This Chinese Watercress Soup will make every family weekday dinner complete. It's full of nutrients and is refreshingly light, packed with earthy flavours to keep you satisfied for the whole week!

5 L chicken and pork stock
2 bundles watercress ((we buy it from the local Asian supermarket))
3 dehydrated shiitake mushrooms
2 dried honey dates
2 carrots, peeled and sliced
3 dried jujubes ((Chinese red dates))
1 tsp salt, or to taste
1 tbsp chicken bouillon powder

Steps:

  • Bring the chicken and pork stock to a boil and add the chicken bouillon powder along with the salt.
  • Throw in the carrots, mushrooms, honey dates and jujubes and let it simmer for 15 minutes.
  • When the carrots have softened, bring the broth up to a boil and add the watercress in.
  • Keep the soup on a medium to low heat so that it gently simmers for another 20 minutes.
  • To serve, enjoy as is or pour over your leftover rice!

1 small onion, diced
¼ cup soy sauce
1 ½ tablespoons soy-based liquid seasoning (such as Maggi®)
2 tablespoons chopped garlic
1 tablespoon chopped fresh ginger root
2 tablespoons cornstarch
2 tablespoons boiling water
1 ½ pounds sliced fresh mushrooms
1 ½ tablespoons vegetarian chicken-flavored bouillon
¼ pound tofu, diced
1 bunch watercress, coarsely chopped
2 eggs, beaten

Steps:

  • Place water, onion, soy sauce, soy-based liquid seasoning, garlic, and ginger root in a saucepan; bring to a boil.
  • Mix cornstarch with 2 tablespoons boiling water. Add to the saucepan. Add mushrooms and bouillon. Reduce heat to medium-high; simmer until flavors are blended, about 7 minutes. Add tofu and watercress. Simmer soup for 2 minutes more.
  • Pour in eggs slowly, whisking constantly, until cooked, 1 to 2 minutes.

6 dried red dates, rinsed
1 tablespoon goji berries, rinsed
1 tablespoon vegetable oil
2 carrots, sliced
4 slices fresh ginger
1 teaspoon salt
½ teaspoon vegetable stock powder
½ teaspoon sesame oil
ground black pepper to taste
1 bunch watercress

Steps:

  • Bring water to a boil in a large pot; stir in red dates and goji berries.
  • Heat oil in a skillet over medium heat. Cook and stir carrots, ginger, and salt for 1 minute. Transfer to the pot of water. Stir in vegetable stock powder, sesame oil, and black pepper. Reduce heat to medium-low and add watercress; simmer until wilted, about 15 minutes.

15ml/1 tbsp olive oil
1 small onion, chopped
1 small stick celery
350g/12oz potato, peeled and diced
600ml/1pt chicken or vegetable stock
3 (85g) bags watercress
150ml/1/4pt milk
pinch of nutmeg
squeeze of lemon juice
salt and freshly ground black pepper

Steps:

  • 1. Heat the oil in a large pan, add the onion and celery and sauté over a medium heat for 5 mins until pale golden. Stir in the potato and stock and bring to the boil. Cover and simmer for 10 mins or until the potato is tender.
  • 2. Stir in the watercress, cover and cook for a further 5 mins or until the watercress is wilted. Transfer the soup to a food processor and blitz until smooth. Return the soup to the rinsed out pan add the milk, nutmeg, lemon juice and seasoning to taste. Gently reheat until piping hot and serve with crusty bread.

1 ounce cellophane noodles
1/4 pound ground lean pork
1/2 teaspoon very finely chopped fresh ginger (or an equal amount of powdered dry ginger)
1/4 teaspoon sugar
2 teaspoons cornstarch
Salt to taste, if desired
1/2 teaspoon freshly ground pepper, preferably white
2 teaspoons dry Sherry
1 tablespoon well-beaten egg (beat one egg and measure out the proper amount)
3 cups chicken broth
1 bunch watercress

Steps:

  • Put the noodles in a mixing bowl and add warm water to cover. Let stand at least 30 minutes.
  • Put the pork in another bowl and add the ginger, sugar, cornstarch, salt, pepper, Sherry and egg. Blend well.
  • Lightly oil a plate that will fit in the top rack of a steamer. Shape the pork mixture into 16 to 18 round balls. Arrange them on the plate in the steamer and cover closely. Place the rack over boiling water and steam 20 minutes.
  • Meanwhile, bring the broth to the boil.
  • In a separate saucepan, bring enough water to the boil to cover the watercress when added. Cut off the tough stems of the watercress and discard. Add the watercress tops. Turn off the heat and let stand two minutes. Drain and chill in a basin of cold water. Drain and set aside.
  • Drain the noodles and cut them approximately in half with scissors. Put them in a saucepan and add cold water to cover. Bring to the boil and let simmer 10 minutes. Place the noodles and watercress in the bottom of a soup tureen.
  • Put the meat balls and broth in the tureen. Sprinkle with a little more freshly ground pepper, preferably white, and serve.
