BAKED POTATO BAR

Sidle up to the table, split open a spud, and fill it with one of our four flavor combinations. Each topping combination is enough for four potatoes. If you've got a crowd to feed, bake more potatoes, and make more than one style of topping.

ONE RECIPE, TWO MEALS: AN EASY BAKED POTATO BAR

One Recipe, Two Meals: An Easy Baked Potato Bar image

I wanted to make baked potatoes that would make my toddlers giddy and satisfy adult appetites at the same time. For the kids, it's russet potatoes with mounds of sour cream, shredded Cheddar and broccoli florets. For the grown-ups, it's sweet potatoes with blue cheese, bacon and garlic chips that are crisped up in the bacon fat.

Provided by Bev Weidner

Categories     side-dish

Time 1h25m

Yield 4 servings

Number Of Ingredients 10

2 russet potatoes
2 sweet potatoes
1/2 cup sour cream
1/2 to 3/4 cup shredded Cheddar
1 cup frozen broccoli florets, boiled and drained
1/3 cup crumbled blue cheese
2 strips bacon, rendered until crispy and broken into pieces
4 cloves garlic, thinly sliced and sauteed in the bacon fat until golden brown
2 scallions, thinly sliced
1/4 cup thinly sliced red onion

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes on a baking sheet and bake until tender and cooked through, about 1 hour 15 minutes. Slice the tops open and slightly push the potatoes in, prepping them for the innards. (I like the word innards.)
  • For the kids' potatoes, give each russet potato a good dollop of sour cream, a sprinkling of Cheddar and a few broccoli florets. Done.
  • For the adults' potatoes, fill each sweet potato with crumbled blue cheese, bacon crumbles, garlic chips, scallions and red onion. Done.

25 BAKED POTATO TOPPINGS FOR YOUR BAKED POTATO BAR ...

From insanelygoodrecipes.com
  • Pepperoni Pizza. Baked potatoes without salt and butter are the perfect vessel for pretty much any topping. The flavor is so mild that you can add anything your heart desires!
  • Pot Roast. We already serve potatoes with our pot roast, so why wouldn’t you serve pot roast with your baked potatoes? This is the perfect option for when you have leftovers from Sunday dinner.
  • Taco. Be it ground beef or chicken; your potato will thank you for this spicy upgrade! My tacos almost always consist of some kind of seasoned meat with cheese, lettuce, salsa, and sour cream, all of which will sit beautifully on your baked potato.
  • Chili. When I make chili, I like to make a big batch to last us a solid few days. Some days we’ll have it with rice, others we’ll make a big batch of nachos with lots of cheese and guac.
  • Indian. Chickpea curry is one of my go-to vegan dishes and it’s beloved by meat eaters and vegans alike. Between the incredible flavors and texture, you don’t miss the meat for a second.
  • BBQ. Given how expensive BBQ can be – getting the right cut and hours of low, slow cooking – it’s nice to know you can pair it with something tasty, but cheap.
  • Buffalo Chicken. Buffalo chicken is such a heavenly mixture of spicy and creamy. The buffalo sauce provides all the heat and that great, vibrant coloring, and.
  • Classic. No matter how many toppings you offer for your baked potato bar, you know there will always be one picky eater. To satisfy those guests with a simpler palate, you really can’t go wrong with some sour cream, shredded cheese, and bacon bits.
  • Mexican. How do you get all those sensational taco flavors without adding seasoned beef or chicken? Beans! Adding a mix of black beads, cheese, salsa, and guac to your baked potato will let the vegetarians (and vegans if you leave out the cheese) enjoy those same great Mexican flavors without the meat.
  • BLT. BLT – bacon, lettuce, and tomato – is a classic. When I’m out to lunch, I’ll choose it more often than not because it has everything you could want in a sandwich.

  • Cheddar + Sour Cream + Chives + Black Pepper. This combination is a classic for a reason. After sprinkling on the cheese, pop the potatoes back in the oven so the cheese can melt before adding the sour cream.
  • Chicken + Pesto + Mozzarella. Any cooked chicken will work here — and feel free to use your favorite store-bought pesto to make this flavorful cheesy potato.
  • Ground Beef + Taco Seasoning + Toppings. Cook a pound of ground beef with a packet of taco seasoning, load it on top of baked potatoes, and garnish it with your favorite taco fillings.
  • Marinara Sauce + Shredded Mozzarella + Olives. Will it pizza? Yes, yes it will. Olives are just a suggestion here, so go ahead and swap them out for pepperoni, sausage, or any other topping you have on hand.
  • Shredded Chicken + Hot Sauce + Ranch Dressing. Fans of buffalo chicken wings, this is for you. Toss shredded rotisserie chicken (or any other type of cooked chicken you have on hand) with your favorite store-bought hot sauce, stuff into a baked potato, and load it up with ranch dressing.
  • Cream Cheese + Diced Jalapeños + Crispy Bacon + Shredded Cheddar. If you love jalapeño poppers, you’ll love this riff on the beloved bar snack. While the potato is still hot, add diced cream cheese and stir it into the potato so it gets nice and melty.
  • Ground Beef + Corn + Black Beans + Shredded Cheddar. This Southwestern-style potato gets filled with a well-seasoned mixture of corn, black beans, and ground beef, then topped with melted cheddar cheese.
  • Yogurt + Pesto + Fresh Herbs. Creamy, tangy, and fresh all it once, this combination tastes great on any kind of potato. Use store-bought pesto or make your own, or opt for a simple chimichurri sauce instead.
  • Parmesan + Artichokes + Spinach. If you’re a fan of spinach-artichoke dip you can riff on those same flavors by stuffing your potato with shredded Parmesan cheese, chopped artichoke hearts (canned or frozen work perfect), and chopped spinach.
  • Brown Butter + Goat Cheese + Walnuts. To make your baked potato a bit fancy, top it with brown butter, crumbled goat cheese, and chopped walnuts. If you don’t have walnuts on hand, you can use any other nut.
