1/4 cup quinoa, rinsed
2 cups old-fashioned oats
10 Medjool dates, pitted
3 tablespoons coconut oil
2/3 cup almond butter
3 tablespoons whey protein powder
2 tablespoons unsweetened coconut flakes
1 tablespoon chia seeds
1/2 teaspoon vanilla extract

Steps:

  • Line an 8-in. square baking pan with parchment, letting ends extend up sides. Prepare quinoa according to package directions. Transfer to a large bowl. Set aside and allow to cool completely. , In a food processor, combine dates, coconut oil, almond butter, protein powder and vanilla. Cover and pulse until blended. Add coconut and chia seeds. Pulse until combined. Add oats and cooked quinoa. Pulse until combined., Press firmly into prepared pan. Cover and refrigerate for at least 1 hour or until set. Lifting with parchment, remove from pan. Using a serrated knife, cut into bars. Store in the refrigerator.

No fructose corn syrup. Can make an infinite combination of desired flavors...and better than store-bought, but be aware that these will be a tad softer. The last ingredient should read "white or chocolate chips".

2 1/2 cups rolled oats
1/2 cup wheat germ
1/4 cup flax seed
1/4 cup sesame seeds
1 cup almonds, sliced (or other chopped nuts like cashews, walnuts, peanuts, macadamias or pecans)
1/2 cup shredded coconut
1 teaspoon sea salt or 1 teaspoon kosher salt
1 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup honey
4 tablespoons butter
1/4 cup brown sugar
1 cup dried cranberries (or other chopped dried fruit like raisins, pineapple, apricots, cherries, papaya, prunes, white or c)

Steps:

  • Preheat the oven to 325. Line a rimmed baking sheet with parchment paper or foil. Combine the oats, wheat germ, flax seeds, sesame seeds and almonds; spread out evenly on the rimmed baking sheet and toast for approximately 10 to 15 minutes until golden, stirring occasionally and watching carefully so as not to burn.
  • In the meantime, in a large bowl combine salt, coconut, cinnamon and dried cranberries; set aside.
  • In a large measuring cup place the vanilla, honey, butter and brown sugar. Microwave approximately 2 minutes. Mixture will foam and bubble. Stir to completely dissolve brown sugar.
  • When oat mixture is done toasting, transfer to the same bowl with coconut mixture and stir to evenly combine. Add the honey mixture and stir to incorporate.
  • Line a 9" x 13" baking pan with waxed paper. Spread the mixture, using the back of a wooden spoon, pressing to create a smooth, even surface. Place another piece of waxed paper over the top, pressing down to evenly compact the mixture. Compacting is important so the bars won't fall apart when cut. (Suggestion: place one pan of same size within the other and press to even out mixture.).
  • Refrigerate and completely cool the mixture about 2 hours to assure a clean cut. Firmly press down with a large knife to cut into bars. Do not saw. Wrap bars in waxed paper and store in refrigerator or freezer.

This was given to me by a friend, I was really surprised at how much it really helps when I feel tired. I keep mine in the freezer then pull a couple out when I need a pick-me-up and they are ready for me to eat. You can substitute almond butter for peanut butter, if desired.

1 cup (5 ounces) pitted dates
3 tablespoons honey
Vegetable oil cooking spray
1 1/2 cups old-fashioned oats, finely ground; or 1 cup quinoa flakes
1 cup (4 1/2 ounces) pecans, toasted, half finely ground and half coarsely chopped
1/2 cup unsalted macadamia nuts, toasted, half finely ground and half coarsely chopped
1/3 cup dried papaya, cut into 1/2-inch pieces
1/3 cup (2 ounces) dried cherries, chopped
1/3 cup (1 1/2 ounces) dried blueberries
2 tablespoons oat bran
3 tablespoons ground flaxseed
2 tablespoons wheat germ
1/2 teaspoon coarse salt
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees. Place dates in a small saucepan, cover with cold water, and bring to a simmer. Drain reserving cooking water. Puree dates in a food processor with honey and 1/4 cup reserved cooking water until smooth.
  • Coat an 8-inch square baking pan with cooking spray and line with parchment paper leaving a 2-inch overhang on all sides. Mix oats or quinoa flakes, nuts, papaya, cherries, blueberries, bran, flaxseed, wheat germ, salt, and cinnamon in a large bowl. Mix in date puree. The mixture should be moist enough to hold together. If necessary, add up to 1/2 cup more cooking water. Press mixture into pan.
  • Bake until center is firm and edges are golden, about 20 to 25 minutes. Let cool in pan on a wire rack. Cut into 16 bars.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x14 inch ovenproof baking dish.
  • Mix the rolled oats, brown sugar, wheat germ, cinnamon, and flour together in a large bowl. In a separate bowl, whisk together the eggs, honey, canola oil, vanilla, and salt until evenly blended., and stir into the oat mixture. Stir in the flax seeds, sesame seeds, sunflower seeds, and chocolate chips. Use your hands to mix the ingredients, and press the mixture into the prepared pan.
  • Bake in preheated oven until the edges are golden brown, 20 to 25 minutes. Cool completely in the baking dish before cutting into 2 inch bars.

  • Lightly toast walnuts, almonds, pistachios, cashews and flax seeds separately without oil. Transfer it onto a plate and let it cool.
  • In a food processor or a mixer, add dates + apricots + nuts and seeds and process till all the nuts are coarsely grounds and everything comes together. (If you take the mixture in your hands and press, it should hold its shape. If not, grind again or add some more dates, apricot or raisins.)
