BANANA OATMEAL CRUMB CAKE

Steps:

• Stir together flour, 1 1/3 cups oats, salt, and baking soda.
• In a large bowl, cream 1/2 cup butter or margarine with 2/3 cup brown sugar. Beat in the eggs, then the bananas and vanilla. Beat the flour mixture into the banana mixture. Turn the batter into a greased and floured 8 inch square pan.
• Mix 3/4 cup oats, 1/3 cup brown sugar, melted butter or margarine, walnuts, and cinnamon together until crumbly. Sprinkle evenly over the top of the batter.
• Bake in preheated oven at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until it tests done. Transfer to a rack to cool.

BANANA-OATMEAL CAKE (SCREWED-UP MOTHER'S DAY CAKE)

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
• Mix milk and vinegar together in a bowl.
• Stir white sugar, vegetable oil, milk mixture, brown sugar, and butter together in a bowl; add baking soda and baking powder and stir. Mix oats into sugar mixture. Stir flour, 1 cup at a time, into sugar-oat mixture until batter is evenly combined; fold in bananas. Pour batter into the prepared baking dish.
• Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, about 45 minutes.

• Heat oven to 350 degrees F.
• Grease rectangular pan with shortening.
• Beat in large bowl with wooden spoon bananas, sugar, vegetable oil, buttermilk, vanilla, and egg.
• Mix in flour, oats, baking soda, cinnamon, cloves and baking powder.
• Stir in chopped nuts and raisins.
• Spread batter in pan.
• Bake 30 to 35 minutes or until toothpick poked in center comes out clean.
• Cool completely on wire rack.

Steps:

• Preheat oven to 350°. In a small bowl, combine almonds and brown sugar; set aside. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract., Combine flour, baking soda and baking powder; add to the creamed mixture alternately with bananas and sour cream, beating well after each addition. Fold in chips. , Spread into a greased 13x9-in. baking pan. Sprinkle with reserved almond mixture. Bake 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

BANANA NUT CRUMB CAKE

Steps:

• Preheat oven to 350.
• Line a 9x13 baking pan with nonstick foil that extends over the end of the pan.
• Crumb Topping:.
• Mix flour and brown sugar in bowl.
• Cut in butter until mixture resembles coarse crumbs.
• Stir in nuts.
• Set aside.
• Cake:.
• Mix mashed bananas, oil, sugar, eggs, sour cream, vanilla, cinnamon and salt with whisk until well combined.
• Stir in flour, and baking soda until blended.
• Spread evenly into lined pan.
• Sprinkle with crumb topping.
• Bake at 350 for 40 minutes or until toothpick inserted in center comes out clean.
• Cool completely in pan on wire rack.
• Lift foil by end onto a cutting board.
• Cut into squares and sprinkle with confectioner's sugar.
