CLASSIC VANILLA CAKE
The name says it all: This is the one to serve at birthdays and other celebrations that call for the perfect version of a traditional American layer cake. The oil in the batter keeps the cake moist, and the simple American buttercream is sweet and fluffy.

- For the cake: Preheat the oven to 350 degrees F. Butter the bottoms and sides of two 9-inch round cake pans; dust with flour, and tap out the excess.
- Whisk together the flour, baking powder and salt in a medium bowl; set aside.
- Beat the butter, sugar and oil in a large bowl with an electric mixer on medium-high speed until light in color and fluffy, about 5 minutes. Beat in the eggs, one at a time, and then the vanilla until combined.
- Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Divide the batter evenly between the prepared pans.
- Bake the cakes on the same oven rack until golden on top and the centers spring back to the touch, 35 to 40 minutes. Rotate the pans about halfway through if they seem to be browning unevenly. Let cool in the pans about 10 minutes, then turn out onto cooling racks and let cool completely.
- For the frosting: While the cakes cool, beat the butter and salt in a large bowl with an electric mixer on medium speed until smooth. Gradually beat in the confectioners' sugar. Once it's all been added, increase the speed to medium-high, and beat until white and fluffy. Add 2 tablespoons of the milk, and beat to incorporate. Beat in the remaining milk, one tablespoon at a time (the frosting will be spreadable but not runny).
- To assemble: Place 1 cake layer right-side up on a cake plate or stand, and spread with 1 cup of the frosting. Top with the second cake layer. Frost the top and sides of the cake with the remaining frosting.

- Method.
- Preheat oven to 180 deg Celsius.
- Grease and flour a 28 cm round cake tin.
- For the chocolate cake base: Beat egg yolks with vanilla for 5 mins and add sugar and butter and wisk till smooth. Add flour and cocoa pdr and mix with a wodden spatula. You may add all or part of the one cup milk depending on the consistancy of the batter. Pour into the tin and bake @ 180 deg c for bt 40 minutes.
- For the white cake: Beat the eggwhites for 5 mins add sugar, vinegar and vanilla and beat for 2 mins until soft peaks form. Pour over the white cake mix on top of the chocolate cake and again bake for another 30 mins until top is golden brown. leave to cool.
- For Topping Sauce: In a pan heat all ingredients together stirring contnuously for 5 minutes pour this hot sauce over the cake and serve.

GIANT DOUBLE DECKER TACO

- Fit a sheet pan with a wire rack.
- Heat the oil to 350 degrees F in a large braiser or cast-iron skillet.
- Using tongs, slip half of a tortilla in the hot oil to form a taco shell shape. Using a metal spatula with the other hand, keep half the tortilla submerged until golden. Turn the tortilla so that the fried part now sticks out of the oil, letting the bottom fry, while making sure to keep the tortilla open about 2 inches wide. (This creates the necessary space to stuff it!) Then gently turn the tortilla and repeat the process so that the remaining side fries to a golden brown while the rest stays out of the oil. Let the taco shell drain on the lined sheet pan. Fry another tortilla in this manner; reserve the other two tortillas.
- Preheat the broiler.
- Place one unfried tortilla in a pan and top it edge to edge with cheese. Lightly broil until the cheese is just melted, but the tortilla isn't toasted. While still hot, "stick" the cheesy, non-crispy tortilla to the outside of a fried tortilla shell. Repeat with the remaining tortilla, cheese and fried shell.
- Now build! Fill the cavity of the taco with some warm Taco Meat, followed by some lettuce, a drizzle of sour cream, tomatoes, jalapeños and cilantro.
- Serve with your favorite taco bib.
- Heat a pan over medium heat. Add the beef and chorizo and brown, breaking the meat up constantly into smaller little bits, until no longer pink, 6 to 8 minutes. (If there is a lot of rendered fat, remove all but 1 tablespoon of the fat.)
- Add the onions, chipotle powder and cumin. Cook until the onions are soft, another 8 minutes. Add the garlic and cook for just another 30 seconds. Add the tomato puree and simmer, stirring frequently, for another 10 minutes. You want this taco meat to be pretty "tight" and dehydrated, not soupy or loose! Season to taste with salt and pepper.

- Preheat oven to slow.
- Grease two deep 20cm round cake pans, line base and sides with baking paper.
- Combine butter, white chocolate, sugar and milk in medium saucepan, stir over heat, without boiling, until smooth, transfer mixture to large bowl, cool for 15 minutes.
- Whisk sifted flours into white chocolate mixture.
- Whisk in essence and egg.
- Pour half of mixture into one prepared pan.
- Whisk sifted cocoa into remaining mixture.
- Pour into other prepared pan.
- Bake cakes in slow oven about 50 minutes.
- Stand cakes 5 minutes, turn top-side, up onto wire rack to cool.
- Combine milk chocolate and cream in medium saucepan, stir over low heat until smooth.
- Transfer to medium bowl, cover and put in fridge, stirring occasionally, until is of spreading consistency.
- Reserve 1 cup of chocolate mixture for spreading over cake.
- Split each cooled cake in half.
- Centre one layer on serving plate, spread 1/2 cup of remaining milk chocolate mixture, repeat layering, alternating colours.
- Cover top and sides of cake with reserved chocolate mixture.

- In a small bowl, combine butter and cocoa until smooth. In a large bowl, beat eggs and sugar. Stir in chocolate mixture.
