Here's a quick chowder that's been in my family for over 30 years. I make a big pot to take to an annual party at work. It's always a hit. Served with crusty bread and a salad, it's the perfect meal for a chilly evening.

6 bacon strips, diced
1/2 cup finely chopped onion
2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
1-1/2 cups milk
3 cans (6-1/2 ounces each) minced clams, undrained
1 tablespoon lemon juice
1/4 teaspoon dried thyme
1/4 teaspoon pepper
Minced fresh parsley

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 tablespoon drippings. , In the same skillet, saute onion in reserved drippings until tender. Stir in soup and milk. Add the clams, lemon juice, thyme, pepper and bacon; cook until heated through. Garnish with parsley.

1 (10 1/2 ounce) can cream of celery soup, undiluted
1 (10 1/2 ounce) can cream of potato soup, undiluted
1 (10 1/2 ounce) can cream of mushroom soup, undiluted (optional)
1 (2 ounce) jar pimientos, chopped and drained
1/2 teaspoon garlic powder
1 tablespoon fresh parsley, chopped

Steps:

  • Mix all of the ingredients together. If you feel the need, you may add a little milk to bring it to the right consistency.
  • Heat this whatever way is best for you: stovetop, crockpot, microwave, campfire, etc. Watch closely so it doesn't burn. When hot, serve.

We love clam chowder, especially in the cold winter months. I've modified a few different recipes to come up with this one. Whenever I buy nitrite-free bacon, I always save the grease in a glass jar in the refrigerator to use for recipes like these. Serve with sourdough bread!

1 tablespoon bacon grease
2 potatoes, chopped
3 carrots, chopped, or more to taste
½ cup chopped onion
3 cloves garlic, minced, or more to taste
¼ cup all-purpose flour
1 teaspoon salt
1 teaspoon garlic powder
½ teaspoon liquid smoke flavoring
½ teaspoon fresh cracked black pepper
2 cups chicken broth
1 (6.5 ounce) can clams, liquid drained and reserved and clams chopped
2 tablespoons butter
¼ cup cornstarch
1 cup milk
½ cup heavy whipping cream
½ cup corn

Steps:

  • Heat bacon grease in a cast iron Dutch oven over medium heat; cook and stir potatoes, carrots, onion, and garlic until onion is soft, 5 to 10 minutes. Add flour, salt, garlic powder, liquid smoke flavoring, and black pepper; stir until vegetables are evenly coated.
  • Pour chicken broth and reserved clam juice over vegetables; cook at a simmer over low heat until potatoes and carrots are tender, 15 to 20 minutes.
  • Melt butter in a saucepan over low heat; stir in cornstarch until smooth, 1 to 2 minutes. Add milk and cream; cook, stirring constantly, until thickened, about 5 minutes.
  • Stir butter mixture into vegetable-broth mixture; cook and stir over low heat until chowder is thickened, 5 to 10 minutes. Add corn and cook for 5 minutes. Mix chopped clams into chowder and cook until heated through, about 5 minutes more.

2 (15 ounce) cans clams or 2 (15 ounce) cans mussels
2 (15 ounce) cans evaporated milk
1 teaspoon butter
salt and pepper

Steps:

  • Drain the liquid from the canned clams/mussels and add enough water to make 1 1/2 cup.
  • Place liquid in a sauce pan Add onion, S& P and potato.
  • Cook at medium heat until veggies are tender (about 10 minutes).
  • Reduce heat to low.
  • Add clams/mussels, evaporated milk and butter.
  • Heat until warmed through Do not boil.
  • Check seasoning and serve with oyster (or common) crackers.
