3 lbs beef stew meat
3 teaspoons salt
1 teaspoon black pepper
1/4 cup all-purpose flour
3 tablespoons shortening
2 cups beef stock or 2 cups bouillon
2 cups Dr. Pepper cola
2 cups sliced carrots
1 1/2 cups onions, cut into chunks
1 cup celery, sliced
1 cup peas (fresh or frozen)

Steps:

  • Sprinkle meat with the salt and pepper and dust with the flour.
  • In a large stew kettle, brown meat in the 3 tablespoons shortening until very brown.
  • Add beef stock or bouillon, Dr. Pepper, carrots, onions and celery.
  • Cook at a low temperature until meat is very tender, about 2 hours.
  • Add frozen peas and cook at least 10 minutes longer.

This makes for some of the best meat I've ever had. I know a guy who has a secret Dr. Pepper marinade, but he won't give us the ingredients. After years of slowly putting it together, this is what I've come to conclude.

1 liter Dr. Pepper cola (not diet!)
1 cup soy sauce
1 cup Worcestershire sauce
5 tablespoons lime juice
1 tablespoon peppercorn
1 tablespoon coarse salt
4 garlic cloves, crushed

Steps:

  • Add all ingredients in a sealable container and mix well.
  • Can be kept for up to a week or two.

1 pound lean ground beef (90% lean)
3 cans (14-1/2 ounces each) diced tomatoes, undrained
4 large green peppers, coarsely chopped
1 large onion, chopped
2 cans (4 ounces each) chopped green chiles
3 teaspoons garlic powder
1 teaspoon pepper
1/4 teaspoon salt
2 cups uncooked instant rice
Hot pepper sauce, optional

Steps:

  • In a 6-qt. stockpot, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Add tomatoes, green peppers, onion, chilies and seasonings; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until vegetables are tender., Prepare rice according to package directions. Serve with stew and, if desired, pepper sauce.
