DORSET APPLE TRAYBAKE
Simple-to-make apple cake that can be cut into bars or squares for a teatime treat

Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter and line a rectangular baking tin (approx 27 x 20cm) with baking parchment. Peel, core and thinly slice the apples, then squeeze over the lemon juice. Set aside.
- Put the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar.
- Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of the tin and remove the paper. Cut into bars or squares.

This all-in-one apple cake tray bake is the best apple cake recipe I have ever tried. As it bakes, the juice from the apples combines with the cake batter to form a delicious custardy inside. Combine this with cinnamon and plump juicy sultanas and you have the best apple cake ever!

Steps:
- Preheat the oven to 190°C / 375°F
- Grease an 8 x 8 inch baking dish with a little butter
- Arrange the apples in a layer in the baking dish
- Sprinkle with the sultanas and cinnamon sugar
- Sift 1 cup flour into a mixing bowl and then add 1 cup sugar, 1 egg and 25ml oil
- Add 1 cup milk
- Whisk or mix with a spatula to remove combine all the ingredients and remove any lumps.
- Pour the batter over the apples
- Place the cake in the oven and bake for 40 minutes
- Remove from the oven and allow to cool covered with a lid or a sheet of tinfoil

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9x13 inch cake pan.
- Beat vegetable oil and eggs until foamy. Add the sugar, flour, ground cinnamon, baking, soda, salt, and vanilla and mix well. Stir in the diced apples. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Cool cake in pan for 10 minutes. Cake needs no frosting.

- Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. - Preheat the oven to 350°F (180°C). Line a baking sheet (13x15 inches /32x39cm) with a high rim with baking parchment or grease and dust with flour. Set aside. Peel the apples, quarter and core. Cut into thick slices and then drizzle with the lemon juice so they won't brown. Set aside. Beat the butter with sugar and salt in a large bowl on high speed until light and fluffy. Add the eggs one after another and mix well after each addition. Add the vanilla extract and mix in. Mix the flour with cornstarch and baking powder, add together with the milk to the bowl and mix until just combined. Spread the batter on the baking sheet to get an even layer. Place the apples close to each other on top of the batter, sprinkle with the brown sugar and slivered almonds and bake for 30-35 minutes or until a toothpick inserted in center comes out clean. Take out of the oven and let cool down. Dust with confectioners' sugar and serve with some vanilla ice cream or whipped cream.

- Mix 2 minutes at medium speed.
- Fold in chopped nuts.
- Coat bundt pan with cooking spray and flour.

- Heat the oven to 180C or Gas mark 6, grease and line a 34 x 24 x 2.5cm baking tray with butter and grease proof paper or parchment.
- Peel and core the apples, chopping them in to small cubes about 1cm squares, this does not have to be exact just a rough chop. Place in a bowl and squeeze the lemon juice over the apples, taking care not to let the pips drop in to the bowl.
- In a large bowl place the butter, caster sugar, eggs, cinnamon, flour and baking powder and mix well until smooth. I use a electric hand whisk for this, once all mixed together and when you stop you see bubbles, it will rise. Now stir in the chopped apples you put to the side. If at this point you think the mixture is to thick add a small amount of milk. But this mixture does have to be thick to support the apples.
- Pour the mixture into the lined baking tray, you may need to use the back of a spoon to spread the mixture around the tray. Sprinkle with the demerara sugar, place in the middle of the oven and bake for 1 hour. Check after about 50 minutes with a skewer or knife if no mixture on the skewer or knife its cooked, if there is mixture on then it is not cooked.
TRADITIONAL ENGLISH APPLE TRAYBAKE - APPLE PUDDING CAKE
A simple and easy to whip up apple sponge cake; baked in a tray for easy serving - cut into bars or squares for picnics, school or office lunch boxes & for tea time treats! It is DIVINE served hot with cream,custard or ice cream for a great Autumn/Fall pudding. This type of cake is often called Dorset or Somerset Apple cake, but it is really quite popular in nearly all of the English counties, especially during apple harvest season. I have stipulated Bramley apples, which are English cooking apples - in the absence of these, any tart or sharp "Appley" flavoured or regional "cooking" apples will do.

- Preheat oven to 180°C/360°F or Gas mark 4.
- Grease & line a rectangular baking tray - approx 9" x 7" or 27 cms x 20 cms.
- Peel, core & thinly slice apples; squeeze the lemon juice over them to stop them discolouring and set them to one side.

- Repeat the layer with the remaining half of cake/pudding mixture & apples - the apples should be arranged over the top of the cake/pudding mixture.
- Sprinkle over with the demerara sugar.
- Bake for 45-50 minutes until golden brown, well risen & springy to the touch.
- Leave to cool slightly for 10 minutes & then cut into squares or bars.
- Wait until the cake has completely cooled before removing the cake & the baking paper from the tin - store in an airtight tin or container.
- If you wish to serve this warm as a pudding, wait 5-10 minutes and then cut and serve with cream, custard or ice cream.
- It can also be microwaved too, for a future hot pudding!
