Spicy Collard Greens with Tomato, Garlic, and Onions image

Cooking collard greens in a smoky pork broth adds richness and depth. This recipe, a favorite of Alice Waters, comes from Atlanta chef Scott Peacock.

8 cups Smoked Pork Stock
3 pounds collard greens, stems and ribs removed
1/2 cup extra-virgin olive oil
3 medium onions, coarsely chopped (about 2 cups)
1 tablespoon finely chopped garlic
1/2 teaspoon crushed red pepper flakes
Coarse salt and freshly ground black pepper
1 (28-ounce) can whole peeled tomatoes, drained

Steps:

  • In a large pot, bring pork stock to a boil over medium-high heat. Add greens and cook until tender, 15 to 40 minutes; drain, reserving stock.
  • Heat oil in a large Dutch oven over medium heat. Add onions and season with salt and pepper; cook, stirring, until soft and translucent, 5 to 6 minutes. Add garlic and red pepper flakes; cook, stirring, 2 to 3 minutes.
  • Add tomatoes and cook, breaking up with the back of a spoon, for 10 minutes. Add cooked greens and 2 cups of reserved stock; simmer until heated through, about 5 minutes. Season with salt and pepper; serve.

6 large garlic cloves, thinly sliced
1 medium onion, cut into 1/2-inch dice
1 jalapeno pepper, halved lengthwise
4 medium tomatoes, chopped
2 lbs collard greens, stems and leaves finely shredded
3 bay leaves
2 sprigs thyme
kosher salt & freshly ground black pepper

Steps:

  • In a large saucepan, heat the olive oil over medium high heat; add the garlic, onions, and jalapeno and cook, stirring occasionally, until softened, about 3 minutes.
  • Stir in the tomatoes, collard greens, bay leaves, and thyme; cover, reduce heat to medium low, and cook, stirring occasionally, until collards are tender, about 20 minutes.
  • Remove the bay leaves, thyme sprigs, and jalapeno and discard; season with salt and pepper.
  • This dish can be prepared a day in advance and reheated.

1 bunch collard greens
2 tablespoons olive oil
1/2 medium onion, sliced
1/2 red or green bell pepper, sliced
1 teaspoon minced garlic
Salt and pepper

Steps:

  • Remove and discard all but 1 inch of the collard stems. Cut the remaining stems out of the leaves, separating the leaves and stems. Cut the leaves into 2-inch squares. Slice the stems into thin slices.
  • Wash the leaves in a big basin of water. Leave the water in the basin or sink and use a strainer to dip the leaves out of the water. Don't wash the leaves inside a colander or pour the water off the container with the leaves inside; this would allow any sand to stay with the greens. Wash the stems separately in the same basin of water, using the same method as the leaves.
  • Bring a large pot of water to a boil and add 2 tablespoons salt. Have a colander ready in the sink to drain the greens and a bowl of water with ice cubes in it to chill the greens.
  • Cook the stems for 1 minute. Add the leaves, and once they turn bright green, fish out a small leaf to taste it. The greens are done when they taste tender. You can't really tell whether the greens are done without tasting them.
  • Pour the cooked greens into the colander to drain. Once the hot water has drained off, carefully put the hot greens into the ice water. Once the greens feel cool to the touch, drain them in a colander again. Drain for about 10 to 15 minutes so that they are quite dry. (At this point, the greens may be stored in the refrigerator for up to 3 days.)
  • Put the olive oil in a large skillet over medium heat. Saute the onions gently in the oil. Raise the heat and add the peppers, and then the garlic. Add the blanched greens and saute until heated through. Season with salt and pepper.

1/4 cup extra-virgin olive oil
2 medium yellow onions, halved and sliced (3 to 4 cups)
1/8 teaspoon crushed red pepper
Kosher salt
18 cups torn greens, such as mustard, kale, chard, escarole, or a mix (about 3 large bunches)
Grated pecorino Romano or Parmesan

Steps:

  • Cook the garlic in olive oil in a large skillet over medium-high heat, stirring occasionally, until golden brown and crispy, about 3 minutes; take care that the garlic doesn't get too brown or it will be bitter. Using a slotted spoon, transfer the garlic chips to a paper towel. Add the onions and red pepper (add a little more if you like things spicy) to the skillet and cook, stirring, until light brown, about 10 minutes. When the onions are almost done, add the greens in batches and cook, uncovered, just until tender, about 2 minutes. Cover and cook, stirring occasionally, until tender, about 5 minutes. Transfer to a serving dish. Top with the reserved garlic chips and garnish with cheese.

Steps:

  • Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
  • Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

3 each ham hocks
2 tablespoons salt
2 bunches collard greens - rinsed, trimmed and chopped
1 cup white sugar
2 tablespoons red pepper flakes

Steps:

  • Combine water, ham hocks, and salt in a large pot; bring to a boil. Boil for 30 minutes. Remove from heat. Remove ham hocks from the water and discard.
  • Add collard greens, sugar, and red pepper flakes to the water. Simmer over low heat until greens are tender, 2 1/2 to 3 hours. Serve immediately.

  • Heat oil in a large saute pan over medium heat. Cook garlic, stirring often, until golden, about 3 minutes. Stir in red-pepper flakes, and cook until fragrant, about 30 seconds. Stir in collardgreens and 1 teaspoon salt.
  • Reduce heat to medium-low. Add water, and steam,covered, until greens are just tender and water evaporates, about 10 minutes. If greens are ready but there is still water in the pan, raise heat to medium-high, and cook, uncovered, until completely evaporated.

12 Thai peppers

3 teaspoons coriander seeds
1 teaspoon mustard seeds
1 teaspoon celery seed
3 tablespoons chopped fresh dill

Steps:

  • Heat vinegar and water with sugar (in a non aluminum pot) bringing to boil then simmer on low heat till ready to pour into jars.
  • Place in 3 quart hot sterile canning jars 1 tablespoon each salt, dill.
  • 1 teaspoon each peppercorns, coriander seed, 1/3 teaspoon in each of mustard seed,& celery seed,.
  • Mix tomatoes, carrots, onions together.
  • Place one pepper and garlic clove on spices then one-third vegetables an other pepper.
  • Repeat 2 more layers.
  • Pour vinegar mixture on vegetables leaving 1/2 inch head space and removing air bubbles from vegies.
  • Place sterilized lids and rings on jars and put into a water bath for 20 minutes.
