2-ingredient salsa crock pot chicken is an easy and delicious slow-cooker dinner that gives busy families time to share a meal together.

3 pounds chicken thighs (boneless, skinless)
1 (16-ounce) jar peach salsa (or homemade, any flavor)
Optional: salt and pepper (to taste)

Steps:

  • Gather the ingredients.
  • Pat the chicken thighs dry with a paper towel.
  • Place one layer of chicken thighs in a 3- to 4-quart crock pot and optionally season them with salt and pepper. (If your salsa is exceptionally salty, this shouldn't be necessary.)
  • Pour some of the salsa over the chicken and repeat layering chicken and salsa until you end with salsa on top. Or you can cube the chicken, mix it with the salsa and place it in the crock pot.
  • Cover and cook on low for 6 to 8 hours or until the chicken is tender and thoroughly cooked to 165 F. Serve over rice and garnished with sliced scallion, if desired.

1 Pound Boneless Skinless Chicken Breasts (Or Thighs)
2 Cups Salsa (Use Your Favorite Brand)

Steps:

  • Place chicken breasts in the bottom of a 4 to 6 quart slow cooker and then dump the salsa on top.
  • Cover and cook on HIGH for 3 to 4 hours or until chicken is cooked through.
  • Remove chicken from slow cooker and either eat whole or shred or dice chicken to use in your favorite Mexican inspired meals such as burritos, tacos, nachos, burrito bowls, etc.

32 ounces salsa (I use 2- 16 oz. jars)
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can black beans, drained
flour tortilla
sour cream
guacamole
lettuce
tomatoes
cheese
salsa

Steps:

  • Place first four ingredients in crock pot.
  • Cook on low 6-8 hours.
  • 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
  • To serve, use chicken mixture as filling inside tortillas.
  • Add desired condiments.
