4 cups corn kernels, fresh or 4 cups corn kernels, frozen
3 slices thick-cut bacon, cut in 1/4 inch dice
1 medium yellow onion, minced
2 celery ribs, minced
5 cups chicken broth or 5 cups vegetable broth
1 bay leaf
1 sprig fresh thyme
2 cups yukon gold potatoes, peeled and diced
1 1/2 cups half-and-half
1 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • In a large saucepan, cook the bacon over medium heat until crisp (5-10 minutes) then drain on paper towels.
  • Add the onion and celery to the fat and cook until they are soft for 10 minutes.
  • Add stock, bay leaf, potatoes and thyme to the saucepan and boil over high heat. Reduce and let simmer for 20 minutes until potatoes are tender.
  • Cover and turn off heat. Leave on stove for 20 minutes then discard the bay leaf and thyme sprig. Add the bacon, corn and half-and half. (You can remove 2 cups of the chowder and puree it in a blender and then add that back to the chowder for a thicker consistency).
  • Season with salt and pepper.

1 medium sweet onion, chopped
1 medium green bell pepper, chopped
1 medium jalapeno pepper, seeded and chopped
2 cups vegetable broth
3 medium Yukon Gold potatoes, cubed
2 teaspoons Dijon mustard
1 teaspoon dried basil
½ teaspoon hot smoked paprika
½ teaspoon crushed red pepper flakes
3 cups canned whole kernel corn, drained
4 medium green onions, chopped
1 ½ cups soy milk, divided
3 tablespoons blanched almond flour
1 teaspoon salt
1 teaspoon ground turmeric

Steps:

  • Cook onion, bell pepper, and jalapeno in 2 tablespoons vegetable broth in a large saucepan over medium heat until tender, 5 to 7 minutes. Add remaining broth and potatoes; bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes. Add mustard, basil, paprika, and pepper flakes; mix well. Add corn, green onions, and all but 3 to 4 tablespoons soy milk; bring to a boil.
  • Mix remaining soy milk with almond flour in a small bowl until smooth. Stir into the chowder with salt and turmeric; return to a boil. Cook and stir until soup is thickened and bubbly, about 2 more minutes.

1/4 cup pure maple syrup (NOT imitation syrup! no, no!)
3 ripe bartlett pears (not too ripe) or 3 ripe Anjou pears, peeled, cored, and cut into 8 wedges each (not too ripe)
sea salt
fresh ground pepper
2 tablespoons aged balsamic vinegar
1/2 teaspoon Dijon mustard
1/4 cup extra virgin olive oil or 1/4 cup walnut oil
3 ounces baby arugula
3 ounces loose leaf lettuce
1/2 cup crumbled Stilton cheese (Roquefort or other blue cheese ok)

Steps:

  • Position a rack in the lower third of the oven, and preheat the oven to 475 degrees F. Line a baking sheet with parchment or aluminum foil and set aside.
  • Place the maple syrup in a bowl and add the pear wedges, stirring gently to coat all surfaces.
  • Remove the pears from the syrup with tongs and transfer to the prepared baking tray. *Reserve* any maple syrup still in the bowl.
  • Season the pears lightly with salt and pepper, and roast until the fruit is browned on the bottom, 10 to 15 minutes.
  • Turn the slices with a spatula or tongs, and continue cooking until the pears are tender and golden brown, 5 to 7 minutes. Remove the tray from the oven and let the pears cool slightly.
  • Make a vinaigrette by combining the vinegar, mustard, and olive oil in a small glass jar. Shake vigorously to combine.
  • Season to taste with salt and pepper, then add a teaspoon of the reserved maple syrup to the dressing, or more to taste.
  • Just before serving, place 2 tablespoons of the vinaigrette in a large bowl. Add the arugula and loose leaf lettuce; toss to coat the leaves. Add more dressing sparingly, if desired (leftover dressing can be refrigerated for up to 4 weeks). Arrange the greens on a platter, and add the blue cheese and roasted pears. Serve immediately.
