Chilled Sweet Corn Soup Recipe image

This chilled corn soup is a delicious way to use the sweet corn available this time of year. To get the best color in the soup, we recommend using yellow corn, not white or bi-colored corn. After you cut the kernels from the cob, use the large holes of a box grater to scrape the pulp and "corn milk" from the cobs. The corn milk makes the soup creamy without using any heavy cream. It takes only 20 minutes to make this soup, and it should chill anywhere from 4 to 8 hours. This lovely soup is great served as a party appetizer and is also delicious at a brunch.

3 ears fresh sweet yellow corn, shucked
2 tablespoons unsalted butter
1/2 cup chopped yellow onion (from 1 medium onion)
1 teaspoon chopped garlic (about 2 garlic cloves)
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
1 cup water
2 tablespoons extra-virgin olive oil
1 teaspoon white wine vinegar
Toppings: bacon, pesto, or Spicy Corn Relish

Steps:

  • Cut kernels from corncobs; place in a bowl. Using the large holes of a box grater, scrape liquid and pulp from cobs into another bowl. Discard cobs.
  • Melt butter in a medium saucepan over medium-high. Add onion, and cook, stirring often, until tender, about 4 minutes. Stir in corn kernels, garlic, salt, and pepper; cook, stirring occasionally, 3 minutes. Add water and reserved corn liquid and pulp. Bring to a boil over medium-high. Reduce heat to medium-low, and simmer 4 minutes. Transfer to a blender, and add olive oil. Remove center piece of blender lid (to let steam escape); secure lid on blender, and place a clean towel over opening in lid. Process until smooth, 2 minutes.
  • Pour mixture through a fine wire-mesh strainer into a bowl; press with the back of a spoon to extract as much liquid as possible. Discard solids. Stir in vinegar; cover and chill 4 to 8 hours. Pour into 6 (4-ounce) glasses; add toppings.

8 ears corn, husks and silk removed
2 cups whole milk
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
2 medium shallots, roughly chopped
2 garlic cloves, roughly chopped
Coarse salt and ground pepper
1 red bell pepper, diced small
4 scallions (white and light-green parts only), thinly sliced
Chopped fresh cilantro leaves or cilantro flowers (optional), for serving

Steps:

  • Cut off tips of corn and stand in a wide shallow bowl. With a sharp knife, cut kernels off cobs. Place cobs in a large pot, along with milk and 6 cups water; bring to a boil over high. Reduce to a simmer and cook until liquid is slightly reduced, 15 minutes. Discard cobs.
  • Meanwhile, in a large skillet, heat oil and butter over medium-high. Add shallots and garlic; cook until soft and translucent, 2 minutes. Add corn kernels and cook until crisp-tender, 4 minutes. Season with salt and pepper. Transfer corn to pot with milk mixture and bring to a boil. Reduce to a simmer and cook until corn is soft, 15 minutes.
  • In batches, fill blender halfway with soup and puree until smooth. (Use caution when blending hot liquids: Remove cap from lid and cover opening with a dish towel.) Pour liquid through a fine-mesh sieve set over a large bowl, pressing on solids; discard solids. Season soup with salt and pepper and refrigerate until cool, 1 hour (or, covered, up to overnight). Divide chilled soup among bowls and top with bell pepper, scallions, and cilantro.

3 cups fresh corn kernels
1 can (14 ounces) light coconut milk
2 1/2 cups water
Salt and pepper
1 tablespoon fresh lime juice
Fresh corn kernels, for garnish

Steps:

  • Bring chile, corn kernels, coconut milk, and water to a boil in a medium saucepan. Reduce heat, and simmer until corn is tender, about 20 minutes.
  • Filling a blender halfway and covering with a kitchen towel, puree soup in batches. Strain through a coarse sieve into a large bowl; discard solids. Season with salt and pepper.
  • Chill soup at least 3 hours or up to overnight. Stir in lime juice. Garnish each serving with fresh corn kernels if desired, and season with pepper.

24 ears of corn, shucked
2 tablespoons vegetable oil
4 cloves garlic, chopped
2 onions, diced
1 can coconut milk
Salt
Lime juice
Chipotle in adobo
Chopped fresh cilantro
Caramel corn
1/2 honeydew melon, flesh scooped out with a small melon baller

Steps:

  • Cut the kernels of corn from the cobs. Reserve the cobs.
  • Heat the vegetable oil in a large, deep pot and over medium-low heat. Add the corn, garlic and onions. Sweat until the corn is slightly brown and the onions are translucent.
  • Carefully add the cobs and fill the pot with water until the corn is covered. Raise the heat and boil for 30 minutes.
  • Remove the corn from the heat and allow to cool. Then chill for at least 4 hours or up to overnight.
  • Remove the cobs with tongs, and use an immersion blender to blend the corn and onions. This is the soup base. To this add the coconut milk and blend again. Separate the soup base into the desired portions for adults and kids. Season the adult version with salt, lime juice and chipotle adobo... this stuff is hot, so do as much or as little as you want.
  • For the kids, season the soup with salt and serve cold, garnished with caramel corn.
  • Serve the soup cold, garnished with a few pieces of honeydew melon.

  • Heat oil in a large saucepan over medium heat; add cauliflower, onions, and 1/4 teaspoon salt. Reduce heat to medium-low; cover. 1 tablespoon vegetable oil
1/2 cup chopped shallot (about 3 large)
2 tablespoons coarsely grated peeled fresh ginger
2 garlic cloves, minced
6 cups low sodium chicken broth
1 cup buttermilk
additional buttermilk
chopped fresh chives

Steps:

  • Cut corn kernels off cobs; transfer kernels to large bowl. Scrape cobs over bowl with knife to remove and remaining bits of corn and milky liquid. Break cobs in half crosswise and reserve.
  • Heat oil in heavy large saucepan over medium-high heat. Add shallots, ginger, and garlic; saute until shallots begin to soften, about 2 minutes.
  • Add corn and any accumulated liquid in bowl. Cook until heated through, stirring occasionally, about 3 minutes.
  • Add cobs and broth. Bring soup to boil; reduce heat to low, cover pan, and simmer until corn is very tender, about 30 minutes. Discard cobs.
  • Working in batches, puree soup in blender. Transfer to large bowl. Stir 1 c buttermilk into soup. Cover and refrigerate until chilled, at least 3 hours.
  • Season soup to taste with salt and pepper. Divide soup among 8 bowls. Drizzle with additional buttermilk, sprinkle with chives, and serve.

Chilled Corn Soup With Tomatoes, Avocado, and Lime image

I made this for supper club last weekend (theme was Mexican, loosely), and this was stupendous. First, if it is hot where you are (and it is sure hot where I am), this is a perfect appetizer. We all thought our body temperatures cooled off several degrees just eating. It is also tastes so, so good. My goodness. This recipe comes from Jody Adams, from the "In the Hands of a Chef" cookbook. This is also a two day recipe, perfect for when you are hosting a summer supper (you make most of it ahead, and just do assembly and cutting of the avocado right before). I am writing this as I made it, and I doubled it; it goes without saying you could easily halve this. I also make my own creme fraiche, and here is how I do it: I mix one cup of whipping cream with 2 tbsp of buttermilk, and put in a jar with a lid. I do this one day before I want to use it. I let it sit out over night and then refrigerate it the next morning - and then I use it later in the day (they say it will stay good for 10 days).

2 white onions, small and cut into 1/4-inch thick slices
kosher salt and white pepper
2 tablespoons extra virgin olive oil
2 medium leeks, white part only, trimmed of roots and tough outer leaves, thinly sliced crosswise and swirled vigoro
2 shallots, thinly sliced
2 avocados, ripe and diced to 1/4-inch dice
1 cucumber, small and cut to 1/4-inch dice
2 tomatoes, small and cut to 1/4-inch dice
4 tablespoons red onions, diced to 1/4-inch
2 limes, juice of these two limes
4 ounces smoked salmon, cut into 1/4-inch dice
1/2 cup creme fraiche
4 tablespoons chives, fresh and chopped

Steps:

  • The day/night before serving:.
  • Use a sharp knife, and strip the corn kernels from the cob. Put the corn kernels in a bowl for later, and place the stripped cobs in a large stockpot. Add the sliced white onion to the stockpot, and with just enough water to cover (too much water makes the stock too thin). Season with salt and pepper, bring the stock to a boil, and then simmer for 35 minutes. Discard the cobs when finished simmering.
  • While the stock is simmering, heat the olive oil in a saute' pan over medium heat. Add the leek and shallot, and cook until tender, 6 to 8 minutes. Add the corn kernels, season with salt and pepper, about 2 minutes. Do not overcook, the corn should still taste fresh. Remove from heat and set aside until the stock finishes cooking.
  • Add the sauteed vegetables to the corn broth (once cobs removed) and simmer for 5 minutes.
  • Strain the broth into a bowl and puree' the solids in a blender, adding just enough of the broth to make a thick soup.
  • Put soup in a bowl, cover, and stick it in the fridge until ready to eat the next day.
  • Day you're serving:.
  • Mix the cucumber, tomato, and diced red onion in a bowl with salt, pepper, and lime juice; refrigerate til serving.
  • Dice the salmon and reserve for serving.
  • Just before serving:.
  • Cut the avocado and add to tomato/cucumber/onion mixture.
  • To serve:.
  • Distribute salmon evenly among 8 bowls, place a little mound of it in the bottom of the bowl. Ladle the soup into the bowls. Add a large spoonful of the chopped tomato/cucumber/avocado/onion mixture to the top of each bowl. Add a spoonful of creme fraiche, a sprinkle of chives, and serve immediately.

  • Using cleaver or heavy large knife, cut each ear of corn crosswise in half. Place corn in heavy large pot. Add 5 cups broth, shallots, and onion; bring to boil. Reduce heat, cover, and simmer until corn is very tender, about 25 minutes. Using tongs, transfer corn to large bowl to cool; reserve broth.
  • Cut corn kernels off cobs. Return 4 cups corn kernels to broth (reserve any remaining corn for another use). Working in batches, puree soup in blender until very smooth. Strain soup through fine sieve set over large bowl, pressing on solids with back of spoon; discard solids. Mix in enough additional chicken broth to thin soup to consistency of heavy cream. Season to taste with salt and pepper. Cover and refrigerate soup until cold, about 4 hours. (Can be made 1 day ahead. Keep refrigerated.)
  • Ladle soup into 6 bowls. Top each with dollop of crème fraîche. Sprinkle with cucumber and chives and serve.

1-1/2 pounds uncooked small shrimp, peeled and deveined

1 package (16 ounces) frozen shoepeg corn, thawed, divided
1 cup reduced-fat sour cream
1 teaspoon hot pepper sauce
1 teaspoon salt

Steps:

  • In a large skillet, saute onion in oil until tender. Add the shrimp, garlic and curry; saute until shrimp turn pink, 4-6 minutes longer. Remove from the heat and set aside., In a blender, combine the buttermilk, 2 cups corn, sour cream, pepper sauce, salt and pepper. Cover and process until smooth; transfer to a large bowl. Add remaining corn and shrimp mixture. Cover and refrigerate for at least 3 hours. Garnish servings with chives.

  • Blend corn with just enough water (I used about a 1/2 cup) so the mixture resembles a wet smoothie. Strain all the liquid mixture through a fine mesh strainer into a pot, using a rubber spatula or spoon to press all the liquid through strainer.
  • Rinse blender. Bring corn liquid to a boil over medium heat, stirring frequently. Allow to come to a full boil and cook for about a minute more, until it looks like a soft custard. Transfer mixture to blender.
  • Blend for 1 minute, being careful to hold the top on the blender very firmly (the steam will try hard to blow the top off the blender). Add a splash of olive oil and season generously with Kosher salt and a small pinch of freshly ground pepper. Blend and taste, adjusting seasonings as needed.
