CHARQUICAN - CHILEAN BEEF STEW
Steps:
- Toss the cubes of beef with the flour and season with salt and pepper.
- Melt the 2 tablespoons of butter in a heavy skillet over medium-high heat. Sauté the cubes of beef until browned.
- Add the beef stock to the skillet and bring to a simmer over low heat.
- Chop the beef jerky into small pieces and add to the beef stock and beef cubes. Simmer gently for about 5 minutes.
- Transfer beef and beef stock to a large stockpot or slow cooker .
- Do not clean skillet. Add 2 tablespoons vegetable oil, the chopped onion and garlic, and the aji chile pepper paste to the skillet. Sauté until the onion and garlic are soft and fragrant.
- Add the chopped squash, carrots, and potatoes and sauté for 2-3 minutes.
- Add sautéed vegetables to the stockpot or crockpot with the beef. Simmer over low heat until beef and beef jerky are tender, about an hour and a half on the stove or about 6 hours in the crockpot. If simmering the stew on the stove, you may need to add more liquid (beef stock or water) from time to time, but stew should finish up very thick, without much broth.
- Add the lima beans and corn and simmer for 10-15 minutes more.
- Season with salt and pepper to taste, and serve over rice.

Steps:
- Brown pork, chicken, or beef in oil. Sprinkle flour over the meat and add chopped garlic according to your taste. Add chicken bouillon, crushed tomatoes, potatoes, and Green Chile. Add salt to taste. Bring to a slow boil and simmer until meat and potatoes are tender, about 45 minutes. The secret is to add a teaspoon of kitchen bouquet at almost the end of cooking, which brings out the flavor even more! You can sprinkle shredded cheese on top if you like and serve with warm tortillas or crusty bread.

CHARQUICAN - CHILEAN BEEF STEW
Charquicán is a Chilean dish, a beef stew that is slow-cooked with squash and potatoes. It was traditionally prepared with dried beef (charqui). This version has both stewing beef and some commercial beef jerky (or make your own), which adds a nice smoky flavor and makes the stew seem more like chili (Chilean chili!) My kids love beef jerky and they love this stew. The squash falls apart as it cooks and helps to thicken the broth. You can add any vegetables you have on hand - beans and corn are common. You can make this stew in a crockpot or simmer it on the stove. In Chile, charquicán is often served topped with a fried egg.

JIM HARRISON'S CARIBBEAN STEW
Jim Harrison, the poet and epicure, hunter and fisherman, novelist, essayist and enthusiastic cook, published a version of this recipe in the literary magazine Smoke Signals in 1981. I adapted it more than three decades later, after Harrison's death in 2016. The key ingredients: a lot of tomato paste and a good, floral hot sauce, ideally made with Scotch bonnet peppers, which combine in marvelous ways. Parboiling the ribs allows the recipe to come together relatively quickly, and the cooking otherwise is totally serial: one step after another until you slide the pot into the oven and allow the heat to do its work. Substitute different meats, or fewer, if you like, depending on availability.

Steps:
- Place spareribs in a pot, and cover with water. Place pot over high heat, and bring to a boil. Lower heat slightly, and cook, covered, for 15 or 20 minutes, then remove ribs to a large bowl and discard the water.
- While the ribs cook, pour the oil into a Dutch oven set over high heat, and swirl it around. Season the chicken thighs with salt and pepper, and when the oil begins to shimmer and is about to smoke, add them to the pan, skin-side down. Brown the chicken aggressively, about 5 to 7 minutes per side, then add the chicken to the bowl with the ribs. Repeat with the sausages, browning them on all sides for approximately 5 to 7 minutes, then add to the bowl with the chicken and the ribs. Cook the onions and garlic in the fat remaining in the Dutch oven, stirring occasionally until they soften and begin to brown, approximately 5 to 7 minutes.
- Heat oven to 300. Add the tomato paste, vinegar, lemon juice, hot-pepper sauce, chicken stock, sugar, Worcestershire sauce, chile powder and paprika to the onions and garlic in the Dutch oven, then stir to combine, and allow to cook for 1 to 2 minutes. Add the meats to the Dutch oven, stirring and tossing them so that they are well covered with the sauce, then cover the pot, and place in the oven to cook, undisturbed, for approximately 90 minutes, or until the meats are tender and, in the case of the chicken and the ribs, pulling from the bone.

CARIBBEAN CHICKEN STEW
I lived with a West Indian family for awhile and enjoyed watching them cook. I lightened up this recipe by leaving out the oil and sugar, removing the skin from the chicken and using chicken sausage. It's just as good. -Joanne Iovino, Kings Park, New York

- Empanadas de Pino (Chilean Beef Empanadas) I love empanadas. A warm, flavorful beef filling, surrounded by a buttery pastry crust… Who wouldn’t love that?!
- Chilean Estofado Beef Stew. Despite how chunky, hearty, and complex this looks, this dish only takes about 40 minutes to pull together. Want to save this recipe?
- Choripan. These meaty sandwiches take their name from their two main ingredients – chorizo (sausage) and pan (bread) – but they have a lot more going for them than just that.
- Humitas. This vegan-friendly appetizer is a great way to start any large meal. Admittedly, they take quite a bit of prep time, but surprisingly, that’s one of the things I love about them.
- Mote con Huesillos. If you’re a fan of fruity, sugary drinks, you’ll love mote con huesillos. It’s the perfect drink for a hot summer day, and residents of Chile drink it much like we drink lemonade here in the United States.
- Completos (Chilean Hot Dogs) Maybe it’s all the colorful toppings, but Chilean hot dogs are so much prettier than those sold in American baseball stadiums.
- Country Chilean Bread. I was skeptical about this bread at first. It looked so flat! Luckily, I was pleasantly surprised at how yummy it turned out to be.
- Chilean Sea Bass. Even people who think they’ve never heard of a single Chilean meal know about Chilean sea bass. It’s relatively famous worldwide and deservedly so.
- Marraqueta. Marraqueta, which literally means “French bread,” are tasty, double rolls that are soft and fluffy on the inside and slightly crispy on the outside.
- Chilean Chorrillana Fries. When I look at these fries, all I see is heartburn waiting to happen, but despite that, they still look so tempting that I want to dive in and devour them.
