CHARRED BUTTERED PLUMS WITH CHEESE



Charred Buttered Plums with Cheese image

Plums are summer's all-stars. You should eat and cook with them only when they are peaking, plentiful, and widely available in many varieties.

Number Of Ingredients 3

3 tablespoons unsalted butter
6 plums, pitted, halved
8 ounces fresh goat cheese

Steps:

  • Heat a medium skillet, preferably cast iron, over medium-high. Add butter and swirl to coat skillet. Arrange plums, cut side down, in skillet and cook, shaking skillet occasionally, until cut sides are nicely charred, about 5 minutes. Place, cut side up, on a platter and let cool slightly.
  • Crumble cheese around plums; season everything generously with salt and pepper. Drizzle with oil.

1/2 pound dried plums (pitted) or jarred dried plum puree
1 cup water
1/2 cup sugar
5 egg whites
1/2 teaspoon lemon juice
Serving suggestion: whipped cream

Steps:

  • Preheat oven to 275 degrees F.
  • Place the dried plums in a saucepan with 1 cup water and cook at a simmer until soft, about 30 minutes. Push the mixture through a strainer to puree. Add the sugar to the puree and cook 5 more minutes or until it is like marmalade. Let cool slightly. Beat the egg whites until stiff peaks, then gradually mix in the puree, and lemon juice.
  • Pour into a buttered casserole or souffle dish and bake for 30 to 45 minutes. Serve warm or cold with whipped cream.

No one will believe that this cake is made with dried plums. It came from my grandmother and is easy to make and delicious.

2 cups white sugar
½ cup canola oil
3 eggs
2 cups all-purpose flour
1 cup pitted prunes, chopped
1 teaspoon ground allspice
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
1 cup chopped pecans
1 teaspoon vanilla extract
½ cup buttermilk
1 cup white sugar
¼ cup butter
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease and flour a 11x9-inch pan.
  • Blend sugar and canola oil together in a mixing bowl using an electric mixer. Add eggs, flour, prunes, allspice, baking soda, and salt; mix well. Add buttermilk, pecans, and vanilla extract and combine. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.
  • While cake is baking, mix buttermilk, sugar, butter, and vanilla extract together in a saucepan over medium heat. Cook until it begins to thicken, about 5 minutes. Pour glaze over cake when it comes out of the oven.
  • Let glazed cake cool completely, about 30 minutes. Cut into squares.
