Treat your guests with these popcorn balls that are made using Dulce de Leche Cheerios® cereal - perfect for snacks.

6 cups popped popcorn
2 cups Dulce de Leche Cheerios™ cereal
1 cup large marshmallows
4 tablespoons butter or margarine
3/4 cup dark chocolate chips

Steps:

  • In large bowl, mix popcorn and cereal; set aside. In 1-quart saucepan, melt marshmallows and 3 tablespoons of the butter over low heat, stirring occasionally, until marshmallows are melted and mixture is smooth. Pour over popcorn mixture; stir until well blended. Spray hands with cooking spray. Shape popcorn mixture into 20 (2-inch) balls; place on ungreased cookie sheet.
  • In small microwavable bowl, microwave remaining butter and the chocolate chips uncovered on High about 30 seconds, stirring every 15 seconds, until melted and smooth; cool 2 minutes. In 1-pint resealable food-storage plastic bag, carefully spoon melted chocolate; seal bag. Cut small opening diagonally across bottom corner of bag; pipe chocolate over tops and sides of popcorn balls. Let stand 5 minutes or until chocolate sets. Wrap individually in plastic wrap, or in food-storage plastic bags; tie with ribbon or raffia.

I found this recipe after Christmas while starting on collecting recipes for next year. It comes from the Jolly Time Popcorn folks. I wanted to try them the night I found it, but didn't have the butterscotch pudding. So, when I do get around to making them, I'll make any changes to the recipe that I think it needs. If you try it before me, please submit a review and let me know how they turned out. I'm anxious to try them!

1 (3 ounce) bag microwave popcorn, popped
2/3 cup fat-free sweetened condensed milk
1/2 cup packed light brown sugar
1 (3/4 ounce) butterfinger candy bar, crumbled (fun size)
1/4 cup instant butterscotch pudding mix
1/3 cup low-fat graham cracker crumbs (optional)

Steps:

  • Place popped popcorn into a very large bowl, removing any unpopped kernels.
  • In a medium microwave-safe bowl, combine sweetened condensed milk, brown sugar, crumbled candy bar and pudding mix; stir.
  • Microwave on high 1-1/2 minutes or until boiling; stir.
  • Cook on high 30 seconds, stir (mixture should be thickened).
  • Pour over popped popcorn, mix until well coated.
  • Form a ball with your hands that have been sprayed with non-stick cooking spray.
  • Roll in graham cracker crumbs, if desired.
  • Place on parchment paper or waxed paper; let stand at least 1 hour (they become less sticky as they stand).

Cooking spray
10 cups lightly salted popped popcorn
1 cup salted mini pretzels, lightly crushed
1 1/2 cups peanut butter chips
1 1/2 cups milk chocolate chips
4 tablespoons unsalted butter
1 1/4 cups confectioners' sugar
1/3 cup light corn syrup
1 cup mini marshmallows
1/2 cup white chocolate chips
3/4 cup crushed potato chips

Steps:

  • Light coat a 12-cup muffin tin with cooking spray.
  • Combine the popcorn, pretzel pieces, 1 cup of the peanut butter chips and 1 cup of the milk chocolate chips in a large bowl. Toss to distribute evenly.
  • Melt the butter, confectioners' sugar, corn syrup and marshmallows in a large microwave-safe bowl in 15 second intervals, stirring between each interval, until completely melted.
  • Pour the melted marshmallow mixture over the popcorn mixture and stir until evenly coated. Quickly, but gently form twelve 2 1/2-to-3-inch-diameter balls with either your hands or a large cookie scoop lightly coated with cooking spray. Pretend you're making snowballs, but don't pack them too hard. Place each of them in a well of the prepared muffin tin so they hold their shape as they cool.
  • When the popcorns balls are cool, melt the remaining 1/2 cup peanut butter chips, the remaining 1/2 cup milk chocolate chips and the white chocolate chips in each of 3 small microwave-safe bowls in 15 second intervals, stirring occasionally. Transfer the melted chips to each of 3 small piping bags or resealable bags. Snip the tips and drizzle over the popcorn balls. Top evenly with the crushed potato chips and let set, about 30 minutes, before serving.

Steps:

  • Melt the candy corn in the heavy cream in a small saucepan, stirring as needed, over medium-low heat. Put the popped popcorn in a large bowl. Pour the melted candy corn mixture over the popcorn and stir to coat.
  • Spray your hands with nonstick cooking spray and roll the popcorn into baseball-sized balls, pressing the popcorn together firmly so it sticks and stays together. Allow the popcorn balls to chill on a parchment-lined baking sheet in the refrigerator for about 5 minutes to firm up. Enjoy!

1/3 cup egg yolk
1 tablespoon butter

Steps:

  • Cook 1st four ingredients till thick in a pan, stirring constantly.
  • Cook till it becomes heavy to stir and it pulls away from the sides of the pan.
  • Add in the butter and extract till blended.
  • Turn off heat. Cool till able enough to handle.
  • Using a spoon, scrape and roll into balls.
  • Roll on white granulated sugar.

2 sticks unsalted butter, softened
⅔ cup white sugar
1 egg
1 tablespoon vanilla extract
2 ½ cups all-purpose flour
½ teaspoon salt
1 (12.5 fl oz) can dulce de leche
1 cup shredded coconut
¾ cup pecans, toasted and chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking pan thoroughly.
  • Blend butter and sugar with an electric mixer until combined and creamy. Add egg and vanilla extract; beat until incorporated. Scrape down the sides of the bowl and beat again. Combine flour and salt. Add to the butter mixture and mix until a ball of dough forms.
  • Press 2/3 of the dough into the bottom of the baking pan.
  • Bake in the preheated oven until set and light brown, about 20 minutes.
  • Pour dulce de leche over the crust, trying to keep the edges mostly bare.
  • Add coconut and pecans to the remaining dough and mix until incorporated. Crumble mixture over the dulce de leche, pressing it lightly over the top.
  • Bake until lightly browned, about 15 minutes. Let cool completely before cutting into bars.
