas in half; place one foil ball inside each folded tortilla to resemble a taco shell. Place on two baking sheets. Bake 7 to 8 min. or until golden brown. Cool on baking sheets 5 min. or until taco shells are crisp. Remove and discard foil.
  • Meanwhile, toss chicken with spices. Heat oil in medium skillet on medium-high heat. Add chicken; cook 5 to 6 min. or until chicken is done.
  • Spoon chicken mixture into taco shells; top with remaining ingredients.

½ onion, chopped
1 (1.25 ounce) package dry taco seasoning mix
¾ cup water
1 (14 ounce) can refried beans
4 ounces processed cheese food, cubed
10 (6 inch) flour tortillas, warmed
10 crisp taco shells, warmed

Steps:

  • Cook ground beef and onion in a skillet over medium heat until beef is completely browned, 7 to 10 minutes. Drain excess grease from the skillet.
  • While beef cooks, stir taco seasoning mix into water in a small saucepan; bring to a boil, reduce heat to low, and simmer for 10 minutes.
  • Stir taco seasoning mixture into ground beef and onion mixture; simmer on medium-low heat while preparing the remaining ingredients.
  • Stir refried beans and cubed process cheese food together in a separate small saucepan over medium-low heat; cook and stir until cheese food has melted completely into the beans, about 10 minutes.
  • Divide refried bean mixture between flour tortillas; spread into an even layer to cover one side completely.
  • Wrap tortillas around the crisp taco shells, using bean mixture to stick the tortillas to the shells.
  • Spoon seasoned ground beef into the taco shells.

1 teaspoon pepper
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon onion powder
5 chicken breasts
pepper, to taste

3 cups all-purpose flour
6 large eggs, beaten
3 cups breadcrumb
canola oil, for frying
1 cup lettuce, chopped
1 cup guacamole
1 cup pico de gallo
1 cup shredded cheddar cheese
1 tablespoon fresh cilantro, finely chopped
1 cup sour cream

Steps:

  • In a small bowl, combine salt, pepper, paprika, cumin, and onion powder.
  • Slice chicken breasts in half laterally to form 10 thin cutlets.
  • Place the chicken cutlets between 2 sheets of plastic wrap and pound out to ¼-inch (6-mm) thick.
  • Season the chicken with spice mix.
  • Place the flour, eggs, and bread crumbs in 3 separate shallow dishes. Dredge each cutlet in the flour, then dip in the egg, bread crumbs, back in the egg, and in the bread crumbs once more.
  • Place the chicken breasts around the border of a baking sheet, so half of each cutlet drapes over the side of the pan.
  • Place a smaller baking sheet wrapped with plastic wrap in the middle of the larger pan.
  • Fold the draped halves of the chicken over the smaller pan.
  • Freeze for 8 hours or overnight.
  • Heat the oil in a large pot until it reaches 375°F (190°C).
  • Fry the chicken taco shells, 2 at a time, for 5 minutes, or until golden brown.
  • Drain the chicken tacos on a wire rack set over a baking sheet.
  • Fill the chicken tacos with lettuce, guacamole, and pico de gallo, and cheddar cheese.
  • Garnish with cilantro and sour cream.

1/2 cup refried beans
2 whole pita breads
2 taco shells

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened., Meanwhile, spread 1/4 cup refried beans over one side of each pita. Place on a microwave-safe plate; heat, uncovered, on high for 15-20 seconds or until warmed. Immediately wrap each pita around a taco shell. Fill with beef mixture.
