- PIZZA HUT PIZZA DOUGH (You may use all-purpose flour only for this recipe) Bread machine: Add ingredients to machine bread pan in order given or as per manufacturer's instructions. Set to 'dough' mode. Food processor: Place water, sugar, salt and olive oil in bowl of food processor and pulse to dissolve sugar and salt. Add yeast, bread flour, all purpose flour & other dry ingredients. Process until a soft ball forms. Remove from machine and allow to rest, covered with a tea towel, about 45 minutes. Dough hook: Place water, sugar, salt and olive oil in bowl of mixer and dissolve sugar and salt. Stir in yeast, bread flour, all purpose flour, other dry ingredients and knead with dough hook to form a soft, but not-too sticky dough (about 8 minutes). Remove from machine and allow to rest, covered with a tea towel about 45 minutes. By Hand: In this case, use only all-purpose flour. Place water, sugar, salt and olive oil in bowl and dissolve sugar and salt. Stir in yeast, all purpose flour, & other dry ingredients and knead to form a soft, but not-too sticky dough (about 8-l0 minutes). Allow to rest, covered with a tea towel about 45 minutes. (*) For a breadier pizza dough - depending on taste and recipe requirements, you can add an additional 1/4 tsp. yeast.

- For the dough: Combine the yeast, sugar, salt, and dry milk in a 2-quart size mixing bowl. Add the water and stir to mix. Let the mixture sit for 2 minutes or until the yeast starts to bubble. Add the oil to the dough mixture and stir to combine. Add the flour in one cup increments, stirring after each addition, until a dough forms and the flour is all combined. Turn the dough out onto a flat, lightly floured surface and knead for about 10 minutes. Divide the dough into three equal balls. Place about 3 ounces of oil in the bottom of each 9-inch cake pan or cast iron skillet. Tilt the pans to spread the oil evenly. Using a rolling pin, roll out each ball of dough to a 9-inch circle and place in the prepared pans. Lightly coat each dough disk with cooking spray or oil and cover with plastic wrap. Place in a warm, draft-free location and let rise for 1 to 1 1/2 hours or until puffy. Meanwhile, prepare the sauce by combining all the ingredients until blended. Let sit at room temperature for at least one hour. The sauce can be made ahead of time and kept in the refrigerator. Bring to room temperature before using. Preheat the oven to 475 degrees F. For each 9-inch pizza: Spoon 1/3 cup of the sauce on the dough and spread to within 1 inch of the edges. Sprinkle with 1 1/2 ounces of shredded mozzarella cheese. Place toppings of choice in the following order: thin meats like pepperoni or canadian bacon, vegetables, ground or cubed meats, additional mozzarella cheese. Place the pizzas in the oven and cook until the outer crust is brown and the cheese is bubbly in the center (11-15 minutes, depending on how many toppings you use). Remove from the oven. Let cool for 2-3 minutes then remove from the pans to a cutting board and cut into wedges using a pizza cutter.

- Preheat oven to 450 degrees.
- In a large bowl, or bowl of stand mixer, stir the yeast and sugar into the warm water until completely dissolved. Allow mixture to sit and proof for 10 minutes, until foamy.
- Add the salt and olive oil to the yeast mixture. Begin adding the flour 1/2 cup at a time, stirring (with a large spoon or hook attachment if using stand mixer) after each addition.
- When the dough has pulled away from the sides of the bowl and is no longer sticky, knead the dough for 3 minutes in the bowl or on a well floured surface. You can also knead with the dough hook attachment on medium speed for 3 minutes.
- Roll or pat the dough out on a well floured surface, into a large circle about 1/4 - 1/2 inch thick, and place on oiled pizza pan.
- Bake crust for 5 minutes. Remove crust from oven, and top as desired. Bake for an additional 10 minutes.
- Optional: In a small bowl, microwave the butter and garlic. Remove pizza from oven and brush with the garlic butter, place pizza under broiler for 1-2 minutes, until crust is golden brown.

EASY 30-MINUTE PIZZA HUT CLONE DOUGH
This came from my copycat e-cookbook that I altered by doing half white and half wheat flours; it originally called for 3 cups all-purpose flour. The trick here isn't so much in the ingredients as it's in the technique in the last few steps! I'm thinking that this dough would do wonderful with some nutritional yeast added for a cheesy flavor...who says you can't health-ify fast food! :D This yields one 12" crust or one 9 x 13 sicilian pie if making for a group/family, or two to three 8-9" individual crusts if making for just yourself. NOTE: the "30-minute" title is just for prepping the dough itself, not baking the actual pizza as oven strengths vary but the science in the yeast is all the same.

- Cover with a dish towel loosely, and let rise for about 30 minutes. In the final countdown, preheat the oven to 400°F.
- Read the description for the right pan size to use-- then grease it with cooking spray and sprinkle the bottom lightly with cornmeal.
- Depending on how thick the crust is laid out in the pan, bake for 5-8 minutes or until lightly browned. Remove the pan from the oven then lower the temperature to 350°F.
- Add your desired sauce, cheese, toppings, and seasonings and bake for another 10-15 minutes, then slice, serve, and enjoy.

Super simple and delish, and open for variation...this one I change my normal methodology of making pizza dough. I used fast-rise active dry yeast so I only had to wait about 20 minutes.

- In a large bowl, place the warm water in first then the honey.
- Sprinkle the yeast on top, agitate the bowl slightly if you have to so the yeast gets immersed in the water. Wait 10-15 minutes or until foamy.
- Add the oil and salt.
- Blend in the flours and knead until elasticy, about 5 minutes or so.

- Preheat oven to 425°F.
- Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl.
- Add very warm water and oil; mix until well blended, about 1 minute.
- Gradually add enough remaining flour to make a soft dough. (Dough should form a ball and will be slightly sticky.)

I have looked forever for a great pizza crust recipe. This one is the best of the best. The whole trick to making a good pizza crust is to pre bake the crust only for 5 minutes at 400*. Seems to make all the difference in the taste.

- 1. I have only used my bread machine but you can mix this by hand too. Add all ingredients to bread machine(doesn't matter what order). Set bread machine on DOUGH setting. After bread machine is done mixing dough, dump dough onto lightly floured board or your counter and cut dough in half. Each half will make a large 12 inch pizza. Spray your pizza pan with Pam and sprinkle on 1 Tbsp. yellow cornmeal(this keeps pizza from sticking to pan). Spread one portion of the dough onto the pizza pan and flatten out with your hands to cover the whole pan. Prebake the dough at 400* for ONLY 5 minutes. Remove from the oven and add pizza sauce and toppings of your choice and at least two kinds of shredded cheese. Place in 400* oven and bake til bubbly and lightly browned. ENJOY ALWAYS USE ONLY BREAD FLOUR - IT MAKES ALL THE DIFFERENCE
